Welcome to the November issue of ‘Bakers Business’, keeping you up to date with BakoNorth Western’s special offers, Market reports and product information.

As the clocks go back, the nights are drawing in and Christmas will certainly soon beupon us. This month’s edition includes some fantastic offers for the cold weather ahead,as well as some new products to start the festive season.

To kick things off this month, we have two NEW delicious additions to the Macphierange: - ‘Superdough,’ for Christmas stollen and a variety of sweet buns, plus the showstopping; ‘Red Velvet Cake Mix’ for irresistible cup cakes, whoopies and gateaux. Market Report – November 2010GENERALCommodity surge lifts food pricesSoaring commodity costs are pushing up food prices, the British Retail Consortium(BRC) said as it reported a rise in inflation in shops in August, as overall shop priceinflation increased to 1.9%, its highest rate for five months.

‘Food inflation is at a 15-month high as the effect of earlier rises in Wheat and Oilprices like bread but these production costs appear to be stabilising now,’ said BRCDirector General Stephen Robertson. He felt the effects of soaring commodity pricesmay have passed.

EXCHANGE RATES• Against the $, sterling opened the month at 1.54 and ended at1.59 as at 12th Oct.• Against the Euro, sterling opened the month at1.21 and fell to 1.14as at 12th Oct.

CRUDE OILEnergy prices have strengthened over the past month with Brent crude oil up 5%.

FATS AND OILSVegetable oils continued to rise over the past month influenced by new fundamentalinformation and increases seen in the grain sector.Sunflower oil rose sharply by 16% in Rotterdam as further reductions to the Black Searegion crop have been made. Soyabean oil ended up 11% on CBOT due to increases in demand for soyabean asfeed supply tightens. The global soyabean crop is forecast at a record 254.9m tonnesin 2010/11 but speculative trading by fund investors continue to drive prices upagainst the true fundementals of the market.Palm oil ended up 8% in Malaysia as supply is still below last year’s levels andsupported by soya prices. Rapeseed oil prices remained unchanged on the highvalues achieved so far this year.

DRIED FRUITSultanas – The price of Sultanas has remained very high, due to the lower thanexpected crop in Turkey.Based on the prices that have been paid for this material, prices are set to remain athigher levels for the foreseeable future.It is unlikely that prices will ease any further as there has been so much commitmentby exporters and traders alike at high price levels.

Raisins - As predicted, the rainfall in Turkey at the beginning of September wasenough to convince the farmers not to produce many raisins. Also, with a smaller thananticipated crop, farmers were able to realise higher values for their raw material andso were discouraged from taking the additional risk of producing Raisins. Prices from the USA still remain very firm. Late rain at the end of the harvest has alsoimpacted on the tonnage. With additional damage to an already short crop, prices willremain very firm.

Currants – The Currant crop this year is turning out to be more difficult thananticipated; in particular, there are very limited quantities of small currants. In general,the berries are much larger than expected and there are no more genuine SmallCurrants left for sale.Prices have already increased since the start of the season by $80 per mt. The Eurohas also gained in strength against the pound, making prices even more expensive.

DAIRYFirmer prices have been seen in this sector as the market remains tight. SMP pricescontinued to rise by 5% in the EU whilst WMP and whey also continued to trendupwards with increases of around 6%.

GRAINSSharp price increases continued in this sector as grain estimates have been furtherlowered for 2010/11.Oat prices surged on CBOT by 20% whilst wheat prices were mixed, with increasesregistered for the UK at 14%. World wheat production for this season has beenadjusted downwards by 1.7m tones.

COCONUTDesiccated coconut prices ended up 9% as poor weather in Indonesia and thePhilippines cut supply.

Bako North Western customers and students from local catering collegesand universities, gathered to take part in the first ever ̒Bakery Challenge2010ʼ, which took place in the new purpose-built test bakery, ʻTheBakoryʼ, on Tuesday, 21st September.Despite it being the inaugural event, interest and competition was strong,with over 160 entries submitted for the six categories that ranged froma fresh ̒Crusty Bloomerʼ to a festive and decorated ̒Celebration Cakeʼ.The standard of entries was exceptionally high.The competition was judged by Neil MacSymons, past President of theN.A.M.B., Philip Marshall a craft baker and Director of Bako NorthWestern, Patrick Moore, owner of Artisan Bakery and recent winner ofa prestigious award at the Baking Industry Awards and JohnRobertshaw, a craft baker who now works as Bako North WesternʼsTechnical Consultant.

Winners of the various categories were invited to attend the awardsceremony that took place at Bako North Westernʼs open day – theʻSeasonal Showcaseʼ on Thursday 23rd September, when David Smart- owner of long established craft bakers, Greenhalghʼs, kindly presentedthe awards, with Andy Hodgson, Bako North Westernʼs Head of Sales.Those who could not attend the Showcase had their awards deliveredpersonally by their Sales Representative.Bako North Westernʼs Technical Consultant, John Robertshaw said,“Bako North Western would like to thank everyone who entered theevent. We were delighted by the high number of entries and thecommitment made by the entrants, which was reflected in the veryhigh presentation standards of the product entries in all categories.I am sure that given its success, this will now be an annual event”.

Bako North Westernʼs open day event this year was aSeasonal spectacular, covering all aspects of traditionalcelebration from Halloweeʼen and Bonfire Night toChristmas.

Our two-day, mid-week event provided bakers and alliedtrades with an opportunity to view the latest on offer fromover 30 suppliers, with enticing offers from breads andsavouries to the latest ideas in confectionery forcelebration events.

To complement the goods on offer there was alsoexciting prizes to be won in the Bako raffle and the offerof tours around the business – which has state of theart facilities in Preston, accredited to B.R.C. and I.S.O.9000:2008.

Over 100 customers visited each day to view thepresentations made by some of the industryʼs leadingsuppliers at our new Bako facility – The Bakory – a newtest bakery facility recently completed on Bako NorthWesternʼs site. Bakoʼs Baker – John Robertshaw, wason hand to offer ideas with a twist, to turn basicingredients into seasonal winners, to entice customerson the high street to indulge.
