1 San Francisco is my favorite city in the United States. It is beautiful, clean, not

too big, and it has something for everybody. I love the streets and buildings in San

Francisco. The streets wind up and down the hills, with beautiful old brick and wooden

houses on either side.

2 One of my favorite things to do in San Francisco is to ride the cable car. It takes

you to most parts of the city. It’s not a very comfortable ride, but it’s exciting and the

views you get from the cable car are wonderful.

3 And I like the weather in San Francisco. It never gets too cold or too hot. The

summer are pleasant. The fresh breezes blow off the ocean and the sky is always blue. It

rains a lot in the winter, but it never gets very cold.

4 Another thing I enjoy about the city are the restaurants. The seafood restaurants,

with crab and lobster, are my favorites. You can also get great Chinese, Japanese,

American and European food in San Francisco.

5 The transportation system in San Francisco is excellent. Taxis are clean and

comfortable. The bus system is good. There is BART, a fast subway. And the cable car is

a convenient way to get to Chinatown and Fisherman’s Wharf. You can also walk to

many places very easily.

6 San Francisco has lots of tourist attractions. You can climb up Coit Tower and see

the view. You can walk along Union Street and look at the boutiques and shops. The

Golden Gate bridge is famous, and I love to drive across it, and then look back at the

view of the city from the other side. There are lovely parks, great museums, a beautiful

Japanese Garden and a fascinating Chinatown. There’s always something to do in San

Francisco: theaters, nightclubs, ballet, opera, San Francisco has them all.

7 So it’s easy to see why San Francisco is everybody’s favorite city, and mine, too.

1 There are very few countries that have as many different types of cooking as

Indonesia. Remember, of course, that Indonesia is a country of more than 3.000 islands,

each with ways of cooking that differ from their neighbors.

2 You will find some of the best spice dishes in Java, but these are not as spicy as

the same dishes when they are cooked in Sumatra. Kambing guling (roasted young goat)

is one of the most famous dishes of Bali; if the same dish is cooked in Java, it still tastes

delicious, but different.

3 Rice plays an important part in hundreds of Indonesian dishes and one of the best

known dishes is nasi goreng. But don’t think it is only rice (nasi) fried (goreng) because

there is much more in the dish than this, and the rice used is steamed before it is fried.

4 There are, of course, different ways of cooking nasi goreng but when you ask for

this dish anywhere in Indonesia you know what to expect. And after you have tried it, I’m

sure you will want to cook it for yourself. Here is the recipe, which makes enough for

four people.

For the sauce

1 tsp.of small red onions½ tsp. of red chilies1 tsp. of garlic1 tsp. of shrimp pasteone sliced tomato

For the main dish

1 lb. of rice¾ lb. of beef cut into slices3 tsp. of sliced red chilies1 tsp. of chopped celery6 small chicken legs6 eggs2 tsp. of fried onions1 tsp. of oilflour, salt and pepper

Preparation

5 First, steam the rice until it is cooked. Chop the red onions into very small pieces

and try them together with the red chilies and the garlic until the onions become partly

brown. Then add the sliced tomato and the shrimp paste.

6 Add a little salt and pepper to the beef, put it into the pan, and stir it. After about

three or four minutes, add the red chilies, the chopped celery and finally the cooked rice,

stirring well all the time. Taste and see if more salt and pepper is needed.

7 Place a little salt over the chicken legs, dreg them in flour and fry them until they

are golden brown. Take two eggs and make an omelet. Cut the omelet into slices and use

these together with the fried onions to put around the nasi goreng. Place the chicken legs

1 Contacts between Japan and the rest of the world have grown a great deal in the

twentieth century. In the last thirty years, business contacts between Japan and the West

have become very important. Many foreign companies now have offices in Japan, and

Japanese businessmen do business around the world. Differences between Japanese and

Western ways of doing business, however, often confuse foreigners and make doing

business in Japan difficult to them.

2 The American business person for example, wants to start talking business

immediately. He or she wants quick decisions and does not want to wait. The Japanese,

thought. Another thing foreign business people have difficulty understanding is when a

Japanese means “Yes” or “No”. This is because of cultural differences between Japanese

3 In English, it is easy to say “No” to something we do not want to do. But in Japan,

it is very difficult to say “No”. To refuse an invitation or request with “No”, or a similar

phrase, is felt to be impolite, it is thought to be selfish and unfriendly. So instead of

saying “No” directly, the Japanese have developed many ways to avoid saying “No”.

These enable them to avoid hurting other people’s feelings. However, this often makes

communication with the Japanese difficult for foreigners to understand and follow.

4 The Japanese businessman can avoid saying “No” by being vague or indirect, by

being silent and not replying, by changing the topic or by giving excuses for not being

able to reply immediately.

5 Foreign businessmen and businesswomen in Japan must, therefore, be patient in

trying to communicate with the Japanese. They must not be in a hurry. Above all, they

must try to understand the Japanese custom of politeness. Once they learn how the

Japanese think, they will find doing business with them a lot easier.

in our part of England. We both thought it might become a very popular destination for

Texan tourists.

FOOD SERVICE

The range of food service found in hotels and restaurants today is extensive. In

the first category, there are restaurants offering the highest grade of service with a full a

la carte menu. This includes dishes served by the waiter from a trolley in the dining room,

and is known as gueridon service. The gueridon waiter must always be skilled, for he has

to carry out procedures such as filleting, carving, and cooking speciality dishes at the

table.

A second, less complicated , type of service is silver service where the menu can

be either a la carte or table d’hote. In this system, the food is prepared in the kitchen and

then put on to silver flats and presented to the guests in the dining room. A third form of

table service, used mainly with a table d’hote menu, is plate service. Here, the waiter

receives the mail already plated from the service hotplate and only has to place it in front

of the guest and make sure that he correct cover is laid and the necessary

accompaniments are on the table. It also demand less equipment for the service of the

meal and is, therefore, labor-saving in such tasks as washing-up. In a fourth type of

service called self-service, a customer collects a tray from the service counter, chooses

his dishes and select the appropriate cutlery for the meal.

Today, with ever-increasing needs for economy, many establishments usually

prefer a variety of types of service. Tourist hotels, for example, frequently offer a

combination of self-service and plate service for breakfast and another combination of

self-service and silver service for luncheon.

SUPERMARKETS

Today, supermarkets are found in almost every large city in the world. But the

first supermarket was opened only fifty years ago. It was opened in New York by a man

named Michael Cullen.

A Supermarket is different from other types of stores in several ways. In

supermarkets, items are placed on open shelves. The customers choose what they want

and take them to the checkout counter. This means that fewer employees are required

than in other store.

The way products are displayed is another difference between supermarkets and

many other types of stores. For example, in supermarkets, there is usually a display of

small inexpensive items just in front of the checkout counter: candy, chocolate,

magazines, paperbacks and so on. Why are they there?

Most customers who go to a supermarket buy from a shopping list, they know

exactly what they need to buy. They shop according to a plan. By the time the customer

reaches the checkout counter, he or she is feeling pleased and relaxed because the task of

shopping is finished. In this happy mood, the customer sees an attractive display of

inexpensive goods that were not on the shopping list. Now the customer feels like buying

something just for his or he own pleasure and enjoyment. Many customers buy from

these displays of products near the checkout counter, and this is exactly what the owner

of the supermarket hopes they will do.

Another important fact in helping a customer choose what to buy, is where a

product is placed on a shelf. A product that is placed at eye level on a shell sells much

better than one which is placed on a lower or higher self. A product which is easy to see

sells best. Manufacturers pay a higher price to have their products placed at eye level on

the shelves.

The comfort and convenience of shopping centers is another factor which make

them popular with customers. Large parking spaces are provided, and many supermarkets

Today, the fastest way to get from one city to another in most countries is to fly.

But the trains of the future will change the way we travel. In West Germany and Japan, a

new kind of train that floats on air is being tested. These trains are called “Magnetically

Levitated Trains”, or simply. MAGLEVS, they move on a magnetic cushion of air. In a

recent test on Japan’s Kyushu island, a magnetic train reached a speed of 320 miles per

hour. The Japan National Railway hopes that by 1990, trains like this can replace the

Shinkansen, the “bullet” trains that travel between Tokyo and Osaka at 130 miles per

hour. In Emsland, in Northwest Germany, a 196-passenger maglev train will soon be

tested at speeds of 250 miles per hour. German engineers hope that in the future, a

maglev train system will link the cities of western Europe.

Plans are already being prepared to test maglevs in the United States. They could

become an important part of the transportation system. Many American cities are a few

hundred miles a part. A flight by air between cities like these only takes an hour, but

getting to the airport often takes longer than the flight itself. Airplanes are also less

efficient than trains. They use a lot of fuel just getting into the air. Trains have another

advantage over airplanes. They take their passengers directly to the center of cities.

The idea behind maglev trains is a simple one. The opposite poles of magnets

attract each other, but a pair of poles (a north and a north pole, for example) repel each

other. Either repulsion or attraction can be used to float a train. The German system uses

attraction. The sides of the train pass around and under the edges of the guideway along

which the train moves. Electromagnets on the sections of the train under the guideway

are attracted upwards to iron bars in the guideway. This lifts the train about half an inch

off the track. Other magnets in the guideway also move the train forward. Because the

energy that drives the maglev comes from the electric current in the track along which the

train moves, the train does not have to carry fuel of its own. As a result, the maglev train

is light.

There are still many problems to solve before the maglev system can be widely

used, but engineers believe the maglev may be the transportation system of the future.

THE ART OF ADVERTISING

Advertising is the art of persuasion. The function of advertising is to try to make

us buy something. To sell a product, advertisers must make it sound as attractive and as

desirable as possible. They must make us feel that we really need the product. There are

several rules which advertisers follow in trying to persuade us. We see theses in almost

every from of advertising.

1.Capture the reader’s attention

The first thing advertisers must do is to make us stop. Then they hope we will read or

listen to the advertisement. In magazines, this is often done by using an exciting or

dramatic photograph, or by using a dramatic statement.

2.Make the reader feel the needs the product

The next thing advertisers must do is to make us feel we need the product. Often we have

no real need for the thing they are trying to sell us. So advertisers try to create the need in

certain cream or product. They tell us that we will look more elegant, good looking,

athletic if we wear a certain type of clothing, smoke a certain type of cigarette, or drink a

certain type of beer. Often the advertiser uses a photograph of a beautiful woman, or a

good-looking man, or a famous athlete. The reason for choosing pictures like this is to

suggest that if we want to be like these people, we should buy the product.

3.Show some evidence

Advertisers must make us believe that what that they say about the product is true. They

may do this by having a photograph of a person we believe in or trust in the

advertisement. An advertisement for toothpaste may have a dentist in it. An

advertisement for vitamin tablets may have a doctor or a nurse in it. This will help us

believe in the product because we usually believe in the judgment of doctors and dentists.

often the success of a new product doesn’t depend on how good the product is but how

good the advertising is. And the victims are often members of the public. By studying the

techniques used by advertisers, we may be able to resist their attempts to make us buy

things that we don’t really need.

DANGER : CHILDREN AT WORK

Child labor- the employment of children in industry, often against their will- has been a

problem for many years. Over a hundred years ago, the English novelist, Charles

Dickens, shocked many of his readers when he described the conditions under which

young children worked in British factories. In many parts of the world, the conditions

Dickens described continue almost unchanged today. The only difference is that

nowadays employment of children is confined to small industries and family businesses,

such as hotels, restaurants and, particularly, farms, rather than to large factories.

Girls are more often the victims of child labor practices than boys. Many of them

are forced to start work when they are only ten years old. Although the work they are

given to do is often light, it often involves serious risks to their health. In one recent

case, children as young as six years old were found to be working in Asian factories, and

the children were working from eight to fourteen hours a day in overcrowded and

unhealthy working conditions. Sometimes a whole family group is employed, with the

salary going to a parent or older relative. The children, therefore , not only receive

nothing or very little for their long hours of work, they are also prevented from attending

school. When they become older they are, therefore, unable to do any other kind of work.

these, working conditions are extremely difficult. The children are often poorly treated

and their wages are very low. Boys are not much better treated in countries where they

work in the building industry, working as laborers carrying bricks and equipment and

clearing rubbish off building sites. Such jobs are often dangerous and the children have

no health or medical insurance.

The solution to the problem of children labor is clearly better laws to protect

young children , greater supervision of industry and heavier fines for those who break the

CORPORATION

The privately owned business corporation is an institution established for the

purpose of making a profit. It is operated by individuals whose shares of ownership are

The number of new products that come into the American market every year is
