PASSION We are passionate about bread, pastries and

cakes and strive to preserve the culture and

tradition of artisan baking. We love to share

our passion for great products and are keen

to build partnerships and innovate together

with our customers. Our heritage of working

with Michelin-starred chefs has given us a

strong understanding of customer needs.

We want to be the best that we can and are

happy to work with you on development

projects, just let us know.

CRAF T All products are handmade by our skilled

bakers, fresh each day. We source ethically and

locally, where possible, to make sure we use the

best ingredients we can – from fresh rosemary

and thyme in our sourdough loaves, to free-

range eggs and the best British and French

butter in our cakes and pastries.

SERVICE We want to offer the best range of breads in

Surrey and we know how important food safety

is and are proud that The Bread Factory

hold Grade A BRC accreditation.

CARE The Bread Factory hate to see products go to

waste so they operate a just-in-time

production, keeping their wastage below 0.1%.

Anything that is left is given to charity and all

leftover dough is baked off and sent to a local

farmer as feed for his pigs.

RECOGNITION Our breads have received many awards

recognising our products. Our breads have

been awarded 12 Gold Stars at The Guild of

Fine Food’s Great Taste Awards. At the 2013

Tiptree World Bread Awards our San Francisco

sourdough won the whole competition as well as

the sourdough category, and our Multiseed

sourdough won the Wholegrain category.

Please note, our bakery items are not free from the following

allergens: nuts, sesame seeds, gluten, milk, eggs and soya.

information are all available upon request.

OUR SIGNATURE LOAVES CLASSIC LOAVES

Most of our signature breads are sourdoughs.

Sourdough breads use natural yeast to make the

bread rise. The natural yeast cultures, also known

as ‘starters’, ‘mothers’ or ‘levains’, can be kept alive

indefinitely with a portion being removed to make

each new batch of bread. We nurture seven starters

and periodically create new ones to give each of

our breads their own characteristics.

Sourdough breads take longer to prove (rise)

and develop complex structures and flavours.

Some of our loaves prove over two days so we need

48 hours’ notice when ordering. These products

are all marked in this brochure with “48hr”*.

In these breads, we don’t use any preservatives

or additives. We don’t have much need for them

as this traditional method makes the bread

naturally last longer.

We have a large selection of these breads,

which are divided here into classic, rye,

seeded, flavoured and fruit breads.

*Our cut-off time for orders is 12pm Monday-Friday.

Where the ordering time is 24 hours this means next day, where the ordering time

is 48 hours this means we need your orders two days in advance.

SANETRA SOURDOUGH (Pictured on front cover)

A light, modern sourdough made with our

white levain starter and 10% rye flour for added

flavour and texture. Shaped in a banneton to

give it beautiful, distinctive lines. Winner of a

BOULE DE MEULE Our signature sourdough, made from white and

wholemeal flour. The starter for this loaf was

created back in 1992, giving it a beautiful hearty

PUGLIESE An Italian classic made from white flour and

semolina. Extra virgin olive oil is added for

a soft texture and Mediterranean flavour.

TIGER TOP PAIN DE MIE This soft bread is made with white flour and

enriched with butter and milk. The tiger top

appearance is created by coating the loaves

with a rice cone mixture before baking. Winner

BAGUET TES

The baguette is a simple stick-shaped bread

inextricably linked to French cuisine. It became

ubiquitous in the early 1900s when Governmental

bills restricted the hours bakers could work.

This made it difficult for bakers to make longer-

proving breads, like sourdough, so baguettes

gained popularity. We use a variety of flours and

techniques in our baguettes to create a

range of styles and shapes.

FLUTE Classic white baguette

ARTISANAL This white baguette is folded three times (rather

than the traditional one or two) and ferments for

much longer than other baguettes, giving it a

deeper flavour.

CIABAT TA

From the Italian word for slipper (describing its

shape), the ciabatta takes on a variety of styles.

Ours have a light crumb with a robust crust

FOCACCIA

From the Latin word for hearth, the focaccia was

originally made on the flat top of large stone

ovens. It was the inspiration for our modern day

pizzas. Our focaccia have a moist interior

and smooth texture.

ROSEMARY FOCACCIA Rectangle – a smaller version of our sheet

with a rustic shape.

Tray (pictured) – rounded rectangle topped

with sprigs of fresh rosemary for a rustic look.

Sheet – straight-edged rectangle ideal for

slicing and using for sandwiches

CHERRY TOMATO FOCACCIA Tray – rounded rectangle topped with whole

cherry tomatoes for a rustic appearance.

BLOOMERS

Our bloomers are great for toast or a more

rustic sandwich. These are available sliced

in medium, thick and doorstep, for traditional

pub-style sandwiches.

a smooth texture and a proper curst.

We use the best ingredients to bring flavour

and texture to a sandwich before the addition

of a filling. Our wide range allows for creativity

or lateral slice, for finger sandwiches.

FINE DINING ROLLS FINE DINING ROLLS

We make mini versions of a variety of our breads, ideal

accompaniments for soups and salads. The rolls can be

ordered fully or part-baked in bags of 25.

The part-baked version can be kept

in the fridge for up to five days and then baked in the

oven for approximately six minutes before service.

MORNING GOODS

We use free-range eggs and high quality French

butter in our dough. Our pastries and Danishes

are baked at the last possible minute to ensure

they get to you as fresh as possible.
