The Upper Iowa Center in Mesa, Arizona, was established in September 2012. The center offers eleven majors on site. Additionally, courses can be blended with the distance learning programs to lead to a degree in several other majors. There are six eight-week terms offered each academic year.   All classes at the Mesa Public School Student Services Building are offered in the evenings to minimize disruption to working adult learners. Upper Iowa has articulation agreements with the Maricopa Community College District, including Mesa Community College, to assist transfer students. UIU has also partnered with the City of Mesa, our Armed Forces, and the Fraternal Order of Police, to name a few.

Ladies, how many times have you turned to your girlfriends and said “I wish I could meet someone new – all I ever seem to find are jerks!”

Or if you’re a man, perhaps you’ve said “Why am I always dating crazy girls?!”

The theme for both these statements is the exact same – you’re repeating a pattern and dating the same type of person over and over. While working for GE I’ve watched many daters fall into this cycle. Many times I’ve listened to men and women exclaim that they are always meeting the wrong person. What I try to teach daters though is that sometimes the problem isn’t that you’re meeting the wrong people. Sometimes the issue lies with yourself when you’re choosing who and who not to date.

Let me break it down for you and start with your process of choosing dates:

Imagine you’re out with your friends, maybe at a party or bar, and you meet someone appealing. Before you agree to go out with this person you should consider the possibility: what if the only reason you’re interested in this person is because they’re so similar to other people you’ve dated before. People usually call this a type – as in “he’s so my type!”

However, is dating someone similar to other people you’ve previously dated, really the right way to go? After all, those relationships ended for a reason. Sure, maybe this time things will be different, but what if the same “type” of person leads to the same “type” of issues.

Now let’s take a look at your other option. I’m referring to the person who expressed interest in you and you probably dismissed without a thought. Usually for reasons like: “Well, they’re not my type.”

What if, “not your type” is what you need though? Can you always be sure there isn’t something more to them?

In GE’s dating manual, it reads on the second page:

“Great Expectations is all about successfully expanding your personal horizons and opening up your opportunities to meet someone to love. The people who succeed with Great Expectations are those who recognize that their previous dating attitudes, expectations or behaviors might not be as productive for them as they once were. These Members are open to learning new techniques and perspectives that have a greater chance for giving them success in their social life.”

Now, I’mnot saying go out with everyone, because everyone isn’t a match for you. What I’m suggesting is to reevaluate the way you decide who you’re going to date. Maybe next time you’re responding to a date request, take a moment to think why you’re saying no.

-Is it based solely on looks? If so, how would you feel if someone said that about you?Everyone has a bad hair day after all.

-Did they say something wrong? What if they were just nervous or you misunderstood?

Now obviously everyone has non-negotiables like children, religion, sometimes even age. What I’m saying is just something to consider, what if the right person for you asked you out months ago and you dismissed them so quickly you never really looked. What if they look appealing now?

My advice: Take a Second Look.

Scottsdale Center for the Performing Arts will present the 43rd annual Scottsdale Arts Festival on Friday, Saturday and Sunday, March 8–10, in Scottsdale Civic Center Park.

Named one of the top arts festivals in the nation by the readers of American Style Magazine and “Best Arts

Festival” by Phoenix New Times, the Scottsdale Arts Festival showcases nearly 200 jury-selected artists from throughout the United States and Canada who work in painting, sculpture, glass and ceramics, jewelry, photography and more. Works of art are available for purchase directly from the artists and through the Festival’s online art auction. More than 20 Arizona bands and performers will provide continuous live music and entertainment on two stages throughout the

weekend, including the Alan Jones Jazz Quintet, The Blues Review Band, Carol Pacey and the Honey Shakers, C.C. Ryder Express, Grantman and the Island Beat, Los Guys, Mario Moreno and the Ramblers, Nancy McCallion and Her Wee Band, Ritmo Latino and Sugahbeat, among others.

In collaboration with the Festival, Scottsdale Public Art will present Pink and Blue Dilemma: The Foam Incident by Baltimore artist Scott Pennington. Wildly fun for kids and adults, this interactive work of art invites visitors to play with water-based soap suds that spill from a colorful factory as Pennington’s pink-and-blue-clad ‘technicians’ attempt to contain the bubbles. Thirty-minute-long ‘foam incidents’ will occur five times a day throughout the Festival.

Exploring the theme of “The Art of Being a Kid,” Imagine Nation, the Festival’s family area, will offer participants of all ages the opportunity to connect with their inner child and engage their creativity through free arts activities, storytelling, dancing and more.

Throughout the Festival’s three days, admission will be free to Scottsdale Museum of Contemporary Art (SMoCA), which features the exhibitions

Paolo Soleri: Mesa City to Arcosanti; The Human Touch: Selections from the RBC Wealth Management Art Collection; and Mashup: New Video Art. Museum visitors will be invited to experience an “Inflatable,” a nomadic tent structure inspired by the Ant Farm, an experimental collective founded in San Francisco in 1968. Hands-on architecture-themed educational activities will be offered as well.

Official Scottsdale Arts Festival merchandise will be available throughout the grounds and inside the Stores at Scottsdale Center for the Performing Arts and SMoCA, which also offer a unique selection of art-related merchandise, including artist-made jewelry, imaginative toys, decorative objects from around the world,

well-designed furnishings for home and office, music, books, and greeting cards.

LOCATION AND PARKING The Scottsdale Arts Festival takes place downtown at Scottsdale Center for the Performing Arts and Scottsdale Civic Center Park, four blocks south of Indian School Road and three blocks east of Scottsdale Road. “ARTISTS IN SANCTUARY” Popular Guest Artist Series Returns to

Sanctuary on Camelback Mountain The Arizona desert has long been a source of inspiration for artists and art lovers, and now, Sanctuary on Camelback Mountain is bringing them together with the return of its popular guest artist series, Artists in Sanctuary. The series, which debuted to popular response last year, will run through April with an exciting schedule of events that provide an educational forum for Sanctuary guests, spa members, art collectors and invited guests to chat with a featured artist and view his or her works. The resort’s aptly named Paradise Views patio, with its breathtaking mountain vistas, will be the setting

for Thursday evening complimentary wine-and-cheese receptions honoring the artist of the week. Scheduled from 5:30 – 7:30 p.m., these have been strategically scheduled to coincide with Scottsdale’s Artwalk (Thursdays, 7-9 p.m.), with a free hospitality trolley transporting guests from the resort to downtown Scottsdale and back. ‘A Place at the Table’Filmmakers Kristi Jacobson and Lori Silverbush investigate incidents of hunger experienced by millions of Americans as well as proposed solutions to the problem. Playing exclusively at Harkins Camelview 5. (PG - 84 minutes)

Joseph: “A Place at the Table” is certain to turn the stomachs of its viewers, who are bound to become enraged over the injustice faced by millions of Americans who either do not have enough to eat or are unable to afford the type of food that leads to a long and healthy life. Filmmakers Kristi Jacobson and Lori Silverbush’s new documentary succeeds in setting a fire under the seats of its viewers by both tugging at their heartstrings with tales of tragedy and engaging their brains with food for thought. The film’s fascination factor falls in the second half but its subject is still too significant to slight. (Grade: C)

‘The Monk’Vincent Cassel plays a preacher who is feared for his righteousness and believes he is immune from temptation - until the arrival of a mysterious apprentice undermines his convictions and leads him down a dangerous path of sin, corruption and murder. (R - 101 minutes)

Stan: Foreign language films are among my favorites. Writer/Director Dominik Moll, staying true to the often-controversial elements of the novel by Matthew Lewis, presents the central character’s ‘fall from grace’ with stunningly breath taking cinematography by Patrick Blossier for the multipletemptation sequences of down fall. And, although in French with English subtitles, the story is not a chore to follow for those who may be hesitant as the basics of faith and inner commitment are laid bare, transcending each our individual religious convictions. (Grade: B)

In “The Frankenstein Theory,” which opened last weekend exclusively at AMC Arizona Center 24, Timothy V. Murphy plays a disgraced college professor who leads a documentary film crew to the rim of the Arctic Circle in a desperate effort to vindicate his academic reputation and prove that Mary Shelley’s literary classic “Frankenstein” is, in fact, a work of non-fiction disguised as fantasy.

“The creature in Mary Shelley’s novel is unlike the Boris Karloff character that we are used to seeing in cinema. This is a creature that is hideously disgusting in terms of his

physical appearance but is incredibly powerful, tall and strong. Where it differs from the Frankenstein we are used to seeing is, in the novel, the creature is incredibly fast, agile and highly intelligent. But almost 200 years have passed since the novel so he has adapted to his basic surroundings.

“Also, his experiences with humans have gone very badly so he is now a reclusive, shadowy figure. Even though he is, in the novel, eloquent and highly intelligent, he has removed himself and moved into isolation for almost 200 years. And that has taken a

psychological toll on him. I don’t want to give too much away but, in terms of him whether you see him speaking or not, I would say that after his past experiences with people, he has perhaps taken a vow of silence. He is not interested in talking to people because he has been rejected time and time again.” – Andrew Weiner

In “The Lost Medallion,” which opened last weekend, Billy Unger and Sammi Hanratty play two teenage friends who uncover a long-lost

medallion and accidentally wish themselves back in time. The experience gives them a new understanding of who they are and what their lives really mean.

“I wanted a kid who isn’t religious and doesn’t believe in God to say, ‘Hey, it’s a good movie. There’s a little bit of ‘God loves us’ and I don’t believe in God but that was a fun movie. They jumped off waterfalls, they were in canoes, they were climbing cliffs and they were sneaking around caves.’ My thesis was that if we just created an entertaining story and let the story breathe out its theme, anybody would like it. And our experience is that everybody loves it.

“We just said, ‘Let’s just bring God’s love to the story and if people want to talk to their kids on the way home about God’s love and that love being demonstrated in Jesus, they can do that.’’ For us, it became a discussion-starter film that

spring boarded into a deeper conversation that we would let people have over time in an authentic way on the way home or over a piece of pie after the movie. We just trusted parents to do that part and, by a whole lot of rewrites and great performances, it just feels like an organically true movie.” – Bill Muir

“I went in to the casting director and it was one of my first big auditions in LA so going into it my expectations were ‘go in, give a good audition, and hopefully make a fan out of Debbie Zane (casting director) and she’ll bring me on something in six months or so’. A month and a half later I get a phone call, I was emotionally shocked, called my parents and immediately it hit me on how big this was going to be. It’s the last movie in the series, it’s a series of ‘pay offs’ that have been set up over the last four films and you finally have vampire Bella in her element as a vampire, you have vampire sex with Bella and Edward who finally don’t have to

hold back on each other, and you have the Volturi finally coming in, and, there’s a show down between the Cullens and the Volturi where all hell breaks loose! The last 30 minutes of the film for I think that any one who is an action fan will identify with it and any body who can identify with defending your family. That’s what the Cullens are doing, they’re defending each other, and the true love thing shine’s through at the same time as the core family is fighting off the Volturi.” – Erik Odom

“My manager’s assistant called and said we have an audition for you called ‘Breaking Dawn’, I didn’t know it was a part of Twilight and asked what it was, she said it’s a vampire movie. I said ‘oh no, not another vampire movie trying to copy Twilight. She said, ‘idiot is Twilight [with a chuckle]! Breaking Dawn 2” is different from the rest in that it does include the male audience. It’s an action packed journey, its not just a love story anymore. There’s danger in it, and there’s a lot of great special effects in it, the final battle scene at the end is very exciting, so it the first ‘Twilight’ movie that really

invite’s male fans along with the female fans that are already loyal and attached to the ‘Twilight’ Saga. And as you say and we thought so too, the ending is very clever, because the ending was a secret during most of the shooting and when they finally told us we thought the same thing, that’s clever, and in movie terms its also

very cinematic! It’s something that works in the book and I think Stephanie (Meyer) would be the first one to tell you something that works in book form, might not necessarily work in films terms. They adapted it in a way that I think really works and adds to the experience!” – Guri Weinberg

“We didn’t want to make a film that simply showed who is going hungry in America - but why. It is not that we don’t have the food. It’s not that we don’t have the programs. It’s that we as a people are not making it a priority and therefore those that represent us in Washington DC are not making it a priority. That has got to change.

“I think that part of the why has to do with the fact that you can’t

see this problem. It’s invisible. It sometimes hides in the bodies of an obese person or of a person that, if you see them walking down the street, you wouldn’t necessarily know that they are struggling with this. And then there is also the shame that keeps people quiet about it and keeps it hidden.

“Our hope with this film is that by bringing these stories out of the shadows, it will no longer

be invisible and will therefore no longer be a problem that we, as ordinary citizens or our politicians, can ignore. I think that the most important thing is for people to see it because it will move you, it will surprise you and I think that it will get you up out of your seat and clicking, texting, tweeting - whatever your mode to get involved.” – Kristi Jacobson

This year Wild Horse Pass Hotel & Casino will hold their 9th annual St Patrick’s Day Blackjack Tournament Sunday, March 17.

Sign up starts at 2pm, the first cards fall at 4pm – So get out there early because the tournament is limited to just 125 players.

Remember, 1st place prize money is guaranteed at $6,600! That means blackjack players from all over Arizona will be heading for Wild Horse Pass Hotel & Casino - So don’t get shut out!

This year the tournament will actually held on St. Patrick’s Day (normally it’s held on the Sunday of that week)

For an entry fee of $60, you have a chance to take home the top prize of $6,600 - but the tournament also pays 2nd thru 5th place. The St. Patrick’s Day tournament will consist of a Qualifying round, a Semi-Final, and then the Championship round.

In the Qualifying rounds players will seat five to a table and be given $1000 in play chips with

betting limits from $10 to $500. There will be a chip count down after the 16th hand. At the end of 21 hands the player with the most chips will advance to the semi-final. If you fail to qualify there may be an opportunity to re-buy depending on how many players enter. In the semi-final, the 25 remaining players will again seat five to a table and be given $1000 in chips with betting limits from $10 to $500. At the end of 21 hands, only the player with the most chips at each table will advance to the Championship round. The Championship round will consist of the remaining five players, all competing for their share of the prize money.

Players will again start with $1000 in play chips, betting limits from $10 to $500. At the end of 21 hands, the player with the most chips will be determined the winner and receive first place prize money of $6,600, 2nd through 5th will be awarded prize money based on the number of entries.

For your $60 tournament entry fee, you’ll also receive a cool St. Patrick’s Day limited Edition Tournament T Shirt!

This is a great tournament to play no matter what your skill level. However – A word of advice, bring your “A” game on this special Sunday because I will be playing this tournament too!

BIZARRE BREAKFASTS FROM AROUND THE WORLDWe all know that breakfast is the most important meal of the day. Those great whole wheat brain-boosting agents and early morning chomps on a hard-boiled egg gives us more energy than sugary cereals, this is true. But what do our foreign counterparts eat in the morning?

While a diseased corn-on-a-cob or a bowl of piping hot crab porridge might not sound appetizing, around the globe these unusual foods are regulars on the breakfast table. As food experts predict that Brits will broaden their breakfast choices in the next 10 years, seeking influence from our foreign brekkie eaters, our beloved fry-up could soon be toast to make way for more exotic dishes like savoury crab porridge, seaweed flakes, and fishy breakfasts.

THAILAND: SPICY RICE NOODLESIn Thailand, a common morning meal consists of flat, wide rice noodles that are topped with tongue-tingling chiles (either preserved or fresh) served in vinegar.

USA: SCRAPPLEMeat-loving Americans enjoy scrapple for breakfast, which is made from parts of a pig that is left-over from dinner. The meat is boiled, minced, seasoned and molded into the shape of a loaf. It’s then fried and eaten with eggs or pancakes.

SCOTTLAND: HAGGISWho wants oatmeal for breakfast? Plenty of Scots do, although oatmeal is often just the beginning. They’ll add onion, suet, and various spices to the dry mix. Oh, and don’t forget the minced sheep heart, liver, and lungs. Simmer all those ingredients for a few hours in water or stock, wrap everything up in a casing (or sheep’s stomach, if it’s super traditional), and you’ve got yourself some haggis.

KOREA: KIMICHIKoreans wake up to this potent dish of fermented vegetables, with an added kick of garlic, red peppers and ginger.

Two of my favorite episodes of I Love Lucy show are the candy episode where Lucy and Ethel are working in a candy factory and the other is her stomping grapes. Both episodes are classics and they highlight two things that come together for a perfect pairing – wine and chocolate.

Why does chocolate and wine go so well together? It is not just because they are two of my favorite things in the world (besides my husband, Curt, and my dog, Eppy). One of the reasons is that chocolate has different levels of tannins, as does wine. When pairing a chocolate think about the tannin level in both. Typically the darker the chocolate the tannins are bolder.

Here are a couple of other tips.

• Consider the intensity of both the chocolate and wine when choosing to pair. For example, pair a lighter milk chocolate with a lighter red wine like a Merlot where a bittersweet chocolate will pair well with a more tannic wine like Cabernet Sauvignon or Lawrence Dunham Vineyards’ 2010 Petite Sirah.

• The creaminess of the chocolate will also provide you guidance about an appropriate wine pairing. White chocolate is a bit more creamy or buttery than many darker chocolates so you might want to pair a Muscato or Lawrence Dunham Vineyards’ Viognier. The effervescence in our current Viognier release will pick up the creaminess of the white chocolate.

Lastly, like other wine and food pairings it is important to experiment. Host a wine and chocolate party and experiment by rating different pairings.

As The Mint approaches its second anniversary, internationally celebrated chef Bradley Borchardt has introduced a brand new iteration of The Mint’s crave-worthy Asian menu.  Borchardt studied under new world savant Mark Miller (of Coyote Café fame) before embarking on a culinary life in Asia; namely Japan, China, South Korea and Thailand.  There, Borchardt expanded his palate in kitchens such as the Park Hyatt Beijing and The Seafood Bar in Bangkok, honing in on traditional styles of Asian cooking and straying from United States trends such as “Asian-fusion”. 

“The goal was to create small, sharable items with bright flavors that are fun and easy to eat.  We also wanted maintain the integrity of each dish, so we really stayed away from fusion-type cuisine.  This food is sexy, sleek, and enhances everything that is going on at The Mint,” says Borchardt.

Some new menu items include , Steamed Pork Buns ($11) featuring Vietnamese caramel pork belly topped with sweet and sour cucumbers in between steamed buns; MahiMahi Teriyaki ($18) with Thai basil-Jasmine rice, toasted sesame seeds; and Edamame with Sesame-Seaweed Salt ($5).

These new items will also play a part in The Mint’s weekly 5-5-5 wine tastings. Every Thursday and

Friday starting at 5pm, The Mint offers five tastes of exceptional wines for $5. Explore buttery Chardonnays, soft Merlots, crisp Sauvignons, and much more. Over the past five years, the Val-ley has become both a mecca for winemakers and up-and-coming chefs.  The initial result – wine dinners all over the Valley. These perfectly-paired, multi-course feasts for all the senses generally focus on marrying specialty wines with custom culi-nary creations. Some dinners are formal, including pre-dining recep-tions and course-by-course insight from flown-in experts, while others are more intimate and focused on farm-to-table recipes and in-house sommeliers. And, with success comes new in-novation.  As a result, over the past couple of years, in addition to wine dinner offerings, many venues are taking advantage of creative cocktail din-ners and tastings as well.

Below are some shout-outs to the Southeast Valley and their recent offerings: Caffe BoaNo, it isn’t what you think. Caffe Boa of Ahwatukee, a staple since 1995, is completely different – in both menu and ownership – from the almost-same named and be-loved venue in Tempe. However, its creatively themed wine (think a Ghost-focused brand dinner for Halloween) pair-ings coupled with signature New American cuisine is just as tasty.  A typical wine dinner at Caffe includes three or four courses, each paired with wine, as well as live music and surprise giveaways all night long. Prices start at $40

per person and reservations are required in advance.  DVine Wine BarWith two locations – one in Mesa and another in Chandler – this growing bistro and wine hot spot known for offering $5 wine tast-ings on Wednesday is evolving into a must-visit destination for master sommeliers and cocktail creators nationwide.  Case in point, this winter both locations will welcome Tom Turner, Master of Whiskey for Crown Royal, for special whiskey-focused tasting events. “Throughout my many years in the spirits industry, I have has served as a vodka ambassador, studied tequila in Jalisco, and sipped rum on exotic beaches throughout the world,” said Turner. “But my heart belongs to whisky, something I wish to share with all of the Southeast Valley.” 

Kokopelli WineryPerhaps the best-known Southeast Valley haunt to wine and dine in signature Arizona style is Chan-dler’s Kokopelli Winery.

Kokopelli was inspired by a parent – a mom. Fresh off of moving to Arizona from Michigan to retire in the 1980s, Don and Carol Minchella were quickly wooed back into work mode when Don decided to make good on a promise to his mother, Josephine, a second gen-eration winemaker, to one day own his own vineyard and winery.

With Josephine’s love, help and expertise, the Minchellas em-barked upon what would become one of the most successful vine-yards in Arizona.

Today, the winery is run by Don and Carol’s son, Dennis, and his wife, Melissa.

A best bet – the wine/champagne dinner on some holidays, not to mention their short-notice wine dinners. Ranging in price from $50 up into the $100s, guests can choose from three to seven or more courses and wine, wine cocktails, champagne and more.

Caballero Grill (www.caballerogrill.com), located at 1800 N. Litchfield Road in Goodyear, will be hosting a special food and wine pairing event on Saturday, March 9th at 6:00 p.m.  This five course culinary extravaganza will feature five wines by Midnight Cellars; the assistant winemaker will be in attendance to discuss the winemaking techniques used and the individual nuances of each wine.  The cost to attend is $39.00 per person. The food and wines being served include: 

• Midnight Cellars Chardonnay, served with a selection of Cheese, Salami, Coppo, with Olives, Artisan Bread & Olive Oil

• Midnight Cellars Full Moon Red, paired with Wild Mushroom Risotto, Fresh Basil, Tomato and Fennel

• Midnight Cellars Estate Merlot, served with Roasted Pork Tenderloin with a Blueberry Merlot Reduction

• Midnight Cellars Cabernet Sauvignon “Nebula” accompanied by Top Sirloin with Grilled Mushrooms in Smoky Tomato Sauce with Roasted Garlic Mash

• Midnight Cellars Estate Zinfandel with Vanilla Ice Cream with Candied Pecans and Brandy Cherries on Oatmeal Crumble

 In addition to their special events, Caballero Grill features the only made-to-order Ceviche bar in the Valley.  Guests can choose the type of seafood they prefer, the Ceviche is then made fresh and served in a bowl, on a lettuce leaf or a tostada.  Caballero Grill also offers Sunday Champagne Brunch which runs from 9 to 2 each week.  It features a made to order omelet station, carved beef, crab legs, jumbo shrimp, mussels and numerous menu items, as well as desserts all for just $20 per adult and kids (12 and under) $8.  A Bloody Mary and Mimosa Bar is offered for $2 per glass.  They also recently started hosting Karaoke on Thursday nights and daily happy hour from 2 to 7 and again from 9 until close. Both founders of Caballero Grill Paul Fratella and Anthony Guerriero believe in giving back to the local community and have created alliances with several non-profit organizations including Blue Star Mom’s, Soldiers Best Friend, Avondale School District, Sun Canyon Elementary, Millennium High School, Homeless Youth Connection, The Montessori, The New Life Center and other local groups.

I’ve seen a lot of buzz on the internet lately about bars that don’t serve beer properly. There are really only a few cardinal sins you can make when pouring beer, but in the interest of filling a column, let’s talk about the whole process.

Proper Glassware – this is important

but not critical. The use of glassware appropriate to the style of beer has to do with how the glass treats the beer, how it releases the aromatics and ultimately how the drinker perceives the beer. Try it yourself. Pour yourself a higher ABV beer like a Belgian Tripel in both a standard pint glass and a tulip glass (you can use a white wine glass if you don’t have a tulip). The pint glass will lose flavor quicker, while the tulip will allow the aromatics to concentrate and hit your nose just as you take a sip. Since aroma is so important to

taste, the flavor will be enhanced and you will truly taste the beer. There are glasses for wheat beers, pilsners, nitrogen beers and more. You can have your higher gravity beers in tulips or goblets or snifters. It is not practical for most bars to carry a large assortment of beer glasses, but if they at least have one style like a tulip or snifter for more complex beer then they are on the right track.

Serving Temperature – This is difficult to control at most bars, especially for draught beer, as it requires multiple coolers set at

multiple temperatures. Most bars have one cooler for kegs and one for bottles, both set around 38 degrees. In an ideal world only the lightest flavored beers, such as American Premium Lagers and Lights would be served below 40 degrees. Craft and import pilsners, hefeweizens, and most other lagers and wheats should be served in the 40-45 degree range. The bulk of your American craft styles…Ambers, Pales, IPAs, Stouts, etc…are best served in the 45-50 degree range. As you climb the ladder in ABV to Sour Ales, many Belgian Ales, English Bitters and Bock Beers so to should the temperature rise. Now we are in the cellar temperature area – 50-55 degrees is perfect for these beers. Finally, big Belgians, Old

Ales, Barleywines and Imperial Stouts are best served in the 55-60 range. The reason for this is twofold. First, cold hides flavors and bigger, richer beers deserve to be presented at a temperature which allows the best possible taste experience. Secondly, at colder temperatures the dominant flavor tends to be alcohol which is not necessarily the way you want to enjoy your La Trappe Quad. So the rule of thumb is the higher the alcohol, the warmer you should serve it. It is not uncommon to see beer geeks sitting around cupping their beer with their hands in an effort to get it to warm up to an enjoyable temperature. Again, try it yourself.

ARIZONA’S MOST PASSIONATE BEER PEOPLE

Behind the Scenes…

Hello craft beer lovers, today I’d like to take a moment to give you a behind the scenes look at the selection process for my “Arizona’s Most Passionate Beer People” article that went to print during AZ.Beer Week. I typically get anywhere between ten and twenty responses to my column at a given time, but this one garnered seventy eight replies with questions on the manner of selection so read on and I shall elaborate.

First and for most, this collection of people were chosen by our beer community at large. Over the course of ten weeks I interviewed individuals in our pubs, polled people on my blog spot, asked the folks in local Facebook groups, filed back through other writer’s previous “Best Of” lists and made notes of who was out working and participating in beer events all over the state. Of course I did my research!

Then of course there was criteria, this catalog wasn’t to be the same as many listings before it but instead something entirely new. A register of new gurus in our growing beer community to highlight the accomplishments of a mostly younger generation making a difference right now.

For balance, I covered different aspects, from bar owners to brew masters and home brewers to distributors and pundits, always with an eye on education. Next, in sifting through all of the suggested names, every person had to have been presented to me for at least TWO reasons. For instance, Beer Kristine works as a beer ambassador for World Class, had a huge part in developing the craft beer bars in her territory and plays an important role in Arizona Girls Pint Night Out. Wait, that’s three reasons!

Pour a high ABV beer ice cold and sip it, let it sit for 10 minutes and try it again. Continue to sample it as it warms up. You will be amazed at the flavor differences.

Clean Glassware – there is a certain method to cleaning glassware that should be followed. The best is a dedicated three compartment sink with special, sudsless soap, a cool rinse and sanitizer being used. Each sink should have brushes and glasses should be thoroughly scrubbed and allowed to air dry up side down. If a dishwasher is used, it should also be dedicated as other foodstuffs that may linger, especially dairy and fatty foods, can cause pour head retention and subsequent loss of carbonation. There are three very simple ways to tell if your beer was served in a beer clean glass. The easiest way is head retention, does the head stay appropriate for the style as you drink it? If not, the glass was not beer clean. Next is Belgian Lacing. In a beer clean glass, each sip should leave a ring of foam around the glass serving as a sort of road map of how you drank that beer. Finally, there should be no bubbles emanating from the side or bottom of the glass. This is a sign that some debris is stuck on the glass and the beer is reacting to it by releasing carbonation at that point. The one exception to this are certain glassed by breweries such as New Belgium that are designed with a nucleation point at the bottom. This is to allow the carbonation to release slowly thereby enhancing the aroma release and improving the drinking experience.

Glass Temperature – This is

a hotly debated topic which we will resolve right here and now. Glassware should never, ever be frozen. This is true for every beer including American Light Lagers. There are multiple reasons for this. One reason is that frozen glassware destroys the carbonation level of the beer. Since carbonation is important to mouthfeel and mouthfeel is a major component of enjoyment of the beer, it is not a good thing to lose carbonation. The beer becomes flat and watery very quickly. Frozen glassware also causes the beer to foam excessively. This is due to the glass being colder than the beer and contributes to the rapid loss of carbonation. As noted above, beer served too cold loses flavor. Frozen glassware contributes to that flavor loss. Ice chunks can break off of a frozen glass diluting the beer and interfering with the experience. Finally, and this is the most important, think about what is actually freezing to the glassware. As noted above, the last thing that touches the glass during the cleaning process is sanitizer. When a beer glass is frozen that sanitizer is frozen to the sides of the glass. In essence, when you are drinking out of a frozen glass, you are drinking sanitizer. This is another easy one to try at home. Once you do, you will always make sure that a bar is serving you a beer in anything other than a frozen glass. If all they have are frozen glasses, ask them to give it a quick rinse with warm water to thaw it and clean out the sanitizer residue.

take a clean, room temperature glass and ideally give it a little cold water spritz from a glass rinser if they have one. This does several things – it cleans out any sanitizer residue, removes any dust that may have accumulated while the glass sat, and it cools the glass down slightly to make for a better pour.To dispense the beer, hold the glass at a 45-degree angle about one inch below the beer faucet. Place a hand low on the tap, near the faucet, and quickly snap the handle towards you with one motion, until it stops and the faucet is open and pouring beer. This is important as opening the tap slowly will cause the beer to foam. As the glass fills, straighten the glass to an upright position, and close the faucet by snapping it back to the closed position. A properly poured beer will always have at least an inch of foam on the top, depending on the style. This foam is important to the enjoyment of the beer as it allows the aromatics to release slowly and keeps the beer from going

flat. As Americans, we have been trained to expect beer to come right to the top of the glass. This is not a good thing so don’t worry about sacrificing a little bit of beer to improve your enjoyment. There is a picture somewhere on one of these pages of what a perfect pour should look like. Another thing to beware of is bartenders who stick the tap faucet into the beer. This can lead to metallic taste at best. At worst, it allows bacteria to grow on the faucet as the old beer sits. This can get transferred to the next beer and create some truly horrible flavors.

There is so much to know about the proper method of serving beer and this just scratches the surface. It does give you some ideas of what you are looking for in a good beer bar. Feel free to cut this out and keep it with you as a check list to see if your bar is handling your beer properly. Until next time, Cheers.

Patti Stanger of Bravo’s “The Millionaire Matchmaker,” airing Thursdays, has all, and a lifelong love of clothes. Plus she makes quick judgments about people from their clothes and knows that everyone else does as well, so she pulls her look together.

The third-generation matchmaker from New Jersey comes by her love of fashion genetically, even if she does have a stylist.

Stanger describes her father, who wore monogrammed shirts, as “half Tony Soprano, half metro. He dressed Sinatra style when I was growing up.” Her mom shopped in New York, and Stanger learned how to put together outfits on her own terms.

In case you haven’t noticed, this past offseason was very un-Yankeelike.

Three key players – right fielder Nick Swisher, closer Rafael Soriano and catcher Russell Martin – were allowed to leave via free agency, a development brought about by GM Brian Cashman’s desire to get the team payroll under $189 million in 2014 to avoid MLB’s punitive luxury tax.

So in 2013, the team will go with Ichiro in right, a healed Mariano Rivera in the ninth and one of three possibilities – veterans Francisco Cervelli and Chris Stewart and rookie Austin Romine – behind the plate.

Romine is an intriguing case. Drafted in the second round in 2007, the 24-year-old Southern Californian came with the reputation of being a sterling defensive catcher with a powerful arm and a competent hitter who could eventually develop 20-home-run power. At one point, he was named the Yankees’ fourth-best prospect. His presence enabled the Bombers to trade their other stud catching prospect, Jesus Montero, to Seattle in the 2011 Michael Pineda deal.
