The last nine months have truly been a roller coaster. It is hard to believe that we are nine months removed from Kathryn Cavender winning TICC, and everything that has been turned upside down since then. When COVID-19

first came on the scene and the Board was thrust into making the unprecedented decision of shutting down all cook offs starting in March, there was a lot of uncertainty in the air about how this would impact CASI, and how long it would last. The months of April and May brought a lot more questions, but also a light at the end of the tunnel. At that time we were all feeling a little relief headed our way as things started to open back up and we could resume cooking chili and helping raise needed funds for our local charities. Now that we are headed for August, there are new worries, more unanswered questions, and again cookoffs have begun to cancel due to the uncertainties.

The changes and uncertainties that this pandemic has brought upon each person across the globe have been sobering for most, and frightful for others. It has impacted the way that work, socialize, view the world, and raise our families. It has impacted each and every one of us in one form or another, and we are all weary, frustrated, and tired.

WE as a Board understand and feel all of those things too in our personal life, and we feel the added pressure of the unknown in regards to our beloved organization. Personally, there have been a lot of sleepless nights and irritable days. Where do we begin, how do we move forward, are we making the

wise decisions, what more can we do, etc. There are no easy answers to these

questions, and there are days that the frustration mounts, because we are all ready for our “normal” to return. Here is what I do know. I am not the only one that is feeling this pressure and frustration. Every decision that your Board of Directors has made over the last five months has been deliberated, stressed about, and agonized over. Our focus has been to ensure that CASI is in a position to weather this storm, and come out on the other side in a position that we can do what we do best, raise money for charity. We have kept the CASI Mission Statement and the cooks at the forefront of each decision, change, and adjustment that we have faced. In time, we will know whether or not our efforts were correct.

As we approach, what should be, the homestretch of the chili year, we will keep moving forward with planning TICC. Bryant McGill said “The number one skill in life, is not giving up.” I am very proud of our Board and the decisions made to now. They have provided the flexibility to adapt to the ever-changing landscape, and continued to march forward where there was no path, yet have managed to leave a trail. It is our hope that we will be able to sit amongst friends under the Terlingua sky come November.

Please stay safe and be kind to one another. These times are trying for us all, and they are affecting each of us differently. Keep your heads up and stay positive. Right now we need more kindness and understanding in the world. Be somebody who makes everyone feel like a somebody! A positive step forward today, can make a huge change tomorrow and get us back to chili, charity, and FUN!Kris Hudspeth

The recent announcement from CASI, to temporarily adjust the “Qualification on Points” structure resulting from the effects of Covid-19 brings some exciting news with it. Your TallyMaster and IT Team have been busy behind the scenes to easily deploy the qualification of cooks and show teams meet-ing the new 6-4-3 point requirement. This

process of retroactively qualifying those from cookoffs held in the 2019-2020 chili year was completed for the June issue. Please join me in congratulating all those who are now qualified for TICC 2020.

Well I am here to report not much is happening. In a way, that’s is a good thing. I still am working full time, from home, which was a big adjustment. So far we are all healthy in the Cavender household and Zoom has become a 4 letter word. In the month of June I went to TWO cook-offs. The Space City Pod Jamaica Beach cookoff was a very good time. I was water logged from floating the lazy river and walking the beach. At the Friday night judging we used the alternate method which worked quite well. Everything was outside so social distancing wasn’t an issue. I am happy to report we behaved and Jamaica Beach has invited us back next year.

VASA Pod was able to have their cookoff. Maxine Reed and I headed to Victoria, TX to get out of the house! On the way down I realized I forgot to grab my beef cubes and when we got there she realized that she brought only chicken broth. I gave her what I had and borrowed what I needed. You know what happened…of course Maxine qualified and I got second! Travel

restrictions and cancellations have made it a little tough to attend a cookoff as Champion. If all goes as planned I am heading to the South Dakota State Championship this month. It’s not the chili cooking I miss as much as visiting with all of you. Hope to see everyone SOON!Kathryn Cavender

Your 2020 Candidates for Board of Directors

Good Day and Greetings, Some of you knew or may have

suspected I will be running for a second term on the CASI Board of Directors. Well it’s true! I offer this letter as my formal re-election notice to continue serving as a Director for the Great Peppers, membership, cooks, and my friends.

The last 2 years have been very rewarding and satisfying for me as I learned the inner workings and internal moving parts of our organization. Acting as your TallyMaster has been fulfilling and enjoyable. This has brought me personally closer to you as cooks on many different levels. The joy of seeing the cooks and winners on paper, and the efforts they achieved are a fascinating aspect of the job. It is fun to see who attended, awarded points, and who qualified or is almost qualified for TICC. It is exciting to see when a cook is one or two points away from qualifying! “Almost there”, is a phrase I often tell myself.

The promise I gave the organization coupled with the trust you bestowed on me two years ago has never been forgotten. I hope to continue that honor and privilege to serve you another term.

This has been a very challenging year. We have had to constantly adapt and reevaluate our goals. It has been daunting and very emotional. Making good choices with the limitations we have endured has been hard on all of us. The cooks in CASI are a wonderful group and as an organization we will persevere and be better for the difficulties. Lessons learned are the ones that are never lost. I want to continue to help navigate the waters and make CASI stronger than ever. It is the reason I ran two years ago, and it is the reason I wish to continue to serve. I truly care deeply about CASI and for all of you. You are more than just cooks

I am so excited to anounce that I will be running for the CASI board of directors this year. To be on the board is something I have considered for a couple of years now. I have been cooking chili since 2010. I finally found a winning recipe in 2018 when I won an automatic qualifier in Amarillo at the Tri state open. That year I was able to go to Terlingua and I found out even more about what all is involved with CASI. Ever since that moment I realized that I wanted to be more invested with CASI and it’s members. I began traveling to other cook offs outside of Amarillo. I decided it would be the best way to meet more people. I have cooked in Dallas, Quitique , Jamica Beach and Hobbs New Mexico where I found some of the best friends/family I could ask for. I became the Great Pepper for the Tall in Texas POD in 2019, I have hosted several cook offs including the Tri-State Open benefiting the Make-A-Wish foundation raising over $40K this past year. I would like to think of myself as an outgoing, friendly, and loving person. I love to be part of projects to help them grow. Please consider me for the Board of Directors, I am looking forward to growing with CASI.

Steve HerriesMy name is Steve Herries and I am

running for CASI director. I started cooking chili about three years ago. It didn’t take long for me to figure out that chili cooks are some of the finest people on the planet. I had several people offer to share recipes and techniques, as well as suggestions on how to improve my chili. To say that I was impressed was an understatement.

I decided to run for one of the director positions to give back to an organization that has offered me so much. After I retired, I lost the built-in friendships that work often provides. After a few cook-offs, I started to fully understand the phrase “chili family.”

I am big on honoring tradition and those who have come before me. That said, today’s world looks very little like it did at the original cook-off in 1967. While change is inevitable, I don’t believe in change simply for the sake of change. Due to the effects of the Coronavirus, CASI and our associated charities are struggling. I want to be part of the team that offers well-thought-out and well-executed policies that carry CASI into the future while keeping our traditions and legacy intact.

Like all organizations, CASI’s strength is in its members. My wife and I are Friends of CASI and I am an area referee. I will work wherever the organization needs me. I am available for comments or suggestions. Feel free to e-mail me at [email protected] Herries

I am seeking re-election to the CASI Board of Directors and I’m asking for your vote. 2020 has been a trying year for the world and for CASI. The current members of the BOD have been required to make several difficult decisions, some not very popular, in order to guide our organization through these troubling times. I am privileged to have been involved in those decisions and want to continue to serve on the board and do my part in helping CASI through this current pandemic.

I am a member of the Red River Valley POD and the Dallas Area Metroplex (DAM) POD. I have served as both an area and regional referee for the Red River Valley POD and I’m currently the regional referee for the DAM POD. I previously served as a member of the TICC Champion’s travel committee and the IT Committee. I have been responsible for managing the gate at TICC the previous 2 years and was responsible for maintaining the network at TICC last year. I am currently the IT Director and, along with the IT committee members, responsible for maintaining our website.

There is a lot of work ahead to keep CASI alive and well and it will take all of us to accomplish this. It will not be an easy task to increase our membership, maintain our current sponsors and find new ones. The BOD alone cannot do this without a lot of help from the members. We all need to work harder to ensure CASI’s survival. I do not have the answers, but I will do my part to see that the pastime we love flourishes. Meet the CASI ChaplainI have been appointed Chaplain for the C.A.S.I.

International Organization. I feel very honored and appreciate this new appointment. My wife Celia and I served on the mission field in Mexico for 32 years (1981-2013). While in Mexico The honor of chaplain for the largest motorcycle group (2000) was given to me. After returning to San Antonio, Texas, I ministered as a San Antonio Police Chaplain for two years. I am an ordained minister in good standing for and by Destiny

Church in San Antonio and by the International Ministerial Association. are recommendations and diagrams of three optional table setups. After years and years of doing judging one way, one might ask, is this legal? The answer is, yes. The table arrangement is not found in the CASI Rules, it is described in the Guidelines section of the Rules Book. In fact, the only reference to the judging method mentioned in the rules is found in Rule II.E.8b, Retasting A Chili, where we say a judge cannot taste the chili after he has passed it on to the next judge. And, we just won’t pick at that nit.

Make no mistake, the purpose of the judging methods is to provide a fair judging of the chilis. These schemes do just that, plus keep the judges distanced. So, until we can get back to “normal” operations, these variants will be acceptable as long as they continue to be fair. If you have experiences with the systems, I’m sure our ED, Keith Karaff would love to hear about them. This is a process in motion.

The COVID-19 virus pandemic has had a profound effect on all of us. It has affected our daily lives to varying degrees and has had a major effect on chili cookoffs, to the point where many of the scheduled cookoffs have had to be canceled.

CASI has always promoted safety precautions; we don’t want people getting sick at our events, and we have a very good reputation in that regard. But this pandemic has raised safety to another level. Some things, like local government regulations are beyond our control, but CASI leadership has been working hard to formulate recommended procedures to help us conduct safe events. Many of the tasks we perform during a cookoff are easily addressed with a face covering, sanitizer, and gloves. One area that required considerable retooling was our method of seating judges for judging the chili. During the Task Force discussions, it became quite apparent that our custom of seating judges could not be accomplished and maintain six foot distancing guidelines. Not unless you had a very long table and a very big area. And then, there would still be other issues. Consequently, a new approach was deemed necessary.

The idea that gained the most traction was to keep the cups stationary and rotate the judges. In the July Terlingua Trails (page 10)
