    Ingredients1 can refrigerated pizza dough 1 cup Ricotta cheese 2 cups (8 oz.) shredded low-moisture part-skim Mozzarella cheese 2 ounces turkey pepperoni, diced 2 plum tomatoes, thinly sliced 1 cup yellow pepper, sliced 1 tsp oregano 2 tbsp chopped parsley

    PreparationPreheat oven to 400 degrees Fahrenheit. Press pizza dough into 15 x 10-inch jelly roll pan.Bake for 12 minutes; remove from oven and spread Ricotta cheese over crust. Top with Mozzarella, pepperoni, tomatoes, pepper and oregano.Return to oven and bake for 6 minutes or until cheese is melted. Sprinkle with pars-ley, cut into squares and serve.

    Pumpkin Pancakes with Maple Yogurt Topping

    Servings: 4 (12 pancakes)Prep Time: 5 minutesCook Time: 10-15 minutes

    IngredientsPancakes1 cup all-purpose our 1 tablespoon sugar 2 teaspoons baking powder 1/2 teaspoon cinnamon 1 cup 1% low-fat milk 2 tablespoons melted butter 1 egg 1/2 cup canned pumpkin 1/2 cup low-fat vanilla yogurtTopping2 cups low-fat vanilla yogurt 1/4 cup maple syrup1/4 teaspoon cinnamon

    PreparationIn small mixing bowl, briskly combine vanilla yogurt, maple syrup and cinnamon until yo-gurt becomes looser texture. Reserve.Combine our, sugar, baking powder and cin-namon in a large mixing bowl. In a medium bowl, combine milk, butter, egg, pumpkin and yogurt, mixing well. Add wet ingredients to our mixture and stir until just moist. Do not overmix. Batter may be lumpy. For thin-ner batter, add more milk.Lightly coat a griddle or skillet with cooking spray and heat on medium. Using a quarter-cup measure, pour batter onto hot griddle. Cook until bubbles begin to burst, then ip pancakes and cook until golden. Serve warm with maple yogurt topping.

    Cheese Stuffed Burgers

    Servings: 4Prep Time: 10 minutesCook Time: 15 minutes

    Ingredients1 1/4 pounds extra-lean ground beef2 tablespoons ne breadcrumbs1/4 cup egg substitute1/4 teaspoon seasoned salt1/2 teaspoon chili powder4 slices part-skim Mozzarella cheese4 tablespoons low-fat plain yogurt4 tablespoons salsa4 thick slices red onion4 thick slices tomato4 pieces arugula or lettuce4 whole-grain hamburger buns, toasted

    PreparationMix beef, breadcrumbs, egg substitute, seasoned salt and chili powder in a me-dium bowl. Divide mixture evenly into 8 patties. Top four patties with a slice of cheese and cover with remaining 4 patties. Press edges together to seal in cheese. Grill burgers over medium-hot coals about 5 minutes each side.Mix yogurt and salsa in a small bowl. Place a burger on each bun and top with onion, tomato, arugula and salsa mixture.

    Cheeseburger Macaroni Casserole

    Servings: 4Prep Time: 20 minutesCook Time: 35 minutes

    IngredientsNon-stick cooking spray1 pound lean ground beef1/2 cup chopped onion

    1 cup whole-wheat elbow macaroni (or penne or rotini pasta)1 medium tomato, chopped1 (8-ounce) can tomato sauce1/2 teaspoon seasoned salt, optional1/4 teaspoon black pepper1 cup shredded Cheddar cheese

    PreparationPreheat oven to 350 F. Spray an 8x8-inch baking pan with nonstick cooking spray; set aside. In large skillet over medium heat, cook ground beef and onion until beef is brown and onion is soft; drain.Cook macaroni according to package directions; drain. Spoon macaroni into prepared pan. Spread beef mixture and chopped tomato over macaroni. Pour tomato sauce over beef. Sprinkle with seasoned salt, pepper and shredded cheese.     The last 30 days have brought a continuation of the very warm weather pattern that has gripped the region for several months. Temperatures across much of the Upper Midwest have averaged 3-5 degrees above normal. Rainfall amounts have been variable; some places have had average precipitation while others have had very little. During the last couple of weeks of August and the start of September, the weather pattern will once again favor above-average temperatures across the region. High pressure will reside over the Plains much of the time, keeping cooler air bottled up across Canada. Temperatures across the Dakotas, Minnesota and Iowa may be 2-4 degrees above aver-age over the 30-day period. Precipitation amounts are expected to be below normal.
