• What inspired you to write this book?I first visited China in 1997, a few months after the

Handover of Hong Kong, and went to study in Nanjing, where the treaty concluding the Opium War was agreed in 1842. Soon after I arrived, I watched the historical blockbuster that had been commissioned to coincide with the Handover: Xie Jin’s The Opium War – at the time, the most expensive film ever made in China. It’s a dark, brooding tale of duplicitous, lecherous foreign imperialists and righteous, patriotic Chinese resistance, which portrayed the war as the first, tragic humiliation of modern China – a humiliation expunged only by the Handover of Hong Kong. In classes at Nanjing University, my history professors insistently reminded me – a British citizen – of my country’s iniquitous past fighting a war for drugs in China. I visited the Museum of the Nanjing Treaty, whose exhibits and captions were rich in a sense of national grievance: “In 1840,” one display read, “Great Britain extended its aggressors’ claws and outrageously launched a war against the Chinese.” I was struck at the time by how open the wound of the Opium War seemed to be: how it continued to resonate in contemporary China, and still shaped China’s relationship with the West. (In Britain, by contrast, this war is largely forgotten today. In our busy imperialist 19th cen-tury, the Opium War is a sideshow, relative to exploits in India, say, or Africa.)

This was my first practical experience of China’s intense relationship with history – a relationship that has no real analogue in the West. In China, the past has an extraordinary contemporary

political relevance and potency. It made a deep impression on me, and I’d always wanted to return to this foundational episode in modern China: to find out whether the war really was the heroic struggle against foreign invaders that Chinese history books, films, museums and monuments described.

•There have been books about the Opium Wars - how do you see yours as different from the others?

Previous books have written wonderfully about the Opium Wars: amongst many volumes, I was inspired by Peter Ward Fay’s The Opium War and in Chinese by Mao Haijian’s brilliant Collapse of a Dynasty. As I was reading earlier works, I did spot a gap, though. Most Anglophone accounts relied on Western sources; most Chinese accounts (with the exception of Mao Hai-jian’s exceptional work) relied on Chinese sources. In my book,

I tried to draw on the wealth of both Anglophone and Chinese primary materials available (British parliamentary debates, press polemics, diplomatic dispatches, soldiers’ memoirs, Qing imperial correspondence, Chinese songs, diaries and so on), to evoke for English-speaking audiences the chaos, tragicomedy and mutual incomprehension of the war as it was fought on both sides.

I was also fascinated by the afterlives of the war: the way in which this single event – the Opium War – has come to define China’s imagination of itself and of the West, and vice versa. Existing works on the Opium War have tended to concentrate on the details of the conflict itself. In my book, I wanted to peel back the nationalist myths that grew up around the war in 20th-century China, then show how these retellings have shaped China and its attitude to the West.

•The notes, annotations and bibliography take up nearly sixty pages!! That’s a lot of

research. What fascinated you most about the research process? As my long-suffering husband will testify, I often – shall we say – lost my sense of humour in the research and writing process, as I contended with an intimidating mass of Chinese and Western primary and secondary sources. But it was of course a great privilege to have the opportunity to grapple with the original documentation for such a foundational moment in Chinese-Western relations – to get firsthand insights into the basic misunderstandings and mistakes that bedeviled contact between the two sides. One of my favourite discoveries was a letter that an overworked Qing emperor – constantly distracted by other domestic and frontier rebellions – sent out to one of his frontline officials some two and a half years into the war, asking questions such as ‘actually, where is England? And why are the English selling us opium?’ The primary sources for the Opium War showed that diplomacy and war are far messier than the tidy, clinical accounts of traditional military and political histories suggest – they’re full of opportunism, incompetence, duplicity and collaboration. And I loved the detective work involved in comparing British and Chinese accounts of the same events, and in spotting the sometimes outrageous, barefaced lies that were told in the process. It brought home very strongly what a chaotic, pragmatic place 19th century China was (and doubtless remains today): the further you were from Beijing and the emperor, the more deception you could get away with.

Masterchef Hari Nayak’s interest in food started at the young age of 10. Growing up in India, he was exposed to wide variety of spices and cooking techniques. As a kid he was enamoured by street food vendors. Watching them whip up simple fare excited him. He would go home and try to imitate them. Cooking and being in the kitchen, and entertaining made him happy.

From these humble beginnings to the international fame of a seasoned chef, Hari has continued to spread the joy of cooking. Hari graduated at the top of his class as an honor student from the Culinary Institute of America.

My Indian Kitchen is a concept where Indian cuisine is recreated by using simplistic techniques along with a delicious mix of local and global ingredients, Hari brings traditional Indian cuisine to simplifi ed levels suited for modern living and entertaining, while keeping the fl avours and authenticity intact.

As a professional chef and an adventurous home cook, he often tries out various fl avours and ingredients in his cooking. Hari loves to cook Indian food but also to incorporate his experience and knowledge about other cuisines into his dishes.
