“I moved to Asbury Park when I was fi ve years old to live with my mother,

who relocated here from Philadelphia. I have loved Asbury Park through the years because as a musician, it’s so central for traveling to gigs in the main metropolitan performance centers of NY, AC, Philly and CT.

Years ago when there were more lounges, clubs and hotels in town, Asbury Park was a ready environment to learn how to be an entertainer, and develop your ‘chops’ as a musician. I was very fortunate to live here during those years. Our musical history is a rich tapestry of gifted and memorable artists, and I’m part of that everlasting fabric.

My present work is still devoted to music of the past, and through the years I’ve been compared to James Brown. This is an honor, a mantle that I carry with respect and modesty. It makes me feel great to keep his infl uence alive. Although my career wasn’t designed to do so, it has evolved this way because of the demand

of many audiences who still desire to hear his music, and in some small way relive his musical and theatrical contribution to the world in person.

Despite my long career, I believe my best years are still ahead. Keeping in my heart that a big ‘break’ may still come along is a constant motivating force that enables me to always look forward to going on stage no matter where I perform. Everyday there is something new to learn in the business.

Entertaining is my life. There really isn’t time for anything else. In my spare time I work on maintaining my health, and preparing for the next show.

As far as what’s next in my career, I’ll probably return to Nashville to do a couple of sessions there, in hopes of getting a ‘hit.’ I’ll continue to maintain my focus and desire for this, and if it’s meant to be, it will happen.

The word ‘retire’ does not exist in my vocabulary.”

The Jewish holidays begin the season in early autumn with Rosh HaShanah, celebrating the culture’s new year. Customs include eating symbolic foods such as apples dipped in honey to evoke a ‘sweet new year.’ Enjoy Roni Goldstein’s (of Antique Emporium) mother’s Honey Cake recipe, p. 20, a perfect dessert for everyone’s new year and every holiday!

“People who wear red lipstick make 20% more than others,” shares Asbury Park

resident Caitlin Dabney, a self-proclaimed ‘liquid chemical engineer.’ She adds, “All creative and inspired individuals in our industry should consider holding themselves to this higher title.”

While tending bar since 2009 at Asbury Park restaurant/bars O’Toole’s, Dauphin Grille, Cibo e Vino, and now FISH, Asbury Park, Caitlin earned an A.A. in Business Administration at Brookdale Community College for a total expenditure of $72. Using available state and federal grant funding resources, this research wizard is perhaps her own best business model.

In January, she’s moving on to Rutgers for her

Bachelor’s degree with her financial plan mapped out to the same efficiency.

At home in the kitchen, Caitlin is just as tenacious, cataloguing her recipes for her first commercial enterprise — an Irish/Italian (comfort food) food truck. After that, she plans to settle down as restaura-teur and chef again — with a Christmas tree farm that will feature a rustic restaurant on the property. Be that as it may for future plans, for now, we say, “Caitlin, go to the head of the cla$$!”

Find Caitlin at FISH, Asbury Park for some holiday cheer, where putting ingredients that play well together “is my specialty,” she says, sparkling behind her signature smile, red hair bow, and of course, ruby red lips.

In the 1930s, Cafe Society, NYC, was the first racially integrated nightclub in the United States, priding itself on treating black and white customers equally. Performance legends Lena Horne, Sarah Vaughn and Big Joe Turner got their starts there. It was also where Billie Holiday first sang "Strange Fruit."

Today the term has grown to include Asbury Park coffeehouses that act as salons for our contemporary art and music cultures. These eclectic establishments that cater to this set, also invite locals and daytrippers in for their daily cup of joe.

Before he bought his Cookman Ave building to have more space to create his art in 2000, Patrick Schiavino’s last major exhibition was in 1998, when he

was invited by music icon Sting, and tennis great John McEnroe, to participate in a fundraising art show at the John McEnroe Gallery in Soho benefiting the Rain Forest Foundation. The show raised over $30,000 for the charity.

Since that artistic milestone, Patrick has enjoyed a very successful interim as one of the premier developers of downtown Asbury Park. Today his Cookman Av-enue building is widely known as art629 Gallery, a commercial art gallery and event center on the street level that regularly showcases both internationally and locally recognized artists. His workspace and personal residence are located in the lofts which are on the second and third floors of that building.

Schiavino is also the founder and owner of ‘Asbury Underground’ – a grassroots art and music crawl, blending these two mediums in 18 downtown venues and drawing as many as 2,000 attendees twice a year (January and October).

“During last season’s event, produced in affiliation with the Light of Day Foundation, the publisher and president of the Asbury Park Press, (our title sponsor), came to my gallery for some of the music and saw my work,” recounts Schiavino.

“He told me he was in the process of building out new corporate headquarters, and that he liked my work, and would call me. He did call, and now I am doing the project for them. It will take me the better part of this year to complete.”

“It’s a great opportunity for me, especially at this time of my life, when I am look-ing to do art full time again. The timing has been perfect, and I am very grate-ful that my work will be showcased in the entrance of their new headquarters in Neptune,” he concludes.

Roni Goldstein has done a lot of shopping through the years. So much so, that she decided to go into business to sell her personal collection of treasures that she

accumulated.

Thirteen years later, she’s still at it, and is a regular fi xture at Antique Emporium, Cookman Ave, where her mid-century modern 50’s, 60’s and 70’s furniture, art, books, jewelry, clothes, and memorabilia are traded daily for new home/offi ce use and for Film/TV productions in NJ & NYC.

Her most unique possession – a vintage 60’s sterling silver bracelet from Taxco, Mexico.

Her favorite thing about holiday time — being with family and her mother’s honey cake.

“My mother represented tradition,” shares Roni. “The most important thing to me on the holidays is being with my family, all together, and my mother’s honey cake. She’s no longer with us, but her honey cake recipe will live on forever.”

“Honey cake is the traditional holiday cake for Rosh HaShana and symbolizes ‘a sweet new year,’ exclaims Roni. “But we make it all year long for every holiday.”

Honey Cake8 oz honey 3/4 cup strong black coffee2 eggs 1 cup sugarlittle oil fresh juice and zest of 1 orangelittle whiskey (add last)

2 1/2 cups of fl our1 tsp baking soda1 tsp baking powder3/4 tsp ground cloves

In a large bowl, sift together dry ingredients. In a separate bowl, mix together wet ingredients. Combine. Pour into a glass loaf pan and bake at 350 degrees for 50 minutes. Enjoy!

When Asbury Park Zest asked Patricia Anne DeRosa Bender, ‘Pat,’ of Dino’s

on Main, Asbury Park, to do the traditional seven fi shes Italian Christmas Eve dinner for our Ask the Chef column, to our surprise, she replied, “Seven fi shes? My Christmas Eve table has 27 fi shes on it!” Our jaws dropped, and we said, Mama Mia! Never one to give out her entire recipe, Pat proudly, however, gave us the name of each and every one of her 27 dishes. We decided to list all of them here, and have also cor-dially asked her if we may come to her house on Christmas Eve to shoot her preparation and execution of this feast. Asbury Park Zest winter social media, look out...

At press time Pat hadn’t agreed to our request yet, but here’s her gorgeous Christmas Eve fi shes list. We hope that in the interim she will agree — so we can bring you fi sh, fi sh, and more fi sh LIVE all winter long!

Now how about that? And...if all goes well...on December 24th...27 will be our lucky number!

What does Pat cook on Christmas Day? Nothing...she relaxes with her family all day in her pajamas.

Asbury Park Zest: You stand to be on the red carpet all Awards Season with WHIPLASH, FOXCATCHER, LOVE IS STRANGE, MR. TURNER, STILL ALICE, MERCHANTS OF DOUBT and RED ARMY – perhaps your best stable of films ever in a single year. What draws you to a particular film?

Tom Bernard: I am always seeking to find a film that fits and reflects the Sony Classics brand, which is basically quality films from around the world, and this is defined by our films during the last 22 years – starting with HOWARD’S END and ending with BLUE JASMINE last year – and a million in between.

To me, it is a film that will connect to the culture of the moment. I can see who the audience will be for it, and see how to reach that audience, and know the different types of people who comprise that audience. I know what they read and what their likes are as well as what is timely and in the moment.

Asbury Park Zest: What are your top three favorite films of all time?

Tom Bernard: There is a film called WAKE IN FRIGHT, released in 1971. It is an Australian film directed by Ted Kotcheff. It’s basically about a guy who has had a really bad summer vacation. I love the story, and the way it is told, which is the key for all films. Ted, who has done numerous movies, tells his story in such a creepy way, it will haunt you forever. Never see it with a hangover.

Another one, LENINGRAD COWBOYS GO AMERICA, released in 1989, comes from a director from Finland, Aki Kaurismaki. It is a story about a band called Leningrad Cowboys, who travel from Finland to play at a wedding in Galveston, Texas. It’s a larger than life comedy, and Kaurismaki is a minimalist director with dry humor.

My third choice is NIGHTMARE ALLEY, a film noir from 1947. Directed by Edmund Goulding, it stars Tyrone Power, who is at the

top of his own world working as a sideshow mentalist. He has an illicit relationship with a female mentalist, and descends into an alcoholic haze, and becomes the geek in the show – biting heads off of chickens.

Asbury Park Zest: Do you watch TV, and if so, what do you particularly like?

Tom Bernard: I really don’t watch TV that much, with the exception of consistently watching BOARDWALK EMPIRE because I’m a big fan of Woodrow Wilson in that era in New Jersey. Historically the show is pretty much right on with all the little references of politics and the world at that time.

Asbury Park Zest: How has Asbury Park changed since you were first living on Cookman Ave after college?

Tom Bernard: I was downtown in 1970 after the riots and there was not much going on. When the media decided to write another sensational story saying that the riots will come out to suburbs, Asbury became a national headline. Every year after that, I would go to the boardwalk on the 4th of July, and there’d be fewer people until one year I was the only guy. It has hit bottom and has bounced back. When I first came here in the early 1960s, it was a cultural center with beatniks, a thriving gay community and coffeehouses. Now it’s coming back as the go-to cultural center in the region. This energy is what keeps it alive. Remember, Asbury Park in the 1930s was one of the most desired destinations in the world.

Asbury Park Zest: What’s your favorite thing about Asbury Park?

Tom Bernard: My favorite thing about Asbury Park is The Stone Pony and the beer garden. The Stone Pony is the last connection to the past, but it’s the future, too. It has risen from the ashes and is helping Asbury Park to rise again to become one of the top alternative cultural centers in New Jersey.

Watch out, US thespians! The Next Wave of British Actors could WIPE OUT you lazy, untrained, undisciplined, entitled, fl ash-bulb chasing Americans once and for all.

To start with, these young Brits are dedicated to the craft of acting. They value their training, work hard on their preparation, are constantly searching for authenticity throughout the fi lmmaking process, and don’t seem to take all the unnecessary ‘celebrity’ trappings to heart. Their top priority is doing good work, and letting the work speak for itself.

It’s true, to their advantage they come from a world where acting is taken very seriously and is considered an honored profession by the majority. In Great Britain there’s a long theatre tradition that goes back centuries: The Royal Shakespeare Company and RADA. There is recognition that if you want to be an actor, you have to pay your dues, which often involves long runs in the theatre and / or repertory work and intense, long training, that continues even after you’ve made it. It’s a world that values actors and sees acting as an art form.

Unlike the US, where the attitude is, ’Ummmm, Ok, I’m not really into this repertory thing and this class stuff, so could you just get me famous and I’ll worry about having the goods later? Casting directors are going to love me — my mother and father think I’m a revelation!’

There’s this rush to get out of class, get out of school, get a team to capitalize on their youth and beauty, get the big pay out, get on those red carpets, get the hits, get the dress, get on the covers and it’s destroying a true actor’s core and any remaining respect our country has for acting.

In the States, to the average Joe, being an actor and being a Kardasian are on equal footing. I’ve watched it up close over the last 14 years as reality stars and media platforms have blossomed — this entitled, loss of value and passion for training, very impatient new American actor brain develop is, ‘make me a famous actor even though I can’t deliver, they’ll edit me to look good, I promise, hire this one guy!’

American actors need to work on changing that general perception and stop playing into ‘celebrity’ and refocus back on acting, back on their craft, their soul, their truth, if they’re really interested in having longevity. Once an actor turns his or her back on their craft,

and starts playing with ‘celebrity,’ giving ‘it’ more time, trying to control their image, their persona — I’m sorry, but it’s all over.

This Awards Season, which is going to be loaded full of Brits, hopefully will be a wake up call. After seeing Tom Hardy in THE DROP and Rosamund Pike in GONE GIRL do perfect American accents, I thought, “Oh yikes…it’s on now… game over kittens, you spoiled lil American brats better watch your backs!”

British director Stephen Frears (DANGEROUS LIAISONS, THE GRIFTERS) recently said, “There is a kind of crisis in American acting right now. It is very noticeable.” He added, “If I were being tedious, I would say it’s the lack of theater training. When you work with someone like Annette Bening or Glenn Close, they are highly trained. It’s like working with Judi Dench. They are the real thing. But a lot of American cinema actors don’t have that background.”

I do think that in general the Brits are better actors as of late. I’m inspired by good acting — I don’t care if they were born here. Here are a few of my current favorite Next Wave of British Actors:

TOM HARDY Same intoxicat-ing ingredients that Paul Newman and Brando had – great beauty, but an even bigger skill set. Incredible range, versatility, vulnerability, and haunting depth dominate his roles. Tom Hardy isn’t

satisfied with you only admiring what he is on the surface. He changes the lustful alchemy of your gaze and turns your attention elsewhere and makes you think about something more. I have been completely going ballistic this year after seeing him in THE DROP and in LOCKE — which I think is one of the best male performances in the last 25 years. Right up there with Daniel Day Lewis in THERE WILL BE BLOOD. It’s that good. The versatile actor has been steadily working on both stage and

screen since his television debut in the mini-series THE BAND OF BROTHERS, then the films BLACK HAWK DOWN, STAR TREK: NEMESIS, LAYER CAKE, SUCKER PUNCH and WAR-RIOR. BRONSON won Hardy his major critical acclaim and notice in the industry as being a major new actor on the rise. He’s ‘the Man’ right now.

ROSAMUND PIKEAn English actress who first came to international atten-tion in 2002 when she played Bond girl, Miranda Frost, in DIE ANOTHER DAY. Since then her film roles have included Jane Bennet in PRIDE AND PREJUDICE

(2005), Helen in AN EDUCATION with Carey Mulligan (fabulous), and MADE IN DAGEN-HAM with Sally Hawkins (they shared the best scene in the film — fantastic). In the Canadian film BARNEY’S VERSION, she plays Miriam, wife to Paul Giamatti (she plays various ages - brilliant work). She’s now in the critically acclaimed GONE GIRL as Amy Dunne, based on the best-selling book. For this signature role and performance, Pike hired a grapholo-gist (hand writing expert) to help her come up with a writing style for her character, even if it meant never showing up on screen. She wanted to cover all the bases, go beyond, be loaded to the gills before shooting. When I heard this, I got chills. I LOVE this kind of com-mitment to acting — to building a character with that specific detail. Fantastic!

BENEDICT CUMBERBATCH Benedict Timothy Carlton Cumberbatch was born and raised in London. He’s come up in the industry since film and TV have had equal respect. Making his mark in both, and in theatre, he’s criss-crossed between the three mediums with ease and dignity. His television work includes the magnificent Tom Stoppard

adaptation of PARADE’S END in 2012. He has played Sherlock Holmes in the series SHERLOCK for which he won the Emmy for Best Actor. His first film appear-ances were in TO KING A KING (2003) and AMAZING GRACE (2006) and he’s since appeared in the films ATONEMENT, TINKER TAILOR SOLIDER SPY, STAR TREK INTO DARKNESS, WAR HORSE and 12 YEARS A SLAVE. Through voice and mo-tion capture - he played the characters ‘Smaug’ and ‘the Necromancer’ in THE HOBBIT film series. This Awards Season he shines in THE IMITATION GAME, a British-American historical thriller about British mathematician, logician, cryptanalyst and pioneering computer scientist Alan Turing, a key figure in cracking Nazi Germany’s Enigma code that helped the Allies win WWII, only later to be prosecuted for being a homosexual.

FELICITY JONESThis talented young English Actress won the Special Jury Prize (Dra-matic) at the Sundance Film Festival for her performance

as Anna in LIKE CRAZY — a career trajec-tory changing moment for her. During the low budget shoot of LIKE CRAZY, she had to do her own hair and makeup, and entirely improvised the dialogue. It was her breakthrough role, going on to Ralph Fiennes’ THE INVISIBLE WOMAN, and Julie Taymor’s THE TEMPEST co-starring Helen Mirren. This year we will see her star in THE THEORY OF EVERYTHING as Stephen Hawkins’ wife Jane. Her hard work is expected to be nominated and perhaps win the biggest awards this sea-son. She just played Felicia Hardy in THE AMAZING SPIDERMAN 2. She’s expected to reprise the role, and take on the super-villain persona of Black Cat in further installments of the franchise. And is shoot-ing Juan Antonia Bayona’s horror fantasy A MONSTER CALLS with Liam Neeson and Lewis MacDougall.

EDDIE REDMAYNEHe was born and raised in London, he is one of five children, and the only member of his family to follow a career in act-ing. He is best known for co-starring as Marius Pon-tmercy in the musical film version LES MISERABLES, and starred with Michelle Williams in MY WEEK WITH MARILYN. He has won an Olivier Award and a Tony Award for Best Supporting Actor in the stage production of RED. He also received the 2011 Critics Circle Theatre Award for Best Shakespearean Performance for his por-trayal of Richard II. This year he’s getting major Oscar buzz and acclaim from all major critics for playing Stephen Hawkins in THE THEORY OF EVERYTHING. I loved him in MY WEEK WITH MARILYN, but the performance that really struck me (in a film I disliked) was in LES MISERABLES. I felt he was the only one that was able to pull in that close up, that intimate concept that the director wanted. Eddie then flowed right into song with a realism that those close ups demanded. Despite the film being poorly conceived, he followed the direction and delivered an intimate and nuanced performance and he sang beautifully. He’s a brilliant young actor — with major chops.

As the year comes to a close we’ll see lots of other accomplished, brilliant, British actors on those final BEST OF THE YEAR lists: Timothy Spall, genius, in MR. TURNER; Kiera Knightley, always rock solid, in THE IMITATION GAME; Vanessa Redgrave, one of the greatest of all time, in FOXCATCHER; Ralph Fiennes, his career best, in THE GRAND BUDAPEST HOTEL; David Oyelowo and Carmen Ejogo, both breaking-out big time, in SELMA; Emily Blunt, as Meryl says “Delicious,” in INTO THE WOODS; Tim Roth in SELMA; Charles Dance in THE IMITATION GAME; Sienna Miller in AMERICAN SNIPER; and Marion Bailey and Dorothy Aktinson in MR. TURNER.

Award Winning Actor & Entrepreneur Joe Sernio stillkeeping busy both on the web and on screen...

Who would have thought that building websites in a TV show dressing room would lead to a full time production of business, acting and motivational speaking?

If one were to walk in award-winning Joe Sernio’s path, one would find that the life of an actor was not something that this professional had originally pursued. Beginning his career in the “world of computers,” Sernio graduated from the Chubb Institute of Technology receiving Computer Technical Support and Network Administrative degrees.

Pushing ahead, he worked in the field for Marc Echo, G-Unit Clothing and other NYC Pushing ahead, he worked in the field for Marc Echo, G-Unit Clothing and other NYC companies for about a year, until a tragic event entirely changed his life. He lost his beloved father. Faced with this loss, Sernio turned away from computers and took on the responsibility of becoming co-owner of his family’s Jersey City restaurant, 4 Fifty 5 Restaurant Bar & Lounge. There, however, the doors of destiny opened wide open for young Sernio, and suddenly more opportunity awaited him.

Close to NYC, Joe started acting classes and began studying with some of the top acting coaches in the city. He soon added acting to his resume and quickly became known for his work on AS THE WORLD TURNS, ALL MY CHILDREN, RESCUE ME, and a number of notable independent films. His success earned him the “2011 Robert Pastorelli Rising Star Award” from the Garden State Film Festival, which then brought him back to the Jersey Shore, where he bought a home. brought him back to the Jersey Shore, where he bought a home.

Having success marketing his own career, Sernio found himself also helping a number of fellow actors and friends in their Web Development & Online Marketing. “Every actor today needs a backup plan and a job with a flexible schedule,” shares Sernio.

Beginning the company in the basement of his home in Brielle, NJ, it grew to a point where he needed office space. Since Joe was spending all of his free time in Asbury Park, that was the natural choice to relocate and hang his official corporate shingle for his company, Shoreline Media Marketing. In the past 3 years, Shoreline Media Marketing has grown to add in-house talent for Web Programming and Social Media, and has clients in several other states including Arizona, Florida, LA, and Oregon. Its services now showcase state-of-the-art showcase state-of-the-art Website Design, Search Engine Optimization (SEO), Online Marketing and Social Media Marketing for all types of businesses.

Still very actively involved in acting, Sernio continues to appear on several television shows as well as in film. In his spare time he is involved with many charities, film festivals, and other venues that give him an opportunity to speak to the younger generation on the challenges and benefits of what he’s learned on his incredible journey.
