Meat Market

If there were any cardinal rules in our “Meats and Potatoes” business, the phrase “Steak goes best with Cabernet” would probably be one of them. This may have been true when our founder, Alan Stillman opened Smith & Wollensky in the 1970’s, when his cellar might be limited by what was available in the market back then. However, much has happened in the world of wine since then. So this begs the question: Is this Steak=Cab rule still the golden rule? In this section named “Meat Market,” our team has hand-picked a short but diverse list of wines outside of the Cabernet domain which are dedicated to:

SYRAH

An extremely food friendly grape variety, from the coast of California to the

vineyards of Italy, Syrah can flourish. Due to its bold red fruity & earthy flavors and long lasting finish, these wines will pair greatly with our great cuts

of beef.

Copain “Hawks Butte” 2013 Yorkville Highlands, California 95 Whole cluter fermentation addes a rustic elegance to the palate

“Stone Soup” 2013 Sierra Foothills 150 Way up in the northern reaches of the Sierra Foothills, Gideon Beinstock and his wife, Saron Rice, produce small batches of wines that are unlike anything else coming out of California. Using traditional techniques and strict organic methods both in the vineyard and the cellar, they make tiny amounts of wine

“Twilight Idol” 2013 Grenache 175 The Central Coast Group Project (CCGP) sources only the highest quality fruit from world-class Santa Barbara County vineyards that farm organically and/or sustainably to their particular specifications. in the cellar, Scott takes a natural approach, using modern means to enhance ancient techniques that gently build flavor, structure, texture and balance from the grapes themselves.

Reynvaan “In the Hills” 2014 Walla Walla Valley, Washington 180

A small family winery that produces Rhône-style red and white wines from two vineyard properties in the Walla Walla Valley. From the first vintage in 2007, the wines have been remarkable with a consistent complexity, depth of flavor, finish and distinctive terroir.

Luigi d’Alessandro Manzano “Miglaria” 2009 Tuscany 185

The d’Alessandro family first planted Syrah in the area back in 1988 as an experiment to see what the soil was capable of in the area. At the time the locals were only producing mostly blended wines. Through hard work and development, they paved the road to what would be the first D.O.C. for Syrah in all of Italy. They are to Tuscan Syrah what Nirvana is to Seattle grunge music.

Sine Qua Non “Male” 2013 Syrah California 700

Sine Qua Non “Dark Blossom” 2011Grenache California 750 Manfred Krankl has reached superstardom with his tiny production and even harder to find wines. Robert Parker rated this “unicorn” at 100 points but that doesn’t even begin to scratch the wow factor of this Syrah from the former sommelier.
