• 1 cup grated zucchini • 1 cup sugar • 1 ½ cups flour • 1 teaspoon baking soda • 1 teaspoon salt • 1 teaspoon cinnamon • 1 teaspoon baking powder • ½ cup chopped nuts (optional) • 2 egg whites • ½ cup frozen orange juice concentrate • 4 tablespoons cooking oil • 1 ½ teaspoons grated orange peel • 2 tablespoons powdered sugar 1. Drain grated zucchini or press with paper towels to remove excess moisture. 2. Preheat oven to 350°F. 3. Grease and flour a 13 X 9 inch baking pan. 4. In a medium mixing bowl, combine sugar, flour, baking soda, salt, cinnamon and baking powder. 5. Stir in nuts, if desired, and zucchini. 6. In a small bowl, beat egg whites lightly. Stir in orange juice concentrate and cooking oil. 7. Fold egg mixture into dry ingredients. 8. Fold in orange peel. 9. Spoon into prepared baking pan. Bake for 30 to 40 minutes or until lightly brown and set. 10. Cool and sprinkle with powdered sugar. Cut into 24 squares.
