Apple Pie Serves 2-4 Preparation Time - 1 hour Cook - 40-45 mins ________________________________________________________________ Ingredients 250g Bramley apples, peeled, cored and cut into 5mm pieces 35g golden caster sugar Pinch of ground cinnamon Level tbsp plain flour For the pastry: 110g butter, room temperature 25g golden caster sugar 1 egg 175g plain flour Method 1. Prepare the apples and place on a layer of kitchen paper. Place kitchen paper over the top and pat dry. Leave while you make the pastry. 2. For the pastry, beat the butter and 25g sugar in a large bowl until just mixed. 3. Separate the egg and add the yolk to the butter and sugar. Beat for a minute and then add the flour and mix with a wooden spoon until it begins to clump together. Gather it into a flat ball, wrap it in cling film and put it in the fridge. 4. Mix 35g of golden caster sugar with the cinnamon and tbsp of flour in a large bowl, add the apples and toss in the sugar mixture. 5. After the pastry has chilled cut it in half and use this to line the base of your apple pie dish or plate. Pile the apples in the centre, brush the rim with a little water then roll out the rest of the pastry and cover the apples. Press the edges together to seal. Trim the edge with a sharp knife, make 3 slashes in the top for the steam to escape. Brush the top with the egg white and sprinkle with caster sugar. 6. Bake at 170C for 40-45 mins until golden, leave it to cool for 5-10 mins then serve with vanilla ice cream.
