Rebecca Masson, Fluff Bake BarAfter attending Le Cordon Bleu in Paris, Rebecca went on to stints at Hotel le Bristol, db Bistro Moderne, Daniel, The Biltmore Room, and The Red Cat, where owner Jimmy Bradley invited Rebecca to share a few favorites in The Red Cat Cookbook. Rebecca came to Houston’s *17 Restaurant in 2006; then it was on to Ibiza and Catalan restaurants, an appearance on Top Chef Just Desserts, and now owner of the wildly popular Fluff Bake Bar.

Jose Vela, Mockingbird BistroMexico City native Jose Vela first began cooking as a young engineering student in Mexico, living in a small apartment and cooking for himself for the first time. After moving to Houston, he cut his culinary teeth with Houston’s original Riviera Grill—first as a dishwasher, but quickly moving up to a line cook. A few years later, he was part of the menu development team at Mockingbird Bistro, where he is now head chef.

Claire Smith, CanopyChef and restaurateur Claire Smith has been behind some of the most influential establishments in Houston’s vibrant food scene for the past two decades. From her first venture, the Daily Review Café, to first Shade restaurant and then Canopy, Ms. Smith’s unique perspective on contemporary comfort food has won her regular national press coverage and countless culinary awards.

Danny Trace, Brennan’s of HoustonDanny grew up just outside New Orleans and eventually landed in the culinary arts program at Johnson & Wales University. His ‘real’ education came in the kitchen of Commander’s Palace, where he was also the witty on-air cohort on “Off the Menu,” the restaurant’s hunting and cooking show that enjoyed a popular five-year run. In addition to his culinary creativity, Chef Danny is also known for his playful sense of humor, which has been known to make its way from the stovetop to the tabletop.

Kitty Bailey, Costa Brava BistroKitty Bailey is a native of Houston. Her career in restaurant management began over 25 years ago in Austin, before returning to Houston’s restaurant scene, including La Mer and Cafe Annie. This was followed by a lateral shift to catering management and a 13-year tenure at Abuso Catering Co., before coming full circle back to the restaurant business to launch Costa Brava Bistro in the fall of 2012.

Bryan Caswell, REEFChef Bryan Caswell travelled the world just so he could come home again. And when he did, he made a huge splash on Houston’s culinary scene. His award-winning seafood restaurant, REEF, earned him a 2009 Best New Chef Award from Food & Wine Magazine, and he is a two-time James Beard Award nominee for “Best Chef Southwest.” Chef Caswell’s background includes the Culinary Institute of America and apprenticeships with Charlie Palmer, Alfred Portale and Jean-Georges Vongerichten.

Charles Clark, Ibiza Food & Wine Bar Restaurateur Charles Clark is widely admired for his international culinary experience, impressive knowledge, colossal energy, stint on Food Network’s “Iron Chef America” and head-spinning list of accolades. Alongside business partner Grant Cooper, the duo has launched numerous top-of-the-chart restaurant ventures through Clark Cooper Concepts, including Ibiza Food & Wine Bar, Coppa Ristorante Italiano, and Brasserie 19.

Jean-Philippe Gaston, Cove / HavenJean-Philippe Gaston was born in Mexico and having spent his youth traveling the world, including Europe, Asia and South America, Philippe has been blessed with the experience and understanding of diverse cultures and their varied cuisine. He won “Up and Coming Chef of the Year” at the 2011 Houston Culinary Awards, and opened Cove Cold Bar with Chef Randy Evans of Haven in December 2012.

Paul Lewis, Osteria MazzantiniEnglish-born Chef Paul Lewis’ passion for his craft and his adventurous spirit have made him one of Houston’s most preeminent chefs. Lewis spent nine years with the Four Seasons Hotels and Resorts, handling hotel restaurant startups and special events from Dublin to Dallas, London and Hawaii. A stint at the award-winning Cullen’s Upscale American Grille in Clear Lake followed before Paul joined Osteria Mazzantini.

CHRISTIAN WITTE, DIRECTOR & WINEMAKER, SCHLOSS JOHANNISBERG

Christian Witte is the man in charge at Schloss Johannisberg in Germany’s Rheingau -- one of the world’s most prestigious and storied wine estates. In under a decade, he and his team have taken its wines to new heights of excellence, ushering in what many regard as a new golden age at this legendary property.

When Schloss Johannisberg’s ownership hired the young, dashing, but virtually unknown winemaker in 2004, they knew they had found that rare individual with combined expertise in winemaking and sales, as well as marketing and publicity. Today, accolades for Schloss Johannisberg’s classic, elegant Rieslings run along the lines of “a quantum leap in quality,” “Witte has put Schloss Johannisberg on the map as one of Germany’s best dry white wine producers,” “a resounding success” from the likes of Robert Parker, Gault Millau, International Wine Cellar, Wine Spectator and Wine & Spirits among others.

Witte, who considers his job “a once-in-a-lifetime opportunity,” grew up near Frankfurt. After half-heartedly studying business management, he switched degrees, enrolling at Germany’s most celebrated wine school at Geisenheim. From there he went on to apprentice at Chateau Lassègue, a St Emilion Grand Cru, and Staastsvereinigte Kloster Eberbach, Rheingau.

Witte and his team work with versatile Riesling to produce the full range of quality wines allowed under German wine law, from QbA to TBA. Each is a unique expression from the same estate and same vineyards. “Why make 10 different wines from one grape variety? Because we can!” says Witte.

Helping to run this enterprise is a young, focused team assembled by Witte. Like fine wine, it takes time, in this case about three years, for a group to knit and come together, says Witte, a firm believer in teamwork. Not only does winemaking technology change every 20 years, “even though now we are back to making wine the way our ancestors did,” but there are the long-term challenges of global warming and the immediate issues of a constantly changing marketplace.

Before World War I, Schloss Johannisberg wines were prized and priced the same as the First Growths of Bordeaux. Returning the estate to that place in the hearts of wine lovers around the world is what Witte is aiming for. Achievable? If anyone can do it, Witte is the man. But he is also humbled and deeply grateful for this dream job. “Every morning I drive along the Rhine, breathing in the beauty of the valley. Just to work in this countryside is a privilege.”

Artist: Kelly MoranNew York native Kelly Moran is a printmaker who lives and works in Houston. While completing an apprenticeship at the renowned Little Egypt Enterprises, Ms. Moran discovered her interest in print making. From 2003 to 2011 Ms. Moran worked as the associate director of Texas Collaborative, a fine art printmaking establishment founded by master Printer Dan Mitchell Allison. In her practice as an artist she combines the 17th century techniques of Rembrandt with 21st century digital computer technology; and creates hand pulled prints and mixed media pieces that challenge you to see the world with her unique vision. She has participated in solo and group exhibitions around the country. Her works hang in museums, as well as in corporate and private collections and presently she is teaching printmaking at the High School for Performing and Visual Arts. This event celebrates women working in or associated with the wine industry, wine enthusiasts, and, of course, another year of supporting the important efforts of the Houston Area Women’s Center (HAWC). The proceeds from this event will represent a significant portion of our annual donation to HAWC, which we project will be our largest to date.
