THE WINE PROGRAM AT CHARLESTON is all about the relationship between wine and food.

After a quarter century of watching and tasting CHEF'S VERY PERSONAL CUISINE in development I constantly work

to understand the balance & content of her dishes and how they relate to the wines in the cellar.

Among many, some considerations for cellar selection include :- what the growing season is like for farmers in this part of the country- the mood and the taste of our clientele- the individual people who make the wine and their culinary traditions

All of this information becomes this giant and RIDICULOUS MATRIX OF INFORMATION that gives us just enough detail and data to actually do something akin to art.

Making the right connections is not formulaic, but it is based on a lot of information. THESE CONNECTIONS ARE AT THE HEART

OF WHAT WE STRIVE TO CREATE.

All CHAMPAGNE TASTES SOMEHOW OF APPLES. The wines are superbly diverse and complex yet always accessible. Maybe this is THE wine of celebration as it has the most particular magic.

Aroma of fresh peel from a granny smith is so different from the sweet flesh of a honeycrisp, but somehow they bring the same universal happy memory.

In the wine, this accessible note from childhood is mixed with all the geological history and individual seasonal life story of the vines and their fruit that is written in an ENTIRELY UNIQUE PLACE for growing and making wine.

WHITE BURGUNDYCHAMPAGNECHABLISWHEN I WAS A KID this was the misnomer

of all the terrible white wines everyone’s parents were drinking when they weren’t drinking Canadian Club. THESE ARE NOT THOSE WINES.

These wines are extremely precise, structured and incredibly long and complex in the mouth.

The Grand Crus are very age worthy and can carry one through a meal.Chef always has seafood courses that beg for the intensity and relative lightness available here.

HER COOKING IS NOT SHY. Neither are these wines.

MULTI-V INTAGE The idea of VINTAGE wines from Champagne and NON-VINTAGE aka MULTI-VINTAGE

are very unlike almost all other wine regions. Champagne is VERY FAR NORTH in comparison to other places you may try to grow Chardonnay, Pinot Noir and Pinot Meunier

and as such, ripening is extremely variable (though a bit more reliable with climate change). Because of this inconsistency, the wines historically have been a BLEND OF DIFFERENT VINTAGES attempting to maintain something of a HOUSE STYLE.

situated between Puligny and Chassagne. Like the BONES are from one and the FLESH from another. These wines can be CREAMY & DENSE and require rich preparations of seafood and white meat.

CÔTE CHALONNAISE & MÂCONNAISThe wines from Côte Chalonnaise are from just south of the Côte d’Or and reflect

a similar build to their nearby brethren. The flavors just turn a bit darker, they absorb oak differently and reveal STURDY FRUIT & STRUCTURE. Mâconnais wines are FATTER & SUNNIER and built more like California Chardonnay

with a completely different minerality.

PULIGNY-MONTRACHETTENSION. These wines have tension and more tension. Volume and intensity

are focused through acidity to create a unique condition. While these wines are famous the world over for how “classy” they are it is THEIR EDGE that sets them apart. Vintages, as in all Burgundy especially, are super variable

and define the characteristics of the wines to an unusually large extent. 2013 sharp, 2014 happy, 2015 sunny and broad, 2016 dense and mineral.

MOST EXOTIC & SPICY AROMAS out there. Muscat does not have the same muscle as Gewürztraminer nor is it typically quite as sweet or big bodied. Pinot Gris from Alsace is actually the same grape as Pinot Grigio in Italy, but the style of the wine is enormously different.

These are more similar to Chardonnay in size and density — just don’t expect the toasty, oaky buttery flavors. The wines often have a SLIGHTLY SMOKEY APPLE PIE characteristic.

Burgundy is the home of PINOT NOIR and it is the most extreme place to grow it. The slope that runs about 31 miles is positioned with such a wide variety of exposure to very specific weather. The coolness is a big factor in bringing such intense, vivid flavors that are so specific because the grapes are on the EDGE OF SURVIVAL.

There is a reason we filled 10+ pages with wines from Burgundy — and it is worth explaining why.More than fruit, savory flavors and structure — there is also SOUL & MAGIC in the wine when everything works.

We know that when it’s in a mood, that magic lies dormant. Like people, as time goes along, you have different days. Something that strikes you as funny one day may not the next.

There are three big factors that contribute to quality and differentiation in Burgundy. These will be most helpful in making a choice. 1) PRODUCER: the individual farmers who grow grapes and produce wines2) SITE: vineyard location dictates not just some of the quality potential but a lot of the flavors3) VINTAGE: variations in weather have a major impact on the final product

Imagine the difference between green and blue. Let’s say Morey-Saint-Denis, a particular village in Burgundy, is green. For each producer, site and vintage, there are many variations of the color green within the village. Chambolle-Musigny — we’ll say that village is blue — many factors may dictate the shade but it’s always still blue.

A word on vintages...Burgundy is a challenging place to grow Pinot Noir to full ripeness even in the days of climate change.

What constitutes “a great year” has shifted a bit. One thing that is certain is that from the very best producers and the very best sites you have wines with the most personality, greatest character and most specific and particular expression.

There are vintages available from this cellar that were cooler and produced light, clean and vivid wines that drink beautifully in the right context — 2008, 2011, 2013.

There are vintages of plump sunny fruit and ebullience that take over the party as soon as they walk in like 2009 & 2015. The vintages prized by the classicists the most — 2010 & 2016 — are often wines that require the most patience and in the short

term the most intense dishes paired with them. 2014 is not as bombastic as 2015 or as tart as 2013.

There is no bottle of Beaujolais that we offer that I’m not very happy to drink. These wines are absolutely “important” enough for a very special meal.

If there is PORK OR BACON involved – and you don’t want to spend the money for good Northern Rhône, Gamay from Beaujolais can have a similar build with a little less tannin.

Serious Gamay from the best terroirs have the same granitic soil — are VIVID & INTENSE and will handle pork, guinea fowl and also all kinds of charcuterie.

Loire reds with venison and bison are excellent – the INTENSITY & HERBY EDGE works so well with the intense, very gamey, bloody meat with nearly no fat.

Thinking about the difference between Cabernet Sauvignon & Merlot in Bordeaux versus in Napa and the new world... The wines are enormously different because the VINES ARE ADAPTED to the region – each is becoming more itself.

Very few from the west coast of the U.S. are similar.Cabernet Sauvignon definitely is THE BIG MOVIE STAR on the west coast and gets all the attention and

Merlot is the quiet friend that goes along sometimes. In Bordeaux, Merlot is the most widely planted grape. Cabernet Sauvignon is only the dominant grape in a few specific sites.

The wines on this list are all broken into villages that have DISTINCT SOIL TYPES. It is the soil types and the drainage that dictate the plantings of the grapes.

And yes, there are three other grapes that are included in the blends although none of them run the show — except for two extreme examples that I can think of.

MARGAUXMargaux is the name of the village and also of the most famous Château in the appellation. These are wines very much dominated by Cabernet Sauvignon that is grown in sandy soil.

This particular terroir offers less dense wines with more gentle tannins than other left bank wines. Margaux is usually most loved for its floral aromatics and PURITY OF BLACK FRUIT.

These can be wines of great refinement and nuance.

I often think these are the richest wines in Bordeaux and they live a much longer time than you think they may — especially from the best producers.

NORTHERN RHÔNE VALLEYCÔTE RÔTIE Côte Rôtie (meaning the roasted slope) is a steep vineyard site with GREAT SUN EXPOSURE

on the west bank of the Rhône river just north of the Hermitage hill. These wines are not as dense, tannic or broad as Hermitage but often are much more SPICY, EXOTIC & JUICY. Some of the wines have an accent dose of the white grape Viognier

in the blend with the Syrah which will make the wines more exotic and generous. For about 20 years I believed strongly that the 1969 “La Mouline” from Guigal was the SINGLE MOST DELICIOUS

red wine I had ever tasted. I will always have great affection — the same sort of feeling about that wine as I do about my first real girlfriend — I will never lack affection for or appreciation of it.

The single vineyards are very rare and compelling and we are very lucky to have such a collection.

The Northern Rhône Valley offers a range of terroirs for SYRAH. Crozes-Hermitage and Saint Joseph show the grape at ITS MOST FORWARD (in France) and perhaps Cornas offers it at its most broad & rustic. Although the Vin Noir from Domaine du Tunnel in Cornas is SUPER QUALITY and in no way country Syrah.

HERMITAGE Hermitage is the ancient home of SYRAH IN FRANCE. The grape has been documented to grow there for more than 1100 years.

Hermitage vineyards are essentially sitting like a monk’s cap of granite atop a very round hill directly across the river from the town of Tain (where Valrhona chocolate was born and is produced).

The best vintages for Hermitage are always when that GRANITE CAP IS ROASTED thoroughly in the sun.

In the last 25 years I’ve seen a huge change in perception and awareness of Châteauneuf-du-Pape driven by Mr. Parker’s enthusiasm for the wines as well as — first and foremost — by how delicious they are.

These are red wines with broad drinking windows, good age ability, FANTASTIC FRUIT and terrific complexity. The diversity of terroirs and winemaking styles is pretty gigantic in this appellation.

Growers are allowed to source from a vast selection of 13 DIFFERENT GRAPES: Grenache, Mourvèdre, Syrah, Cinsault, Counoise, Picpoul (Noir/Blanc/Gris), Terret Noir, Bourboulenc, Clairette, Roussanne, Vaccarèse, Picardan and Muscardin.

They are all interesting but Grenache is, by far, the most widely planted & interesting — it brings joy and carries the personality of the wines. It is perfectly SITE AND WINEMAKER REFLECTIVE.

SPAINPROVENCE, THE SOUTHRIOJARioja as a wine growing region is a MICROCOSM OF CHANGE and development in wineries

and winemaking over the last 50 years. There are still producers who work in the “more traditional way” meaning greater oxidation and very long barrel aging, often in American oak. There are also modernists, smaller producers, individually vinifying very special small vineyard sites.

A reasonable rule of thumb in choosing and cellaring Rioja is that is has an EXCELLENT PARALLEL TO BORDEAUX. The best wines from the best years are extremely age able and the vintages largely follow Bordeaux vintage quality.

SPAIN ITALYPIEDMONTThis is a region that I have an undying affection for — both the wines and the food. Nebbiolo, the most important grape that you find in Barolo, Barbaresco and several other DOCGs in the cellar

has a personality and an ability to be uniquely and individually expressive in a way that is not unlike Pinot Noir from Burgundy — with one gigantic difference. These are wines of grace but also DENSITY, POWER, TANNIN and a dry fruit character.

After spending a lot of time on European wine education from when I was very young I had affection for those wines and I had begun to have reasonable command of them.

In 1990 I had dinner with a colleague at Jean-Louis, the very storied restaurant in the Watergate hotel. Jean-Louis Palladin came to the U.S. as a two star Michelin chef some years before and did not do things like other chefs in Washington.

A friend that I worked with gifted my colleague and I with a bottle of wine — the famous Cabernet Sauvignon bottling from Beaulieu Vineyards, Georges Latour. The vintage was 1969. I was stunned by the breadth, the intensity, the complexity and the SIMPLE HAPPINESS that the wine provided.

That will probably always be my AMERICAN EPIPHANY WINE that made me turn and look at the very best of our efforts here in the states with admiration.

The wines that follow are not solely from Napa but from a number of regions from the west coast that we think grow remarkable Cabernet Sauvignon.
