USDA grades for natural almonds are voluntary minimum standards. The California Almond industry can supply almonds to customersunique specifications, both in terms of size and grades based on theintended applications

US Fancy The highest grade- typically appropriate for products where the visual appeal of thealmond is critical to the application. Not widely used.US Extra No. 1 Similar to US Fancy ideal for food applications where the appearance of thealmond is very importantUS No. 1 (supreme) typically used for whole almond applications or for further processing suchas blanching and roasting.

US Select Sheller Run - Mid-quality grade good choice for applications where the almonds with minimal sorting/processing can be incorporated with other ingredients; for example, inside aconfectionery product and the higher level of chipped and scratched kernels is accepted. Alsoappropriate for further processing such as blanching, grinding, roasting, dicing, and slicing.US Standard Sheller Run - Good grade for further processing such as blanching, dicing, grinding, or paste, particularly where a higher level of split and broken kernels is not a concern.

    Granola Almond Bars

Instructions Grease the bottom and sides of a 9x13 (approx) pan Preheat oven to 320 degrees Combine all ingredients very well in a large bowl. Use of Kitchen aid

is very helpful. Mash the mixture into your greased pan.

This is a very important step. They need to be packed down tight otherwise they

will not hold together. Bake for about 18 minutes or until the edges barely start to brown. Cool for 10 minutes While the bars are still pliable, cut into bars. Yields 27 bars
