Aran Essig CEC, CCA Executive Chef University of Northern Colorado

Chef Aran Essig CEC, CCA has over 24 years’ experience in the foodservice industry. After an early start at age 14 in the kitchens of Southwest Michigan he moved to Colorado and received his degree in Culinary Arts from the Colorado Institute of Art in Denver. After working at various restaurants in Downtown Denver, Chef Essig accepted the position at UNC as

Executive Chef in 1998. He is an approved instructor for the National Restaurant Association Educational Foundation, ServSafe Instructor, Pro Start Mentor Chef, Certified Executive Chef (CEC), Certified Culinary Administrator (CCA), Master Trainer for AllerTrain programs, has served as Educational Fund President, Certification Chairman and is a past president for the American Culinary Federation, Colorado Chefs Association. Chef Essig has won numerous cooking competitions and awards and also coaches staff members to compete in ACF sanctioned competitions. He is an active member in the community and serves on many advisory teams and is a board member for the Greeley Creative District. At UNC Chef Essig coordinates creation of menus for three dining rooms as well as catering, is responsible for recipe development, training and staff development programs, safety and sanitation, and emergency response procedures for the department.

Chef Roger Brindisi Café Panache, located on 10th Street in downtown Greeley, is modeled after the Parisian eateries Roger frequented when he lived near Luxembourg City, just an afternoon’s train ride from the French capital. “It was never anything extraordinary,” he says. “Just carefully prepared, simple food.” And art, of

course; Café Panache likewise displays works from a number of local artists. Cooking has always been a passion of Roger’s, going back even before the days when, as a biologist specializing in human anatomy, he regularly performed dissections for postmortem studies. Though he has no formal training as a chef, he’s pretty good with knives—and has a rather large Italian family. “In Italy,” he explains. “Everyone is an exquisite cook.”

Our tasting room and cocktails have won acclaim in the 2014 "Best of Greeley" awards, and for AgriCulture we're offering cocktails made from our local vodka, whisky, and rum that are especially selected to pair well with the local food menu. All of the spent grain used to produce Syntax's spirits is given to local farmers who feed it to cattle, pigs, and poultry as a food supplement high in vitamins, protein, and fiber

High Hops Brewing—proudly serving award winning beers! Amanda and Pat Weakland began their business journey in 1991 with Plant-A-Scape, a small, seasonal greenhouse in Windsor, Colorado. Both have a history in growing plants: Pat represents the third generation of growers in his family, and Amanda grew up helping on her family's farm and has nurtured her love for gardening since then. The small Plant-A-Scape business is now The Windsor Gardener, home of High Hops Brewery.

Natalie Leffler was born and raised in Eaton and graduated with a degree in Culinary Arts from Johnson & Wales in Denver and worked in various kitchens in Northern Colorado. After culinary school, she moved back to Greeley to attend UNC and received a Bachelor’s degree in Human Services with minors in School Health Education and Nutrition in 2012.

She came to the Weld Food Bank from Weld County School District 6 where she was the Sous Chef at the Central Production Kitchen. Natalie has a background in agriculture and cooking seasonally from scratch. And is passionate about teaching and advocating “from seed-to-plate” methodology from cultivation to preparation, and providing access to nutritionally dense, whole foods to our community.

Chef Chad Young is a lifelong Greeley native with a passion for food and craft beer. His career started early when he was 14, flipping burgers at a swimming pool concession stand that

his parents ran and hasn't stopped since. Chef Chad worked in various kitchens in Greeley and Northern Colorado until he decided cooking was his passion and destiny! In 1997 he graduated from The Colorado Institute of Art's Culinary Arts program and proceeded to complete an American Culinary Federation apprenticeship. Chef Chad has been running the kitchen at The Tavern at St Michael's since it opened in June of 2010 and in November of 2012, Chef Chad and his Wife Wendi took over ownership. The Tavern has become a family affair as both Chef Chad and Wendi's sons, Trey 17 and Wilson 15, help out in the kitchen where they can and Wendi's sister Toni has taken a management roll in the front of the house. Chef Chad is working to constantly evolve The Tavern utilizing local ingredients to perfect his Colorado Comfort Cuisine and build relationships with Colorado's expanding Craft Brewing Community, distillery's and wineries! P.S. Chad also donated all the chicken for the dinner!

Eagle Tree Mushrooms is a new local grower, harvesting our first crop in September of 2013. We strive to produce a mushroom that is grown utilizing safe agricultural practices, ensuring a quality food choice for our customers. We currently grow white button, brown crimini and portobella mushrooms.

Petrocco Farms is a family owned and operated produce business growing fresh vegetables since 1916. Located in Brighton, Colorado, Petrocco Farms is just 30 miles north of Denver covering around 2,500 of Colorado's rich soil. Our products include Leaf Lettuce, Cabbage, Leafy Greens, Green Beans, dry Onions, Peppers, Eggplant, and Squash. We grow and ship our product to various distributors located throughout the United States. We use state-of-the-art water purification

systems to cool our products. We are committed to our vigorous safety measures used in our warehouses and in our fields. When in season, our vegetables can be found in local farmers markets, major supermarket chains, food services, and distribution warehouses located in Colorado and the Eastern United States. David Petrocco Sr. took ownership of the business after his father's death in 1985 and operates along with the help of his three children Dave Jr., Joe, and Julie. Dave Sr. and wife Susan have 10 grandchildren making the farm a fifth generation company in our fine state of CO!

Matthew Poling has worked in restaurants since the age of 15, starting as a bus boy and washing dishes. Somehow that didn’t scare him away, and he became a chef anyway…

After finishing Culinary School in upstate NY, he moved to Boston to work under Chef James Burke at the Tuscan Grill on Moody Street where he learned the cuisine of Northern Italy, and became Sous Chef at the ripe age of 21. From there Matthew ventured across the country, working on Nantucket Island, moving to Arizona, and finally landing in Colorado where he now calls home with wife Marianna and beautiful daughter Scarlett.

Mathew has worked in about 15 different restaurants, ranging from fine dining to pizza places. He was introduced to institutional food service when he began working here at UNC. He was at UNC for about 3 years when he decided to take a position at Weld County School District 6, where he currently serves as Executive Chef.

Dave Malthaner began his cooking career at the young age of 15 in the historic Blenner Hassett Hotel in Parkerberg, West Virginia. He then cooked for 10 years at the Napa River Grill in Kentucky. Since then he cooked a a variety of places, eventually landing in Denver and then Greeley.

We are so fortunate that fate brought Dave to the Greeley Chop House!

Carlo Pellegrini is from the picturesque town of Bisceglie, which lies directly on the southern Adriactic coast. He was brought up in a culinary family with his mother being a cook recognized by everyone in their little coastal town. He also has the experience of managing his aunt’s very popular restaurant,

located right on the seaport. Carlo’s uncle is a “panettiere” (breadmaker) and another uncle produces olive oil. Home-made specialties are second nature to him – where the emphasis is using only fresh ingredients and preparing them in a way that enhances their flavors.

Strohauer Farms is a third generation family farm located in Northern Colorado. The farm is comprised of approximately 3,000 acres of corn, wheat and various vegetables including Strohauer Farm’s famous specialty gourmet potatoes. Many dedicated employees, who have been working for our family for a number of years, make our operation as successful as it is today. Our family is dedicated to being good stewards of the land and is committed to producing the highest quality of produce possible for our customers. Leffler Family Farms is family owned and operated by the third generation to farm in Eaton, Colorado. They have been providing produce to local farmer’s markets since 1996, and are featured at select local grocers and restaurants. LFF also offers a small community supported agriculture (CSA) program,Local Motion CSA, which has been serving members in Northern Colorado for the past three years. They are strong advocates of the Colorado Farm To School program, and work extensively with our local school districts. The Lefflers grow over 100 different varieties of vegetables. Their specialty is sweet corn which is planted successively for season-long availability and always fresh picked! Delivery is available on large orders. Some of their other most popular veggies include: heirloom tomatoes, salad greens, edamame, kale, green beans, heirloom dry beans, rainbow beets, rainbow carrots and much more!

In1882 Carl Fagerberg arrived on the eastern slope of Colorado from his home near Stockholm, Sweden. Homesteading in the shadow of the Rocky Mountains, Carl became a prominent member of the Weld County farming community. His son, grandson and now great-grandson have continued this commitment to agriculture. Since 1948, the name Fagerberg has been associated with the production of quality onions. It is our belief at Fagerberg Produce that the needs of the farmer and consumer can be served successfully at the same time by adhering to the following basic principles. One, a desire to provide the consumer with the highest quality, most diversely packaged product technology currently affords within our industry. And two, a desire to provide our growers with the best production support and prices possible to help them continue to be successful as independent family farmers.
