Welcome to Academy at Opium Chinatown. Here in Academy,
we are pleased to offer a selection of Asian inspired cocktail
creations, drawing influence from Chinese and south-east Asian
culture.
Contained within these pages, you’ll find a selection of signature
cocktails, house made spirits & liqueurs, spirits, beers and
wines. Not to mention our list of hand-picked small-batch teas
and guilt-free mocktails.
Should you be feeling a little more adventurous, or perhaps you
would rather explore Asian cooking flavours, be sure to peruse
our Academy signature menu, where you can select a cocktail to
explore & discover new flavours.
Remember, our skilled and friendly staff are here to help and
guide you through your experience in Academy. We are always
happy to answer questions, give recommendations or help
create a bespoke cocktail just for you.
Masterclasses
Academy is perfect for cocktail masterclasses.
We offer classes for groups of up to 20 all week. Our bartenders
will take you through the history of cocktails from the 1800‘s
through to our modern twists.
Masterclasses include a cocktail on arrival, tutored construction
of cocktails & a generous portion of Dim Sum.
Parties
If you are looking for a venue for a birthday, engagement party,
work event or even a wedding reception then we can help.
Our Academy bar is available for private hire, accomodating
parties of up to 50.

Handpicked & handmade from a tiny 25kg annual crop.

The Lalani & Co Collection is a seasonally changing collection
of craft, small batch teas. They identify & sometime age only
the most extraordinary tea batches from artisan gardens.
Here in Academy, we carefully measure & infuse your teas at the
perfectly selected temperature.
WHITE
--Zairai Kyoto White 2018-- Nakai-San Gardens, Kyoto, batch #1 3kg
An exceptional first edition of a white Japanese tea made from Zairai cultivar.
Delicate with hints of apples & young apricots finishing on a floral note.
GREEN
--Okumidori Gyokuro 2018-- Nakai-San Gardens, Kyushu, batch #8 30kg
Gyokuro is the very highest appellation of Japanese tea. From Okumidori
varietal tea plant, giving a particularity smooth texture. The vegetal are sweet
& the shade grown extended to 27days makes the umami notes never ending.
OOLONG

Sophisticated layers of stone fruit, walnut, woods & sweet tobacco
notes, this single varietal tea is grown on the Jade Mountain, aged in
jars made of clay & keeps developing with time.

Academy’s selection of house made spirits & liqueurs
Our Bar Chef are delighted to offer a selection of house made concoction carefully prepared.
We advise our serve as a simple shot if you are interested to discover our final product but also into cocktails if you feel more adventurous.
--Coffee liqueur-- Shot 25ml -£4.50- Cocktail -£13.50-
Our coffee liqueur is based with a Brazilian rum, Avua Amburana
cachaça slowly aged in a native Brazilian wood which brings sweet
spices aromas. We carefully infuse the rum with a medium roasted
coffee from Santos, Brazil, for 3 hours. We add honey to the mix to
sweeten the liqueur.
We would advise our liqueur into our twist of an Espresso Martini.
--Oolong Cognac-- Shot 25ml -£6.50- Cocktail -£14.50-
Our Oolong Cognac is based on Frapin 1270 from Grande Champagne in
Cognac infused with a single batch Oolong tea from Lalani & Co. Our
infusion are based on 7gr of tea pre washed for 70cl of Cognac. We
slightly over infused the tea for 45min in order to extract a touch of
tannins but also as much flavour as possible from the tea.
We would advise our spirit into our twist of a Brooklyn.

Our apple & ginger sorbet is freshly made with crab apple & fresh
ginger slightly sweetened with acacia honey.

Our genmaicha bourbon is based on Woodford Reserve
whiskey infused with a genmaicha tea. We source our
genmaicha from Lalani & Co where it is blended with roasted
rice & Kabusecha green tea.
We would advise our spirit into our twist of an Old Fashioned.

Our Lemon balm liqueur is based on Tanqueray export
strength gin, fresh lemon balm leaves, sugar & malic acid. We
slowly infuse our lemon balm for 6 hours before pasteurizing
our mix.
We would advise our liqueur into our twist of a Gin Fizz.

An unusual gin from the Black Forest in Germany using 47 different
botanicals. There is a lot going on between the citrus, woody &

This particular bottling was made with rye grown on a single
estate on the shores of Lake Bartezek. Light & grassy with
hints of oat porridge & green apple. We would advise a twist
of an Old Fashioned with a splash of apple juice.

Naom Quie coffee
Dangerous Don is made using 100% Espadin agave which has been
distilled twice and then steeped in Naom Quie coffee beans before
being distilled once more. An intriguing combination of smoky
Mezcal notes and rich coffee notes. We would advise you to have it
neat or with just a bit of ice.

This Brazilian Cachaça from the Avuá range has been made
using sugarcane grown by the Distiller's family and matured in
Amburana wood - Fresh, juicy fruit notes blend well with the
