ABOUT STYLE

Your Summer Capsule Wardrobe Did the recent spell of gorgeous weatherset you off to look out last year’s summerclothing to check what would still fit andwhat was still in? With the Irish climateoffering us four seasons in one day it canbe difficult putting together clothes thatare summery in appearance and yet handlethis variety.

I would like to suggest a working summercapsule wardrobe as this simplifies the matterof choosing what to wear everyday. What isa capsule wardrobe and how do you createone?

A capsule is basically a collection of betweenseven and ten items that you can mix andmatch yielding several outfits. This caninclude for the summer, light weight trousers– perhaps in linen or cotton, a skirt or dressand shorts or cropped trousers. Look carefullyat the existing clothes you have, you maywell find that you are already choosing itemswith one colour being prevalent, perhapswhite or cream or a paler shade of blue orbrown. A good capsule would include eitherknitwear or a light coat or jacket that workswith the colour-way on the bottom half. Bymixing in a selection of tee-shirts or tops itshould now be possible to create severaloutfit combinations from this basic collection.

This everyday capsule can be adapted to suityour lifestyle or holiday requirements. If youare heading off to certain sunshine then yourholiday capsule could include: swimwear witha kaftan or a beach cover-up, shorts andcropped trousers or light weight skirts and aneasy to wear dress for evening or sightseeing.It is really simple to totally change the look ofan outfit by wearing different footwear andaccessories. The kaftan that can be slipped onover your swimwear can look completelydifferent if teamed with strappy sandals orwedges and pretty jewellery. With baggageallowances being cut to the minimum it canbe important to choose wisely when packingyour bags.

This basic guide can be used for all the familymembers and for any holiday destination. Inorder to get the greater number of outfits outof your capsule look carefully at the coloursyou are choosing, if you can match two orthree tops to each bottom then the optionsincrease. Add in flat comfortable sandals orshoes along with a dressier pair with a fewwell-chosen accessories and the optionsincrease again.

If this sounds too complicated, don’t worry,help is at hand. Creating capsule wardrobesand yielding outfits out of existing clothing ismy speciality. My aim is to create outfits thatwork for you whatever the season, whateveryour budget.

The South Dublin County Enterprise Board

These are challenging times for business –many small companies are hard pressed forcash and tough decisions are being madeon a daily basis by owner managers allover the county. South Dublin CountyEnterprise Board has been helping peoplestart up and grow business in the countysince 1993 - over 15 years experience ofdiverse economic conditions impacting onsmall enterprise. Unfortunately the past year has not been easy. Theemployment gains of 2007 in businesses supportedby South Dublin County Enterprise Board werenegated by job losses in 2008, bringing totalemployment among Enterprise Board clients backto almost exactly the December 2006 levels. Commenting on the losses, Chief Executive LomanO’Byrne said “This has been a very tough year forour clients and their staff. The adjustments they aremaking are very painful indeed but, in the circum-stances, the losses could clearly have been muchworse and we look on these figures as showing astrong element of resilience”.

Declining demand and increasing costs are thestrongest challenges facing owner/managers overthe coming year, with short-term business credit,increased price sensitivity among customers anddifficulty in getting paid also causing significantconcern.

The Board has signalled a shift in emphasis for thecoming years, with the creation of employmentreturning to centre stage. “We have not forgottenthe lessons of the past eight years” says O’Byrneand we still understand that sustainable jobs arisefrom innovative competitive businesses.

What makes for a good localrestaurant? Well for me, goodservice, a friendly atmosphereand authentic food at a fairprice are the main ingredients.

So, with this in mind I dined as Casanova

– the Italian restaurant on the Main Street

in Rathfarnham. As I told the very affable

owner, Aldo Fusciardi, I had passed his

door on numerous occasions, but had

never dropped in. I didn’t know why for

sure. Perhaps because when I passed it

during the day, the restaurant was closed

and the blinds drawn, so I had never ‘seen

it in action’ so to speak.

Aldo, who has been in Ireland for 20 years,

hails from a village called Casalattico, south

of Rome. Seeking a better life he came to

Dublin, where he met his future wife

Josephine, who hails the same village!

Aldo was interested in opening an

authentic Italian restaurant, 0ffering Irish

customers real Italian food. He opened

Casanova in Rathfarnham 5 years ago

and has never looked back.The restaurant is simply furnished, with lowlighting, fresh flowers and candles on everytable and decent background music! Ithink it is important if there is backgroundmusic, for it to ‘fit’ the restaurant and withthe strains of ‘Vaya con Dios’ (as identifiedby my companion Louise) playing in thebackground, the scene was certainly set. The menu was extensive. One menu listed

the house ‘specials’. The other, a greatselection of Italian fare - including pastas,fresh fish, lamb and pork dishes, notforgetting a great selection of homemadethin-based pizzas – another passion ofAldo’s.

Mario, Casanova’s chef from Pescara, only

uses Italian produce – all sourced and

imported via Aldo’s brother back in Italy.

I chose the Antipasto Misto (€10.50) –

more as an ‘authenticity’ test than

anything else. Louise went for the simple,

but elegant, Rugola e Speack (€8.90). A

result! Home-made bread was produced

along with my plate of Italian delights –

beautiful Parma Ham, Grilled Aubergine,

Salami, Provolone, Mortadella, and

prosciutto. Nothing tinned or vacuum

packed on this plate.

Louise’s dish was a delight in its simplicity –

something overlooked by many

restaurants. Fresh ruscco (rocket to you!)

wafer thin slices of speack (a wonderful

cured Italian ham), with sprinkles of

parmesan shavings and a lemon wedge.

I went vegetarian for the main – opting for

the Rigatoni Verdi (€13.50) – one of the

house specials. Louise chose the

Gamberoni Alla Casanova (€23.50).

A carafe of the cold, crisp house white

(€12.50) and a bottle of sparkling San

Bendetto water, our tipples of choice.

The Rigatoni Verdi was wonderful. Lightly

dressed al dente pasta, balanced with sun-

dried tomato, rocket, black olives, zucchini

and some melted mozzarella –

perfection.

A dozen king prawns made their

appearance for the Gamberoni Alla

Casnova. Juicy, infused in garlic, chilli

and white wine – accompanied by a side

salad (we had the option of pasta, salad

or chips).

After a civilised gap, we were offered the

dessert menu. A solid selection whcih

included profiteroles, apple pie and

tiramisu, amongst others. Sated and

sticking to my Lenten promises, I declined.

That didn’t stop Louise from demolishing

the Gelato Casanova (€6.80) – a selection

of homemade ice-cream in three flavours,

complete with fresh mint, cream, and a

chocolate flake – pure indulgence! She did

decline the sambucco which is normally

poured over the top. I felt it incumbent

upon me to have one along with my

expresso.

After a most enjoyable evening, we said

farewell to Aldo and his wonderful staff –

Davide, Karina & Cuba – promising to

return before too long. Not an empty

promise. Unlike U2, we found what we

were looking for - Real Italian food, real

Italian hospitality – a really enjoyable meal.

Dillon Solicitors On The Move!

After sixteen years operating from theMain Street in Dundrum, Dillon Solicitorshave moved to impressive new offices inthe Nutgrove Office Park in Rathfarnham(behind where Homebase used to be).

Commenting on the move, Brendan Dillon, whoset up the firm 16 years ago, said “While it is sad tobe leaving Dundrum, the move was necessary dueto the expansion of the firm over the last few yearsand the need to offer our clients the best possibleservice. We were anxious to stay close to our clientbase and to hold onto the same contact numbers.We have much more space in Rathfarnham, ourmeeting facilities are much better and we have freeparking for our clients.”

Since acquiring the firm of Anne Colley & Co.(Anne Colley is still a Consultant with the firm) thefirm has almost doubled in size. According toBrendan this has enabled the firm to offer a moreefficient service as well as broadening the range ofservices offered to its substantial client base.“While we continue to offer the traditional servicesin the area of property sales and purchases,refinances, wills, probate and litigation, we havesubstantially increased our client base in three keyareas – Family Law, Employment Law and BusinessLaw”.

May is a frantic month in the garden. Youmay not need a list of what to do in thegarden in May, because it is staring you in theface every time you walk through yourgarden. But here are some reminders of whatyou can do. Don’t panic. The season is justbeginning.

Everyone=Treat yourself to at least one great new plant before the best selection is gone

=Water regularly, if it doesn’t rain=Water newly planted plants even if rain is predicted

Flowers=Deadhead spring blooming bulbs, but let the foliage grow until it yellows,

=Deadhead and begin replacing pansies and primroses as the blossoms fade.

=Give everything a good feeding, to get things growing. Divide crowded perennials and makesure tall perennials are staked.

Vegetables=Keep the perennial vegetables and berries weeded

=Seed cool season vegetables and root crops after mid-month (beets, beans, cabbage, carrots,lettuce, onions, potatoes, radishes,turnips...)

Flowers=Finish seeding annuals=Deadhead and begin replacing pansies and primroses as the blossoms fade

=Summer bulbs can be planted=Plant new roses=Prune one-time blooming roses as they faded and feed.

ENCORE! School of Performing Arts take to the Stage

It is that time of year again where the manytalented and enthusiastic young performersfrom Encore! School of Performing Arts taketo the stage of The Mill Theatre, Dundrum(2nd – 9th May). The performers range from4 to 18 and will delight audiences with theirplays, songs and dances with familiar itemssuch as “How do you solve a Problem likeMaria” from “The Sound of Music” and thatfamiliar dance number from the eighties“Fame”.

The very young will be taking audiences on avisit to Nursery Rhyme Land and the moreseasoned young students entertaining everyonewith their newly acquired “Southern AmericanAccents “ not unlike that heard on “WaltonMountain” and dancing to the familiar tune of“Grandma’s Feather Bed”. These plays and songsare written by Emer O’Neill and CaoimheBrennan, the principals and founders of theschool, which makes the annual show unique asit maximises the talents of eaËch student givingevery single child in every group a “speakingpart”. This in turn allows every child to developtheir talents in a non competitive environment.

Encore! was established in 1998 in Knocklyonand since then has grown to service fourcentres. The two principals of the Encore! Schoolare Caoimhe Brennan and Emer O’Neill bothSecondary School and Primary School teachersrespectively. They have developed a formula ofwork and play: the “Rainbow System” TMwhich allows the pupils of the school exploretheir creative talents at class while also takingpart in a full scale theatrical production everyyear.

The emphasis on participation of everyindividual in each class has resulted in a learning

environment which promotes the growth of selfconfidence and allows the students develop theirtalents.

In all it has been another fantastic year at thislong established school with over 600performers from the classes in the four centres:Knocklyon, Taney Parish Centre, SandyfordCommunity Centre and The Mill Theatre itself.The year was sprinkled with fun events such as“Finger Puppet Poetry” “Dress Up Week”,“Encore’s Got Talent”, Poetry writing, ComedyNight: “The Sound of Music” meets “Fame”

The annual shows in The Mill Theatre 2nd May –9th May gives every participant in the Encore!classes a very positive experience. The schoolmotto is well represented in every aspect of theshow “Everyone is a star at Encore!”

Fennel and tomatoes are gently served withwine, herbs and garlic and then topped withpan-fried sea bass. A tasty combination of classicMediterranean ingredients.

Ingredients:For the sea bass:4x170g/6oz fillets of sea bass, skin on 1 tbsp olive oilsalt and freshly ground black pepper

For the slow cooked fennel and tomatoes:4 fennel bulbs, tough outside leaves removed175ml/6fl oz extra virgin olive oil400g can of chopped tomatoes 1 head of garlic, split into cloves and peeled150ml/5fl oz boiling water120ml/4fl oz dry white wine 2 tbsp chopped fresh oregano leaves24 black olives, stoned and halved2 tbsp balsamic vinegar12 basil leaves

Method1. Preheat the oven to 170C/325F/Gas 3.2. Slash the skin of the sea bass fillets and place in the fridge.3. Cut the fennel lengthways into quarters. Heat the oliveoil in a heavy-based ovenproof pan and add the fennel.Cook the fennel over a medium heat, turning frequently,for 20 minutes or until starting to brown. 4. Add the tomatoes, garlic, boiling water, wine, oreganoand some black pepper. Bring to the boil, cover and cookin the oven for 1½ hours. 5. Remove the pan from the oven and add the olives,balsamic vinegar and basil leaves. Place on a low heat,season and simmer gently.6. Take the sea bass from the fridge, rub the surface withthe olive oil and season with salt and pepper. Heat a largefrying pan. Add the sea bass fillets, skin side down andcook for 3-4 minutes until the skin is crisp. Turn the filletsover and cook for a further minute or until the fish is justcooked through.7. Place a spoonful of the fennel and tomatoes into thecentre of each plate and top each with a piece of sea bass.

As I sit here typing on my keyboard, Irealise that I am as comfortable holding acomputer mouse as I am holding a pen.That wasn't always the case, though. I didnot reach that level of comfort aroundcomputers until many years after beingexposed to them a little at work and thenlater in the classroom. Computers havecome a long way since I took my firstclass and, I guess, so have I.

In most places of business today, acomputer is standard. If you are looking foremployment, there is a good chance acomputer will be a basic tool you will haveto use. Being computer literate will help youget a job and it will help you advance inyour career. Computer literacy does notmean you need to know how to use everysingle piece of software you may encounter.You just need to know some basics — howto save and open a file, how to use a wordprocessing programme, and how to sendand receive email — for starters.

Basic computer courses are offered by mostcontinuing education programmes. They areusually reasonably priced and convenientlyscheduled. These courses can usually befound in your local community school andlibrary on evenings and weekends. For thoseof you who may want a piece of paper tocertify that you are computer literate, thereis the ECDL.

The European Computer Driving Licence(ECDL) is the world’s most successful IT skillscertification programme. Almost threemillion people are participating in theprogramme today in over 60 countriesworld-wide. It is a certificate that verifiescompetence in computer use, making theholder readily mobile within Ireland andinternationally. Employers and job seekers all
