Kerala Government is planing to setup food processing centers at district level. In an effort to shape up the state as a hub for food processing, the Government of Kerala has taken up a project under its ‘Emerging Kerala 2012’ initiative. The initiative gives top priority to setting up of food processing centres at the district level in a bid to overcome issues such as lack of transportation and cold storage facilities that are hampering the sector. The emphasis will be on encouraging better processing facilities for local produce like coconut.“This is the first-of-its-kind project in the state as food processing appears to be emerging as a hot sector across districts and that the Emerging Kerala meet which was held recently for the investors in September 2012 at Kochi,” said T P Thomaskutty, Executive Director, Kerala State Industrial Development Corporation.

Thomaskutty said that this is one of the projects being initiated under KSIDC and that most of the projects proposed are under small and medium enterprises. He explained that currently there is only

one food processing centre, which is operational for the last five-six years in Kadancherry, near Mallapuram district in the state, but now places like Adoor in Pattanamthitta, and Kochi, and Kozhikode were being targeted for upcoming projects.

The first mega food park in India-Srini Mega Food Park at Chittoor in Andhra Pradesh was inaugurated recently by Sharad Pawar, Minister of Agriculture and Food Processing Industries. According to the Ministry of Food Processing Industries (MoFPI), from seed to shelf, the park

facilitates end-to-end food processing with beneficial forward and backward linkages. On par with software parks, this new-age facility is equipped with Central Processing Centre and Primary Processing Centres. It aims at becoming a pioneering infrastructure enabler and facilitator for the food processing industry.

As a model mega food park and the first-of-its-kind in India, Srini provides state-of-the-art food processing infrastructure designed as per global standards and

develops a veritable market place with common facilities on the lines of a software park or a textile park. Nestled in a 147-acre space, the food park provides world-class facilities for pulping, IQF, bottling, modular cold storage, warehousing, advanced testing lab, among others. It enables

basic and supply chain infrastructure, cluster farming and is ably backed by field collection centres, self-help groups and individual farmers.

The food park will empower the food industry with state-of-the-art infrastructure and quality raw material sourcing. With the highest growth in the fruits and vegetables sector (20 per cent) and with Chittoor being the largest fruits and vegetables cluster in India, this park becomes an ideal destination for food processing units.

The Act also requires food chains and restaurants to serve mineral water and labelled food products. The proposals in the Act apply to all types of food businesses, right from a roadside food stall to a five-star hotel. “This extension is just a temporary relief, and the horror of unpractical and harsh provisions shall be back to haunt from February next year. Indian Basmati Rice ReportIndian Basmati Rice Report

The Fragrance of IndiaTrivia: Basmati is rich in carbohydrates, low in fact and cholesterol, proving easy to digest. With high levels of amino acid lysine, other essential nutrients including protein, niacin, thiamin, iron, magnesium, phosphorus, potassium, riboflavin, vitamins, zinc and fibre, it ranks high in nutritional value.Basmati – The scented pearlBasmati Rice stands apart from other aromatic long grain rice varities due to its delicious taste, and superior aroma, literally making it the ‘Queen of Rice’. Upon cooking, not only do the rice grains increase to twice their size, but they do not stick and remain free-flowing. Owing to its unique characteristics, the ‘Scented Pearl’ leands a touch of class that can transform even the most ordinary meal into a gourmet’s delight.

Basmati rice productionIndia produces more than 70 per cent of the world’s Basmati rice, and the rest is produced by Pakistan. India’s Basmati rice production for the year 2008-09 was around 3 million tonnes; for 2009-10 it was estimated at 15,56,411 MT. In 2010-11, it is expected to touch 7.2 million tonnes, including both traditional and evolved varieties. Karnal, in Haryana, is the ‘rice bowl of Basmati’ while it grows in other northern states of the country as well, as shown in the below: The rich soil with the right climate in the northern part of the countryproduces these aromatic pearls which are nourished by the melting snows of the Himalayas. Basmati, derived from Sanskrit, means the fragrance from within, and is interpreted as the ‘fragrance of the earth’, referring to the natural aroma of this unique wonder grain. Basmati comprises two categories-traditional and evolved, each habving a large number of varieties. Traditional rice including Basmati-217, Basmati-370, Basmati-386, Ranbir Basmati, Taraori Basmati (HBC-19 or Karnal Local), and Type-3 (Dehraduni Basmati) are amongst the varieties being exported. The evolved varieties include Pusa Basmati-1 IET-10364, pusaBasmati-6 IET-18005, Pusa Basmati-1121 IET-18004, Improved Pusa Basmati-1 IET-18990, Punjab Basmati-1,Haryana Basmati-1 IET-10367, Kasturi IET-8580, and Mahi Sugandha IET-12601, and Vallabh Basmati-22 IET-19492 are grown in the country. The present trendsSaudi Arabia is the major importer of Indian Basmati rice followed by UAE and Kuwait. USA and UK are the other major buyers of Basmati rice from India. It is also exported to other west Asian and European nations. Iran is considered to be the biggest buyer of Pusa-1121, a rice variety which commands almost 50 per cent of Basmati exports from India.

India is expected to soon begin exporting Basmati rice to China. Export of Basmati rice saw a revival of demand from West Asian countries, especially Iran, which along with Iraq became hot export destinations for India’s Basmati rice. Iranians imported large quantities of parboiled Pusa Basmati -1121, as their own farming was in doldrums. Because of the sudden rise in demand from Iran, India’s Basmati rice exports are expected to grow moderately, in the range of 10 per cent, during the current financial year April 2010-March 2011.In value terms, exports of Basmati rice had crossed Rs.12,000 crore in 2009-10 as against Rs.9,476 crore in 2008-09. In terms of volume, the exports increased to 2.2 million tonnes last fiscal from 1.6 million tonnes during 2008-09, a rise of more than 25 per cent.According to an official data release, between April-July 2010, India’s Basmati rice exports crossed 5.5. lakh

The contracted amount for exports till August was more than 1.15 million tonnes showing a brisk increase in exports by the end of the year, which is likely to be 15-20 per cent more than the last year. One of the reasons for this is attributed to crop damage due to floods in Pakistan last year.

Given the rapid growth in the number of process plant equipment in mixing applications, scale-up is a challenge faced by various industries. The key significant issue faced by engineers is the procedure of transferring the results of R&D obtained on laboratory scale to the pilot plant and finally to the production scale. In most cases, design fails when quantity increases.A pilot plant is specifically designed to test unique process and production requirements in an accurate, small-scale simulation. A pilot plant will also reveal bottlenecks and other unforeseen process problems, allowing corrections to be made while still in a low cost environment. It serves as a blueprint for making a decision on whether or not to proceed with a full-scale production. IKA is one of the few manufacturers who offer complete mixing solutions from lab to production.Mayonnaise-Developing a recipe for success: Mayonnaise is an oil-in-water emulsion, which is a mixture of two liquids that normally can’t be combined and can contain up to 80% oil. Emulsifying is done by slowly adding one ingredient to another while simultaneously mixing rapidly. This disperses and suspends tiny droplets of one liquid through another.Production of Mayonnaise using LABOR-PILOT (Inline Homogenizer)In order to increase the production and efficiency of the mayonnaise, IKA has developed the Labor-Pilot which is a compact and a multipurpose inline homogenizer. It is uniquely designed with the advanced technology and is available with six interchangeable modules. The Labor-Pilot ensures a reliable scale-up by offering the possibility to work with the same method from formulation development to mass production. It is equipped with module MK(colloid mill). It is used for wet or fine milling of hard and granular raw materials or for the production of finest as well as for improving of quality of finished dispersions. The MK module consists of two cones with differently directed flow channels on their surfaces. The cones can be shifted against each other to a minimum distance, thus varying distance and flow capacity and by adjusting the milling gap, the achievable particle size can also be controlled.

Initially, the oil phase containing vegetable oil and egg yolk(emulsifier) and the aqueous phase containing sugar, salt and vinegar is prepared separately. The pre-mixing of both phases is done using a T50 basic Ultra-Turrax disperser for 3 - 5 minutes. This mixture is then added into the vessel attached to the Labor-Pilot and is run for 10 minutes in a recirculation mode (no. of passes). The process can also be run in continuous mode with a single pass instead of a recirculation mode. The pre-mixing of both phases using T50 basic Ultra-Turrax disperser ensures better dispersion of solids in the aqueous phase and which later is homogenized in the Labor-Pilot resulting in better oil droplet size distribution ensuring a finer emulsion.IKA advanced emulsifying technology guarantees a tight particle size distribution and long-time stability of the produced emulsions.

Reliable scale-up of technologies from lab to production

Rice & Grains finds a brand new home at SIAL Middle EastThis move to a larger venue will allow the Rice & Grainsexhibition to grow in-line with increased demand from international companies wishing to exhibit. And by co-locating it alongside a world-renowned international food and beverage event, exhibitors will also benefit from the attendance of over 10,000 professional food buyers visiting SIAL Middle East.

Launched in 2011, Rice & Grains hosted exhibitors from60 countries and attracted over 3,000 key buyers of riceand rice-related products.

Access the largest market in the worldRice & Grains is a unique platform for buyers and sellers to enter the largest market for rice and grains in the world. The value of rice trade in the UAE alone is US$ 2 billion annually. Importing rice from 32 countries and exporting it to over 80 countries, makes the UAE the largest re-exporter of rice on the globe and offers a unique opportunity to penetrate markets not only in the Middle East, but further afield to Africa and Asia.

For the GCC region, international trade is a necessary tool in meeting domestic demand. Cereals are the largestfood category in the region, accounting for 43.7% of totalconsumption in 2011, however with production so waterintensive, the region depends entirely on imports for all of its maize, rice and barley demand.
