French toast By Isak Engen Mortensen

Personally I like to make this dish because it is very easy to make, and tastes quite good as well.

Ingredients:

2 eggs

1 dl milk

1 spoonful of sugar

A small dash of cinnamon

Olive oil for frying

2 pieces of bread or a small piece if a baguette

1: mix together eggs, milk, sugar and cinnamon in a bowl.

2: heat up your frying pan and have a small dash of oil in it, so the bread does not stick to the pan.

3: Dip your bread into the egg mix and let it sit until it is completely soaked.

4: put the pieces of bread on the frying pan. Let them cook for about one minute on each side.

5: Enjoy. You could put some sugar or jam on the French toast for an even sweeter taste.

My favourite food mac and cheeseBy Jo-Ari!

My favourite food is mac and cheese (with bacon), so I decided to make a recipe to how to make it.

Ingredients:

Macaroni

Cheese

Bacon

1. First you have to cook water in a boil for about 10-15 minutes.

3

Page 5: A Norwegian Cookbook

2. Add the macaroni and leave it for about 15-20 minutes (NOTE; you have to taste if it is soft before you pour the water).

3. Roast some pieces of bacon and put some cheese on the top.4. Put the macaroni in a plate and add some cheese for it to melt.5. In the end add the bacon and enjoy the meal.

My favorite recipe – chicken taco ♥One of my favorite foods is chicken taco, because I love both taco and chicken separately – and they are just amazing together too. This dish is perfect on Friday and Saturday nights with your friends and family, and it’s almost impossible not to like it!

♥ Ingredients: Chicken (chicken breast or minced chicken)Taco spice mix1 Glass waterGarlics1 Can corn1 Tomato1 PaprikaCheeseTaco sauceTortillas

♥ How to make it:First roast the chicken and mix it with the taco spice mix and the water. While it’s roasting, cut the garlic, tomato and paprika and put them in separate bowls. Grate the cheese and put the taco sauce in a bowl too. When the chicken is done, heat the tortillas in the microwave for 1 minute. When they are heated you just pick which of the other ingredients you want in your tortilla!

Fried chicken with brown rice Jonas Fredriksen

This is not my favorite dish! I usually eat this every day as a pre-workout “supplement”. The chicken is rich in proteins and the rice consists of carbohydrates which gives you lots of energy so that you have enough energy to complete a workout after school.

Ingredients:

210g of chicken 70-90g of boiled brown rice You can add spices, sauces etc… if you want to

Method:

1. Start off by frying the chicken with a little bit of olive oil. The simplest way to fry it is to have it in a pan in the oven (not a frying pan!). Fry it for 20 minutes on 200 degrees Celsius.

7

Page 9: A Norwegian Cookbook

2. Boil 3 deciliters of water and add the rice. (The boiled rice is about two times the weight of the rice which is not boiled). Boil it for 12 minutes (or until all the water evaporates).

3. You have now made a good tasting, healthy meal which is very good before working out and for gaining muscle. Enjoy!

Baccalà

The baccalà is an Italian version of the famous Portuguese fish dish baccalao. The biggest difference between the two is that the bacala is not a tomato-based dish like the Portuguese alternative, but is rather based upon the individual strong flavours fulfilling each other in one amazing dish. It is unique because of its use of saffron, but all the ingredients really get their time to shine on the plate. This dish is truly a culinary adventure and a personal favourite of mine.

Ingredients:

400 grams of salted clippfish. (Needs to be watered out as the package suggests.)2 onions1 big fennel3 grilled bell peppers. (You may use canned bell peppers)2 tomatoes1 lemonParsley1/5-1 clove of garlicA handful of capersOlive oilSaffron

9

Page 11: A Norwegian Cookbook

The procedure:

Set the oven to 200 degrees. Cut fish, onions, fennel, bell peppers and tomatoes into sizes of own choosing. Sprinkle the saffron into a small coffee cup so that it barely covers the bottom. Crush the saffron with a fitting tool and pour a couple of teaspoons of boiling water into the cup. Mix the vegetables and the fish in a big bowl and pour the saffron and about 3-4 dl of olive oil on them. Season with salt and pepper. The need of salt may vary, since the fish already contains a lot of salt. You may also squeeze a little bit of the lemon in here to add a bit of acidity. Spread the mix over one (maybe two) roasting pans and roast them in the oven for 35-45 minutes. In the meantime, you make the gremolata. To make this, you simply mince the parsley and garlic, grate the peel of the lemon and mix it all together in a mortar. Add salt. Plate the dish and put the gremolata, capers and some more olive oil on top.

Spaghetti with bacon Anne Lea Somby

My favorite dish is spaghetti with bacon, and it`s actually the only dish I can cook. I really like this dish because it`s so simple to make. You need bacon, spaghetti and cheese.

200 g of bacon

300 g of spaghetti

And cheese you use as topping.

First you need a frying pan, and then cut the bacon into small pieces. You don`t need butter in the pan because bacon isn`t going to burn stuck in the pan. You have to put spaghetti to boil, wait until the water boils. Then add the spaghetti. When it is cooked, take out all the water, then add the bacon. Then you add just cheese. After you`re done, you have an easy and great dish that you can enjoy.

An omelette Aksel Holbek Sørbye

You need:

2 eggs

Some milk

Some butter

Whatever you want on top (like corn, sausages, cheese, mushroom, and spices like oregano, salt chives or pepper

First you crack two eggs in a bow. Add a little milk, the amount isn’t extremely important. Then whisk it until the mixture is yellow. Then melt some butter in a frying pan. When the butter has melted, poor your eggs into the pan. Put whatever you want on top and wait. When the omelette has hardened can fold it in half or cut it up before you serve it.

My favorite drink

By Hanna Malene Pettersen

SMOOTHIE

Ingredients:1. Banana500 gram blueberries 100 gram strawberries3 dl juice8 spoons with yoghurt

When you are going to make a good homemade smoothie, you just have to mix all the ingredients together in a mix master. You can’t get it easier. You can also use the berries you like best, and mix it with juice, banana and youghurt.

I like this drink so much because it is so fresh and healthy. My mum usually makes this drink every morning, and it makes my days a little bit better. The drink is also giving me a lot of energy for my daily work out.

Smoothie recipe Mari Mikkelsen

You can use the fruit and berries you like. My favorite smoothie contains of strawberries, blueberries and bananas. You can also choose how much you want to use of each ingredient all after what you like best.

Strawberries Banana Blueberries Yogurt (plain or vanilla) Vanilla ice cream

It’s not very difficult to make. Everybody can make it if you have a mix master. You just put everything in the mixer and wait until there are no more pieces left. Make sure you have taken the fruit up from the freezer a few minutes before you make the smoothie so then it’s not so hard/frozen. You can decorate the glass with some berries or fruit if you want to.

APPLE CAKE Dana Meknas

This is an old recipe that my mother used to make very often when I was younger. The almonds give the cake that extra special taste, but they can be replaced with any other preferred ingredient. I think this specific recipe is delicious; so therefore I wanted to share it with you.

2 cups diced apples

1 cup sugar

1 cup flour

¾ tsp. baking soda

½ tsp. salt

1-1/2 tsp. cinnamon

170 g finely chopped almonds

Directions:

Preheat oven to 375. Grease a 9" or 10" round pan with oil or butter.

Sprinkle diced apples with the sugar, set aside.

In a small bowl, mix the flour, baking soda, salt, and cinnamon.

Chocolate cake Risten WestIngredients:

6, 5 dl sugar

3-4 tbsp cocoa

1 tbsp baking soda

7, 5 dl cultured milk

150 g butter

1 l flour

30 min. 200⁰C

1. Preheat the oven to 200⁰C.

2. Combine the sugar, cocoa and baking soda in a bowl.

3. Melt the butter and pour it into the mixture along with the cultured milk.

4. Add the flour gradually into the mixture and stir until you get a nice and lump-free dough.

5. Spread the dough into a cake pan and place it in the oven on the middle shelf for about 30 minutes.

Remove the cake from the pan and place it upon a rack.

(Tips: To check whether the cake is thoroughly done, you can stick a match into it. If the match is completely dry when you pull it out, the cake is done. If it’s a bit sticky, the cake may need a few more minutes.)

While the cake is in the oven, you can make use of the time and make the icing.

1. Let the butter soften a bit, and mix it with the cocoa, icing sugar and vanilla in a small bowl.

2. Heat some coffee (you may use coffee from earlier of the day, just heat it in the microwave oven) and let it cool down until it’s tepid. Add it to the mixture.

3. Allow the cake to cool down completely before putting on the icing.

Feel free to decorate the cake with some desiccated coconut.

Enjoy!

DELICIOUS CINNAMON BUNS Anne Maia Sørensen

This family recipe is an absolute favorite of mine. I’ve been eating cinnamon buns ever since I was a little girl. My mom eat them as a little girl, my grandmother eat them as a little girl, my great grandmother eat them as a little girl and how far back this tradition goes I don’t know. Here is the recipe:

Ingredients:

12 dl milk

100 g yeast

200 g sugar

250 g butter

Ca. 2 kilo all-purpose flour

A pinch of salt

Filling:

Cinnamon

Sugar

Softened margarine

Raisins (optional)

Instructions:

1. In a large mixing bowl, combine flour, sugar, yeast and salt; mix well. 2. Heat the butter in a small saucepan until melted and remove from heat. Add milk and

let cool until lukewarm. 3. Stir the mixture of milk and butter into the bowl with dry ingredients. Blend together.4. Cover the dough with a damp cloth and let rest for 45 min or until double size.5. In another bowl, mix together cinnamon, sugar and margarine. The trick here is to

blend the ingredients together with a mix master. This way the mixture gets more airy. 6. Divide the dough into four pieces and roll each part into a 12x9 inch rectangle.7. Spread dough with cinnamon/sugar/butter mixture and add raisins if desired.8. Roll up dough and cut into ca. 12 equal size pieces. Place onto a baking sheet and let

rise. 9. Bake for 10-15 minutes, or until golden brown at 220 degrees Celsius.
