• A 40 year veteran of the Hospitality Industry• Cruise line, hotel, restaurant and private aviation
businesses• Entry level to President• Hotel and Restaurant Administration Degree• Certified Hotel Administrator• Certified Executive Chef• Former member Research Chefs Association
After Retirement……
• Returned into the kitchen• Learned about food service in assisted living and senior communities • Started research on dining habits of seniors
Frequent Comments
• It doesn’t taste the way I remember• I don’t like how it tastes• It’s not the way I fixed it at home• It’s too salty / not salty enough• When are you going to learn how to cook?
No two of us taste the same

How we taste
• When we are young we taste sweet and bitter using the front and back of the tongue
• Salt and sour taste develop as we grow• Average person has 10,0000 taste buds• The older we get the fewer taste buds we
have and we don’t taste evenly
We use all our senses

Factors that effect taste
• Age• Medications Heart Kidney Respiratory• Over the counter• Diabetes• Illness• Dentures• Height/weight• Alcohol• Smoking• Dry mouth
• Ethnic background• Region of the country• Altitude• Dehydration• Allergies• Blood pressure/ cholesterol • Weather• Stress• Lack of sleep• Temperature of food• Everyday living

The taste test
Try for yourself…….
Touch the pretzel on the middle of the tongue.Can you taste the salt?
Touch the pretzel on the tip of your tongue. Can you taste the salt now?
Any Difference?
Now place the pretzel on the side of your tongue near the tip.
Can you taste the salt?
Let the pretzel dissolve in your mouth, notice the change in texture and taste.
What happened?
Most will have tasted it on the side near the tip.
Some may not have tasted it at all, others may find that it’s too salty.

food!! • Where does our food come from??• You know your doctor and your dentist, why
not know your farmer. • buy fresh, buy local.• Visit your farmers markets and community
gardens
