When faced witha couple of ripe bananasand leftover cornbread,we decided to turn theminto a version of one themost delectabledesserts, Bananas Fos-ter.
The original Ba-nanas Foster, intendedto drum up breakfastbusiness at Brennan’sRestaurant in theFrench Quarter of NewOrleans, was developedin the 1950s by ChefPaul Blange and namedafter one of his best cus-tomers. It’s basicallysliced bananas cookedwith butter, sugar andrum and served overvanilla ice cream. AtBrennan’s, the dish isprepared tableside. Be-
fore the bananas goonto the ice cream, rumis poured into the sauceand ignited. We wereable to transform theoriginal ingredients intoan astonishingly goodbread pudding fortified
with cornbread andserved with ice creamand a drizzle of caramelsauce.
Long beforecomfort food becamethe rage, frugal Colonialcooks were setting asidestale bread and milkabout to go sour tomake puddings. Earlierpuddings, which boreabsolutely no resem-blance to our bananapudding, were madefrom floury pastesstuffed into cloth bagsand cooked for hours inbig pots of boiling water.
Caramel Banana Bread Pudding
Corn muffins or leftovercornbread make thisdecadent dessert—remi-niscent of Bananas Fos-ter—a snap. Be sure tocrumble the muffins intolarge chunks. Servewarm with vanilla icecream or caramelsauce.
1 (8-ounce)package corn muffin mix
3 bananas,sliced
3/4 cup darkbrown sugar, divided
3 cups 2% fatmilk
4 eggs 1/2 t ground gin-
ger 1/2 t ground cin-
namon 1/4 cup caramel
sauce or topping
1. Prepare cornmuffins according topackage instructions.Let cool. Crumble 4muffins into largechunks.
2. Preheat ovento 325F. Lightly butter a2-quart or 8-inch-squareceramic baking dish or 6small (8–ounce)ramekins.
3. Arrange ba-nana slices in the dish.Top with 1/4 cup of thebrown sugar and chunksof corn muffins. Com-bine milk, eggs, remain-ing brown sugar, gingerand cinnamon; whiskwell. Pour over muffins.Bake 50 minutes. Driz-zle with caramel sauce.Serve warm. Serves 6.

Over the past12 years, CaraFusinato, Squaw Val-ley, CA, has adoptedfive dogs. Several of these wereher assistance dogswhen she sufferedfrom seizures. Thelast of these, Shay,retired after Cara hada vagal nerve stimula-tor implanted and theseizures were broughtunder control.
Shay contin-ues to be her constantcompanion and, shesays, he undoubtedlystill considers he isworking. “He keeps aneye on me always.”
For many
years her dogs hadbeen Australian Shep-herds, so when shedecided to adopt an-other, she opted for aShetland Sheepdog(Sheltie) she saw onPetfinder.
The dog hadbeen roaming thestreets of Bakersfield,CA, and he ended upat Pet MatchmakerRescue.
Melody, as sheis now called, fit intothe Fusinatos’ house-hold immediately.“She lives in greatharmony with ourthree cats,” Carasays, “and she imme-diately took responsi-
bility of herding Shayto meals, potty andplay. Shaythought it wascharming,and so didwe.”
Melody wassmart, soCara begantesting herwith simplecommands,but gotnowhere.Then on anouting, shelearned why.
A familynearby was speakingSpanish, and “Melodyran up to them with
tail wagging and thensat in front of them,
which they thoughtwas absolutelyadorable,” Cara says.
“Now I knew.
We went home and Ipulled out my rusty
high school Spanish.Before I could finishsaying "Sientate" (sit),she had her behind
planted.”So the dog
started her training inEnglish (her secondlanguage). Shebreezed through sev-eral classes and isnow registered withthe AKC Purebred Al-ternative Listing (forpurebred dogs withoutpapers) as LadyMelody Rose, CGC(Canine Good Citi-zen).
“I shouldn’t besurprised,” Cara says,“because each of myfour other dogs foundthrough Petfinderhave been just aswonderful in their ownway.”
