My name is Lois Meredith. I was born in Lorain in August 1928. I went to Lorain High School. One of my favorite memories as a child was going to the

elementary school 2 doors down and swinging on the swings by myself. As a child I was shy. I wanted to grow up to be a homemaker.

I met my spouse in high school. After he came back from the service from Germany he asked me on a date and the rest is history. We married in January 1949. 7 Things You Never Knew Lemons Could Do - By Brianna Steinhilber

Keep Brown Sugar Soft: The juice isn’t the only useful

part of the lemon; its super moist and flavorful peel can work wonders in the kitchen too. Add a slice of the skin (with the pulp completely removed) to your box of brown sugar to keep it from clumping and hard-ening. This way, you won’t have to do any sifting the next time you make our Old-Fashioned Apple-Nut Crisp.

Crisp Your Lettuce: No need to toss that limp lettuce! A little lemon juice and water can help bring your leaves back to life. To crisp up limp leaves, soak them in a bowl of cold water and ½ cup of lemon juice, then refrigerate for about an hour. The leaves will come out revived and ready for eating. Try it out on a simple green salad topped with our Roasted Garlic Dressing.

Cook Perfect Hard-Boiled Eggs: Even if you’ve mastered perfectly hard-boiled eggs, try brushing the eggshells with lemon juice before adding them to the pot for a little added insurance. The lemon juice helps keep the shells from cracking while they cook, and it also makes them easier to peel once they’re ready to eat. Try this technique before you enjoy the eggs in our Golden Polenta and Egg With Mustard Sauce.

Tenderize Meat: Lemon juice is a great meat tenderizer; the acidity gently breaks down the fibers in meat, leav-ing it scrumptiously fork-tender. See it in action with Steak Salad-Stuffed Pockets or our Moroccan Flavored Pork Ragu.

Put this zesty citrus fruit to good use with these unex-pected tricks that take some of the hassle out of your cooking session.

Health booster: Get in the habit of starting the day with a cup of hot water and lemon – it’ll kick start your metabolism and get your morning off to a healthy start!

What fewer people know is that lemons also have some unexpected uses. Here are seven ways the handy fruit can solve your trickiest kitchen dilemmas and help en-hance your meals.

Prevent Browning: A few squeezes of juice can do won-ders for avocado, apples, bananas, and peeled raw pota-toes, since lemon juice is just acidic enough to prevent the oxidation that turns produce brown. Try this trick the next time you’re doing meal prep ahead of time or when you set out a platter of fresh sliced fruit for dip-ping in a Chocolate Fondue.

To crisp up lettuce leaves, soak them in a bowl of cold water + ½ cup of lemon juice, then refrig-erate for an hour.

Stop Rice From Sticking: Have a problem with clumpy rice? You’re in luck – adding a few drops of lemon to your cooking water helps prevent the rice from sticking together. Added plus? The lemon juice will also whiten your rice and keep it looking great on the dinner plate! Try this tip with our Green Tea Rice recipe.

Patricia Anderson was referred to Avon Oaks follow-ing a fall down 8 steps, incurring multiple fractures. She was living in an assisted living facility at the time of her fall, and her goal was to return to the assisted living facility upon successful completion of physical, occupational and speech therapies. She faced a lot of obstacles during her recovery including pain and re-strictions on use of her broken limbs until they were healed. Patricia’s determination, motivation, as well as her good sense of humor contributed to her rapid recovery and successful return to her apartment.

Appreciation Day

April 30th April is National Humor Month. National Humor Month was conceived as a means to heighten public awareness of the therapeutic value of humor. Laugh-

ter and joy - the benchmarks of humor - lead to improved well-being, boosted morale, increased communication skills, and an enriched quality of life. It's no coincidence that the month begins with April Fool's Day, a day which has sanctioned frivolity and amusement for hundreds of years. Humor as a tool to lift ailing spirits is an established notion supported by scientific research. The curative power of laughter and its ability to relieve debilitating stress and burn-out may indeed be one of the great medical discoveries of our times.

Do You Know Your Rights? 1. To confidential treatment of personal and medical records

and the right to approve or refuse release of those records to any individual outside the home, except in the case of transfer to another home, hospital, or health care system, as required by law or rule, or as required by a third-party payment contract.

2. To privacy during medical examination or treatment, and in the care of personal or bodily needs.

3. To refuse, without jeopardizing access to appropriate medi-cal care, to serve as a medical research subject.

President Richard Nixon established National Volunteer Week with an executive order in 1974, as a way to recognize and celebrate the efforts of volunteers. Every sitting U.S. president since Nixon has issued a proclamation during National Volunteer Week (as have many U.S. mayors and governors).

Since then, the original emphasis on celebration has widened; the week has become a nation-wide effort to urge people to get out and volunteer in their communities. Every April, charities, hos-pitals, and communities recognize volunteers and foster a culture of service.

The 92 year old, petite, well-poised and proud lady, who is fully dressed each morning by eight 0’clock, with her hair fashionably coifed and makeup perfectly applied, even though she is legally blind, moved to a nursing home today. Her husband of 70 years recently passed away, making the move necessary. After hours of waiting patiently in the lobby of the nursing home, she smiled sweetly when told her room was ready. As she maneuvered her walker to the elevator, I provided a visual description of her tiny room, including the eyelet sheets that had been hung on her window. “I love it,” she stated with the enthusiasm of an eight year old having just been presented with a new puppy. “Mrs. Jones, you haven’t seen the room…just wait.” “That doesn’t have anything to do with it,” she replied. “Happiness is something you decide on ahead of time. Whether I like my room or not doesn’t depend on how the furniture is arranged, it’s how I arrange my mind. I already decided to love it. It’s a decision I make every morning when I wake up. I have the choice; I can spend the day in bed recounting the difficulty I have with the parts of my body that no longer work, or get out of bed and be thankful for the ones that do. Each day is a gift, and as long as my eyes open I’ll focus on the new day and all the hap-py memories I’ve stored away, just for this time in my life.” She went on to explain, “Old age is like a bank account, you withdraw from what you’ve put in. So, my advice to you would be to deposit a lot of happiness in the bank account of memories. Thank you for your part in filling my Memory Bank. I am still depositing.” And with a smile, she said: “Remember the five simple rules to be happy.” Free your heart from hatred. Free your mind from worries. Live simply. Give more. Express gratitude.
