BLEND IT RIGHTFor those who find food to be a fasci-

nating subject, a career in the same

field is definitely an interesting option.Food science and technology is a vast

field which includes fresh and pack-aged food both. Food technology uses

sciences from chemistry, engineering, microbiology and nutrition to produce

foods that last longer, with better re-tention of nutrients. It is also used to

produce safe and specialty products. Thus it makes seasonal foods avail-

able throughout the year, destroyspathogens and deactivates toxic com-

ponents to make foods safer, and dealswith ready convenient foods, informs

Dr JS Pai, executive director of Pro-tein Foods and Nutrition Development

Association of India.ACADEMICS : There are both diploma

and degree courses available in thefield of food science and technology

in India. On completion of class XII,one can pursue a diploma course in

food technology Students with a BSc

degree in Physics, Mathematics, Biol-ogy and Chemistry, or a BTech in Food

Technology can seek admission forMSc course in Food Technology. CET

PCM (Engineering) is valid for this, anddepending on the score, one can get

admission in reputed colleges for a

    degree in food technology.

SKILLS REQUIRED : Anyone with a

knack for scientific thinking, prob-lem solving ability, interest in food

nutrition and health, good communi-cation skills and team spirit can do

very well in this field. "Basic skillslike inquisitiveness, a healthy crav-

ing to learn more, enthusiasm andstrength coupled with set goals and

hard work will lead to the attainmentof these goals," says Neha Shah

who works with Dabur India Ltd as afood scientist.

JOB OPPORTUNITIES : Dependingon one's qualification and interest,

there are many options to choosefrom. "A person can choose to work

in food manufacturing industries asit is a sector which needs persons for

work from the basic level to the higherlevel. Positions like new product de-

veloper, production supervisor, pro-duction executive and quality con-

    troller are easily available," states

Sheetal Khadye, R&D manager,Puratos Food Ingredients India Pvt

Ltd. With the introduction of new foodlaws, regulatory positions are now

available. According to Vijay BhaskarReddy, head, R&D foods division,

Dabur India Limited, "Today there are

plenty of good opportunities in research

    foundation, analytical testing, quality

control, dairies, production and mar-keting." Other options include working

in hospitals, bakeries, confectioneries, frozen food units, the food processing

division in catering units, distilleries andpackaging industry. For those who wish

to share their food knowledge, teach-ing is an option.

SCOPE :The process of product de-velopment does not just include the

packaging of raw material, but tasteand nutrition are also important. Many

institutes have started paying atten-tion to this aspect besides chemistry,

microbiology and engineering. That iswhy, students from food science and

nutrition are finding openings in the foodindustry, especially in research and

development. "Newer aspects in theindustry such as patents, emerging

pathogens, special nutritional needs, new food laws and a new quality sys-

tem are making an impact on the cur-

riculum," states Pai.CHALLENGES : Although food tech-

nology is a versatile field, one has toface challenges on a day to day ba-

sis. "Development of a new product, which is pleasant to taste and is of

good quality while being cost effec-

tive. To this, Pai adds, "Maintain

good supply chain with decent m

facturing practises is also a Consumers are now expectin

ery food product to have exctaste and quality at a reaso

cost. New food laws have allthe use of some ingredients in

tional foods that help reduce thof certain ailments like hear

ease, diabetes and cancer. Tadvantages have to be included

out affecting the taste, whichbig challenge." Another challen

that new global products are aping in the market, which is why

products have to compete withity, taste and cost. Overall,

science is a growing field, whamore aspirants entering the

and a wider scope of opportuavailable to them. Due to a

crease in health awarenessmore consumers looking into

    nutritional value of foods, bu

are demanding more variety incoupled with convenience. W

fresh lot of companies enterinfield, there is a much wider s

    for careers and competitiogether.
