Strawberries by the numbersIf all the strawberries produced in California this year were laid berry to berry, they’d wrap around the world 15 times. That’s enough strawberries to provide every U.S. household with 12-pint baskets.

I’d Like To Thank The AcademyIt would take 7,000 strawberries to create the red carpet that welcomes the stars to the Academy Awards each year.

California DreamingCalifornia provides approximately 83 percent of the nation’s strawberries.

Rated No. 1 With ChildrenStrawberries are a favorite with people of all ages, especially children. In a recent survey, kids seven to nine years old picked strawberries as their favorite fruit, followed by grapes, apples, oranges and bananas.

Better Start Eating StrawberriesRespondents to a recent national survey labeled strawberry lovers as “health conscious, fun loving, intelligent and happy.” Non-strawberry lovers, on the other, were described as “weird, boring, stuffy – picky, fussy eaters who avoid healthy foods.”

Hand-Picked And PackedAll strawberries are picked, sorted and packed by hand in the field. The trays of strawberries are then rushed to shipping facilities where they are cooled-down to about 34 degrees Fahrenheit. (A tray normally contains 12 one-pint baskets). Within 24 hours of harvest, the strawberries are loaded on refrigerated trucks for delivery to local supermarkets across the country. This unique distribution system ensures that this delicate fruit reaches consumers in fresh-from-the-field condition.

What’s The Best Method/Technique For Growing Strawberries?Commercial strawberry growing is not the same as techniques a hobbyist would use. Our advice is to contact your local nursery for growing tips.

What’s The Best Way To Store Strawberries?For strawberries to stay fresh, do not wash them right away. Store them in a large container with a dry paper towel at the bottom. Separate the berries by layering them with paper towels to maximize freshness. Just before using, wash strawberries with the caps attached under a gentle spray of cool water. For each best flavor, allow strawberries to reach room temperature before serving.

Can I Freeze Strawberries?in a saucepan, mix equal amounts of sugar and water. Stir over medium heat until sugar is dissolved and mixture is clear.

Cool the mixture completely. Measure one cup of steamed and sliced strawberries into a pint sized freezer bag. Pour one-half to two-thirds of a cup of the sugar water mixture into the bag…just enough to completely cover the strawberries. Seal and freeze the bag in a single layer. Because the moisture content of strawberries varies throughout the season, it’s recommended that home frozen strawberries be used in beverages and sauces, not in recipes where liquid variations could make a difference. (Commercially frozen strawberries are consistent in texture and density.)

How Many Seeds?On the average, there are 200 tiny seeds in every strawberry.

Care and HandlingCalifornia strawberries are fully ripe at the time they are picked and do not continue to ripen after picking. The berries should have a bright red color, natural shine and fresh looking green caps.

C alifornia strawberries are a nutritious and are a delicious

addition to these scrumptious recipes. Follow these quick and easy recipes to create flavorful delicacies that will entice even the pickiest palate, and won’t overwhelm novice cooks.

Strawberry Banana-Nut Bread1 cup butter or margarine1/2 cup sugar2 eggs lightly beaten1/2 cup plain (or strawberry) yoghurt1 teaspoon vanilla extract 4 medium bananas, enough for 1 1/4 cups mashed. 8-12 large California strawberries stemmed & mashed, enough for 3/4 cup1/2 cup finely chopped walnuts2 cups of flour

Sift Together:1 teaspoon baking soda1 teaspoon corn starch1/2 teaspoon salt2 cups of flour

DirectionsPreheat oven to 250 degrees. Grease and lightly flour 6-6” x 4” bread pans or 2-9” x 9” cake pans. In large bowl, beat butter at high speed until smooth. Add sugar and beat at high speed until fluffy. Lower speed and add the eggs, vanilla and yogurt one at a time. Allow the ingredients to completely blend. Add bananas and strawberries until evenly blended. Add al sifted ingredients to mixture 1/2 cup

at a time until completely blended. Do not over mix! Add the walnuts and stir to mix. Pour the finished batter into the prepared pans and bake for 35-55 minutes. Bread will be browned on top and pull away from side of pan when ready. Place pans on cooling rack for 10 minutes before inverting them. Wrap in aluminum foil to store in refrigerator.

Rosy Strawberry Soup1 1/2 quarts strawberry preserves4 1/2 cups sour cream1 1/2 cups sherry6 tablespoons grenadine3 cups of half and half 4 pints baskets fresh California strawberries, stemmed and halvedMint, sprigs for garnish

DirectionsWhisk together strawberry preserves and sour cream until smooth. Stir in remaining ingredients. Cover and refrigerate several hours or overnight to blend flavors. Ladle into stemmed glass goblets and garnish with mint. Yield: 24 servings, 2/3 cups each.

Strawberry Iced Tea1 ounce sweet and sour mix 2 ounces frozen sliced California Strawberries in syrup, partially thawed1/2 ounce rum1/2 ounce vodka1/2 ounce gin1/2 ounce triple sec1 scoop ice

Splash of lemon-lime sodaWhole fresh California Strawberry

DirectionsIn a blender combine all ingredients except whole berry and lemon-lime soda; flash blend. Pour into tall glass. Splash lemon-lime soda on top. Garnish with whole berry.

Strawberry Freeze1/4 ounces Baileys Original Irish Cream4 ounces vanilla soft serve ice cream 4 ounces frozen slices California Strawberries in syrup, partially thawedWhole fresh California Strawberry

DirectionsIn a blender combine all ingredients except whole berry; blend smooth.

Pour into stemmed glass. Garnish with while berry.

Strawberry-Orange Smoothies 1 pint basket California strawberries, washed and stemmed1 1/4 cups low fat milk2/3 cup unflavored lowfat yogurt 2 1/2 tablespoons frozen orange juice concentrate2 tablespoons honey4 ice cubes

DirectionsCombine ingredients in container of electric blender. Blend until smooth. Pour into four 8-ounce glasses. Garnish with orange wheels, if desired. Serve with straws. Makes 4 servings.

Fresh Strawberry Pie1 - 9 inch pie shell, baked3/4 Cup - sugar1/2 Cup - flour1/4 Teaspoon - salt3 Cups - milk3 - egg yolks, beaten slightly2 Tablespoons - butter1 1/2 Teaspoons - vanilla1 Cup - whipping cream1 1/2 Tablespoons - powdered sugar 2 1/2 Cups - fresh California Strawberries, stemmed 1 Cup - fresh or frozen, thawed, blueberries

DirectionsCool and set aside pie shell. In 3-quart saucepan combine sugar, flour and salt. Whisk in milk until smooth. Cook and stir over medium-low heat until mixture is thickened. 8 to 10 minutes, being careful not to scorch. Beat the

egg yolks slightly. Add a couple of tablespoons of the hot milk mixture to them, stirring, then pour the yolk mixture back into the hot milk. Cook and stir 3 minutes. Remove the pan from the heat and stir in the butter and vanilla. Let it cool for 20 minutes, then pour into the prepared pie shell. Chill for several hours until firm. In bowl of electric mixer, combine whipping cream and powdered sugar. Beat until soft peaks form. Set aside. Remove pie from refrigerator. Arrange Strawberries and blueberries on filling. Serve with whipped cream. Makes 6 to 8 servings.

Strawberry Chocolate Mousse Cake

1 cup (about 5 ounces) chocolate cookie or chocolate graham cracker crumbs 3 tablespoons melted butter or margarine 2 pint baskets California strawberries, stemmed and halved 2 cups (12 ounces) semisweet chocolate chips1/2 cup water 2 tablespoons light corn syrup2 1/2 cups whipping cream, divided1 tablespoon sugar

DirectionsIn bowl, mix crumbs and butter to blend thoroughly. Press evenly onto bottom of 9-inch springform pan. Stand

strawberry halves, touching, side-by-side, pointed ends up with cut sides against side of pan; set aside. Place chocolate chips in blender container. In small saucepan over medium heat, mix water and corn syrup; bring to boil and simmer 1 minute. Immediately pour over chocolate chips and blend until smooth. Cool to room temperature. Meanwhile, in large mixer bowl, beat 1 1/2 cups of the cream to form stiff peaks. With rubber spatula, fold cooled chocolate into whipped cream to blend thoroughly. Pour into prepared pan; level top. (Points of strawberries might extend above chocolate mixture.) Cover and refrigerate 4 to 24 hours.

Up to 2 hours before serving, in medium mixer bowl, beat remaining 1-cup cream to form soft peaks. Add sugar; beat to form stiff peaks. Remove side of pan; place cake on serving plate. Pipe or dollop whipped cream onto top of cake. Arrange remaining halved strawberries on whipped cream. To serve, cut into wedges with thin knife, wiping blade between cuts. Makes 12 servings.

Freshest Strawberry Jam 5 cups fresh California strawberries, stemmed4 cups of sugar

3/4 cup water 1 package (1 3/4 ounces) powdered fruit pectin

DirectionsCrush strawberries completely. Measure 2 cups strawberries with juices into bowl. Thoroughly mix in sugar; set aside 10 minutes. Combine water and pectin in saucepan. Bring to boil and boil one minute, stirring constantly. Stir pectin mixture into strawberries; continue stirring 3 minutes. Ladle quickly into sterilized freezer jars or containers, allowing 1/2 inch head space. Cover lids. Let stand at room temperature 24 hours. Store in freezer. If jam is to be used within 2 or 3 weeks, store in refrigerator. Makes 2 1/2 cups.

The American Red Cross is a humanitarian organization that provides emergency assistance, disaster relief and education inside the United States.

Youth NowStrawberry Smoothie & Strawberry Banana SmoothieYouth NOW Center is an after school student center that provides no-cost tutoring and academic support and a safe social environment for middle and high school students in the downtown Watsonville area. Youth NOW is comprised of two program sites, one for high school students and one for middle school students. Each site has both a learning center space and a recreational social space. Its learning centers offer individualized tutoring, homework help, independent study, school project resources, computer labs, and printing services. Social and recreational spaces are comprised of a high school ‘coffee house’ and the middle school gym. These sites serve as spaces for activities such as enrichment classes, clubs, sports clinics and evening social events. During the summer, they offer a five-week all-day program. No-cost food is offered at both sites.

El Pajaro CDCFresh Strawberries/Strawberry JamEl Pájaro CDC promotes micro-enterprise and small business development by supporting low-income and minority entrepreneurs in Santa Cruz, San Benito and Monterey Counties. It creates economic opportunities for the community by providing bi-lingual, bi-cultural business education and training, and professional consulting and technical assistance. Its programs and partnerships offer small business entrepreneurs important assistance to help them achieve economic success.
