Despite the chance of showers and cold air outdoors, they come and they will bring family and friends that have traveled from out-of-state to taste the tender morsels created by professional chefs and non-profit organization vol-unteers. They come to learn about where these creatures live and how we in-fluence their survival, or to just touch a starfish. They come to peruse the arts. They come to hear the eclectic variety of music on stage and wander around with them. They come even when the rain poured down all day making it dif-ficult to dodge the puddles. They come from La Grande, Ore., Vancouver, BC, even California.

Why do they come? Because they are never disappointed. The food is abso-lutely marvelous and extremely hard to pick one favorite. They come because the exhibits are interesting and relevant. Families use it as an excuse to gather for reunions and shared experiences.Unique because of it’s seafood theme in the middle of one of the largest producing aquacultural areas, they come because there is truly nothing else like it!

OysterFest: West Coast Oyster Shucking Championship and Washington State Seafood Festival • Shelton, WA

Oyster Shucking com-petition has been the centerpiece of Oyster-fest since its inception. Each year at Oysterfest, Shelton Skookum Rotary sponsors the West Coast Oyster Shucking Cham-pionships, where contes-tants vie for the oppor-tunity to claim title to the fastest oyster shucker or the best half-shell oyster shucker. Some contes-tants have been known to claim both titles in the same year. This year we will go through more than 500 dozen oysters in the competition, all do-nated by Taylor Shellfish Company.

Saturday, October 2, 2010 will be the day to see the fastest oyster shuckers in the Northwest compete with each other for cash prizes. Prelimi-nary heats of contestants will begin at 11 AM and there will be a heat ev-ery hour with between 6 and 10 contestants in each heat. The number of heats depends on the number of contestants, but the last heat is usually

at 4PM. The final heat pits the top six shuckers of the day against each other, to determine the Grand Prize winner.

Speed is the primary factor on Saturday. Each shucker is given 24 oys-ters to shuck as fast as he / she can and the fastest six contestants compete in the finals. You have to see these people at work

to believe it. The fastest time of the day is usu-ally about two minutes, meaning the winner is shucking an oyster about every 5 seconds! That’s incredible!

On Sunday, October 3, 2010, the competition takes on another aspect. The judges on Sunday pick winners for the fastest shucking of twenty-four

oysters on the half-shell. A shucker has to open the oysters rapidly, and place each one back on the half-shell. But any cuts in the oyster by his knife, or any pieces of shell land-ing in the finished prod-uct cause points to be deducted from the over-all score. So, the person who shucks the oysters and places them on the

half-shell the fastest may not be the winner, if points are lost by damage to the oysters.

On Sunday, there is also a prize awarded for the “Best Presentation” - the tray of oysters on the half-shell which looks the nicest.

Oyster shucking com-petition is a great crowd pleaser. Come watch the

competition and scream for your favorite contes-tant. We will pass out oysters to the crowd after each heat, so if you love oysters, be there. Even if you don’t want to eat oysters, be sure and drop by the Shucking Stage on Saturday or Sunday, on the hour, to watch the shucking competition. It’s great fun. See you there!

OysterFest: West Coast Oyster Shucking Championship and Washington State Seafood Festival • Shelton, WA

Original recipes created by Northwest gourmet amateur and professional Chefs, will be dexterous-ly prepared to bring appetizing aro-mas and tastes, guaranteed to satisfy even the most demanding palate. This year’s 29th Oysterfest Anniversa-ry will feature 20 chefs competing for prize moneys totaling $1300 and the prestige of being Oysterfest Cookoff Champion. The 2009 overall cham-pion was Emily Wallace of Olympia Wash., whose recipe was Filet de Sole Floreal. Her recipe follows on page 5.

Competition at the Oysterfest Cookoff will take place over two days on Oct. 2nd and 3rd. The three menu categories include Appetizers, Soups and Stews, and Main course. In each of the categories a gold, silver, or bronze medal will be given respec-tively to the top three contestants. All contestants will compete for title of the prestige of being crowned, Grand Champion. The winner will be select-ed based on their point count.

Judging will be by an esteemed

panel of Professional chefs headed by Chris Plemmons, CEC, Culinary Arts Instructor at Olympic College. In addition we have Gary Fuller CCE, CEC, ACF Program Manager Pro-gram and Culinary Arts Instructor at West Sound Technical Skills Center. Professional chef Jack Campbell of Clackamass, Oregon and the owner of Cedar Bay Culinary, Linda Strong complete the judging team.

The will be an Iron Chef competi-tion over two days. In the preliminary

round on Saturday Three time over-all champion in the general contest, Kerin Lee Lewis will match skills with Kern Dolby of Steven’s Fine Dining. The two chefs will prepare a main dish item in a timed competition us-ing secret ingredients revealed at the beginning of the contest. They will compete on Saturday October 2nd at 4:00 PM for the challenge of de-feating two time winner Lucas Sau-tter sous chef at Alderbrook Hotel and Resort on Sunday March 3rd at 4:00PM. The esteemed judging panel will choose the winner.

Judging criteria includes: presen-tation, uniqueness, creative artistry, color, and taste that comprises of aroma, texture, quality of ingredients, balance of flavors, seasoning and ap-peal to the senses. Additionally, the use approved of sanitary techniques will also be covered.

For Mousseline, Place sole trim in food processor blend until smooth add egg white, cream ,lemon juice and salt and pepper to taste. Pro-cess until smooth. Place mousseline in pastry bag and pipe onto sole filets, roll into paupiette shape. Place in buttered sauce pan with de-sired poaching liquid cover with buttered parchment and poach until done. Blanch asparagus and carrot in salted water. Place in sauce pan with melted butter simmer until warm serve with sole. Serves 6

Sauce Vin BlancFish stock 1.5 cWhite Wine .5 cRoux 1 ozEgg yolk 2 each

Bring fish stock to simmer with white wine. Reduce by 1/3 add roux, simmer until thickens. Temper egg yolks with prepared fish veloute, sim-mer on med low heat until begins to thicken. Whisks in whole butter, Whisk in buerre printanier, season to taste with salt and white pepper.

About 475 fourth graders will be getting wet Friday while learning how to take care of our natural resources at Kids’ Day at OysterFest. Students from Sand Hill, Evergreen, Hood Canal, Southside, Mary M. Knight, Pioneer, Grapeview, and Mason County Chris-tian School are attending the festival at the Mason County Fairgrounds. Kids’ Day is a special pre-opening to Oyster-Fest on Friday October 1, which runs Saturday and Sunday, October 2 and 3.

Students and teachers are more en-gaged and enthusiastic when they see that a subject is brought to life. Many teachers use this as a jumping off point for some of their environmental stud-ies units. During the half day tour, stu-dents will learn about water, what lives in water and how to keep it clean as well as be safe in water based recre-ational activities.

Just a few shy of 100 Mason County community members volunteer each year to help pull the event together and carry it through the day. Thanks to wonderful partnerships with organiza-tions such as Skookum Rotary, Mason Conservation District, Mason County Recycling, PUD #3, Washington Sea Grant, WSU Extension, Hood Canal Aquanuts, Washington State Depart-ment of Health, Medic One, and North Mason Kiwanis, we will have some magnificent hands-on activities at Kids’ Day.

Each year the event has brought together community members to help explore and explain the natural resource wonders of Mason County. Over 8,000 fourth grade students have participated in the event since it began. Kids’ Day is funded by the Skookum Rotary Club Foundation and Washington Sea Grant.

camping at OysterFest is fun!

Whether camping via motorhome, trailer, truck camper, pop-up or tent, welcome to OysterFest! We’re excited to have nearly 200 of you come from far and wide (and from close to home).

camping at OysterFest is an event in and of itself. besides the excellent camaraderie of hanging out with fellow oyster (and seafood of all kinds and microbrew and wine and art and entertainment) lovers, the per-night camping fee also includes admission to the festival each day and free admission to the RVers dance on Saturday night. The dance, with a live band, will run from approximately 9 to 11 p.m. Saturday evening. Each campsite will be issued four dance passes. if you need more dance passes for your group, please let us know upon arrival; however, the passes are limited to only those people 21 years of age and older who are staying overnight in your campsite. because alcohol will be available at the dance, only RVers aged 21 and over who have a dance pass can be admitted.

There are a few mason county Fairgrounds items of which we need to make you aware: No campfires are allowed and no smoking is permitted on the grounds, which includes the camping area. also, any alcoholic beverages need to be consumed at your camp area and cannot be carried throughout the campgrounds, from one campsite to another, or into the festival itself.

due to limited space in the RV area we request that all tow vehicles be parked in the regular, free parking area. This allows us to accommodate as many campers as possible. if you must have your vehicle next to your rig you can plan to pay an extra fee of $10 a day.

OysterFest is a community service project planned, staffed, and evaluated by Skookum Rotary. Over 100 Mason County non-profit groups and government agencies support us to make this “small town-big event” happen. Income earned by these activities goes to a wide variety of community projects, services, charities, and educational endeavors.

Not sure when summer came or went but we do know come the 1st weekend in October the place to be will be the Mi-crobrew area at Oysterfest 2010. Once again back by popular demand with OysterFest will be: Fresh air, Live mu-sic, Seafood dishes, cold beverages and renewing old friendships. You can com-plete this year’s experience with the suds and music that flow from the Microbrew Arena.

As always, the Microbrew crew is looking forward to this wonderful event and enjoying the OysterFest experience with you. One bit of factual information you can count: the beer ticket prices will be the same as last year, and the year before that: $4 per ticket, one ticket will get you a large beer or fill up your sou-venir glass. We will be offering the ever popular 16 oz. Pilsner glass, 2010 glass-es will be available for $6 each and we

will also be offering the option of a “no date” OysterFest glass for $6. Remem-ber glass price does not include beer. You must purchase beer tickets for that. As always glassware is on a first come first serve basis.

Now for the Microbrew housekeep-ing information: No person under 21

years of age is permitted in the desig-nated Microbrew Arena. All patrons will be asked to show ID at the entrance to the arena. If you are 21 years of age or older you will have a bracelet applied to your wrist that you will be required to show in order to purchase beer tickets, be served beer and or be allowed to con-

sume beer. We like to keep it simple: No wristband, no admittance, no drinking.

We will have a couple of central I.D. check points on the fairgrounds where any patron wishing to consume an al-coholic beverage would first go and receive a wristband, which would give them access to the Microbrew Arena.

The Hidden Pearls of OysterFest:Watch an Oyster Shucking contest. 11:00 on Saturday is the first event and they continue every hour at the Shucking State. Saturday’s winners are for speed and Sunday’s are for presentation..

Check out the Flag Pavilion next to the Shucking State. The circular shape is actually the Rotary wheel. It was built in 1985 and designed by Rotarian Charlie Swenson. Join the flag raising ceremony at 10:30 both days.

The Mason County Historical Society has a museum here as well as down-town. It was originally called the Log-ging Museum and features logging equipment & a logger’s bunk house as well as a 1930s kitchen, quilts, & photographs.

Vote for your favorite food vendor! Ballots are available at each booth & voting ends Saturday at 6pm. Gold, silver & bronze medals are awarded on Sunday for People’s Choice & Skookum’s Choice. Past winners have these designations on their signs.

Art & Photography competition exhibits are in Bldg 6 this year There are 4 judged categories: fine art, pho-tography, 3 dimensional, & Skookum Rotary’s Choice. People’s Choice Award Winners 2009I t’s all about popular demand, and a

whole bunch of fun when Skookum Ro-tary congratulates three food vendors for their great food and popularity on Sunday afternoon.

Skookum Rotary instigated the friendly competition among its nonprofit vendors to instigate a high level of service and in-teraction with our OysterFest guest. And if the stacks and stacks of ballots we pick up on Saturday afternoon do nothing else, they tell the vendor committee that people love the food!

The Gold Medal and top honors in 2009 went to Mason 5’s Firehouse Chili. This pe-rennial favorite serves up Fire House Chili in two heat sensations, and you can cool off with a snow cone they’ll serve as a chaser.

Silver went to the Mason County As-sociation of Realtors and for good reason. They serve up awesome Oysters Rock-efeller and a heap of great entertainment which includes singin’, dancin’ and a swirl of beads.

The SHS Band Boosters, with fresh, hot and local corn on the cob, took home the Bronze.

OysterFest: West Coast Oyster Shucking Championship and Washington State Seafood Festival • Shelton, WA

OysterFest is fun and interesting. Exhibitors are an important part of Oysterfest. The educa-tional exhibits range from state and local shell-fish and water quality informational displays to a model dam by Tacoma City Light and an electrical safety display by the PUD#3. One of our long-term participants is the Hood Canal Aquanuts with touch tanks of live shellfish for visitors to explore.

Another fun exhibit is the Shelton Scale Ship Modelers with their beautifully detailed model ships that cruise across a large water tank.

This year the Pacific Coast Oyster Growers Association is putting together an exhibit fo-cused on kids. We can’t wait to see it. There are also several displays highlighting some of the programs that directly benefit from reve-nues produced at Oysterfest including various community projects, PolioPlus, RotoPlast, and ShelterBox. Right now we have confirmed over 20 different exhibitors and they can be found in various locations around the grounds.
