Culinary Spices of the World Cooking Series Instructor: Chef Vikrant Bhasin ConƟnue our culinary journey along the Spice Route by explor- ing the cuisines of Mexico, the Caribbean, and North Africa in the nal two installments of this four part series. Join Chef Vikrant Bhasin as he explores the tantalizing spices of the trop- ics and subtropics. AŌer the cooking demonstraƟon there will be a generous tasƟng of the recipes. Part Three: Mexico and the Caribbean Cumin, oregano, allspice, cinnamon, garlic, chilies, vanilla, nutmeg are the avors that come to mind when I think of Caribbean and Central American foods. In this session we are going to use them and cook Jamaican Jerk Chicken and Arroz Amarillo con Sofrito (Sofrito Rice) and Gazpacho Salad. Jerk is more of a style of cooking than a parƟcular dish. We will discuss its origins and techniques. And as in the previous classes, we will have a selecƟon of beers to taste. This session comprises of an interacƟve cooking demo, recipes, and food talk. So sharpen those dull knives and let’s Chop-Chop. If you so desire, bring your bev- erage of choice. Nur-ture their natural culinary talents in this hands-on class with chef Mama T, formerly an instructor at Down to Earth and owner of Mama T’s Ital Kitchen in Kakaʻako. Recipes that your child will make include: Handmade Vegan and Vegetarian Piz-za, Sushi Rolls, and ʻOno Chia Pudding. For keiki ages 6-14.

ces such as yoga and medita on are good for your health. Experience these benefits yourself by joining us for a Yoga class followed by an op on-al mindful hike through beau ful Lyon Arboretum.  Armature Arrangements Made Simple                                          Instructors: Beverly Grimmer & ElePo s Using a variety of materials, floral designers Beverley Grimmer and Ele Po s will demonstrate the use of armatures to add sculptural interest to your floral design. A er the demonstra on par cipants will receive materials to create their own armature and arrangement. A materials and equipment list will be provided to you prior to class. Rain Garden Workshop  Instructor: Gerrit Evensen This class will cover the basics of a rain garden (what, why, and how), related landscape features (bioswales, deten on/reten on ponds, etc.), general hydrology (tying into water is-sues, watershed dynamics, hydrology, groundwater aquifers, etc.), and highlight some of the plants that should/shouldn't be used. I will also discuss the possibility of (and poten al problems with) growing edibles like kalo in such a system, and the use of grey water (benefits/problems/legal concerns).  Floral Design Course: A Four‐Part Series   Instructors:  Ber e Lee and Do e Ni a Lyon Arboretum is proud to offer a s mula ng community course in floral design. The intent is for par cipants to gain experience, knowledge and love of floral design through a diversity of styles using the basic principles and elements of design. Par cipants will receive decora ve vases to be used in the course. Using floral materials from the Lyon Arboretum grounds, methods, techniques and concepts of floral design will be ex-plored.

  Hawaiian Natural Dye Workshop                              Instructor: Wesley Sen Students will learn to use basic plant and mineral dyes u lized in the Na ve Hawaiian culture. Some of these plants are also used in herbal medicine and in tradi onal cultural prac ces. Students will gather the roots, bark and fruits of different plants and process them. They will use the dyes to decorate a small Kapa purse and bracelet, which they will take home. Please bring garden gloves, dishwashing gloves, apron and wear clothes that can be stained. Class will be held at the Children’s Learning Center Facility. This class is sponsored by The Garden Club of Honolulu as part of the  Stepping Stones Series.

Home Seed Banking on a Budget Instructor: Dr. Marian Chau Are you interested in preserving seed stock for your vege-table garden, including heirlooms? Want to store na ve Hawaiian plant seeds? This class is geared toward home-owners and others who want to start banking seeds on a small scale using effec ve but low-cost/low-tech methods. A er an informal presenta on, Dr. Chau will lead some hands-on demonstra ons of techniques and tools used in home seed banking. Lastly the class will visit the Hawaiian Rare Plant Program’s Seed lab, which is managed by Mari-

an, to see how the professionals use cu ng edge methods to keep rare plants safe from ex nc on. Par cipants will each receive a packet of Na ve Hawaiian plant seeds.

 Kids’ Spring Nature Camp! Lyon Arboretum Educa on Staff Join us for a week of learning, exploring and adventure in the Mānoa rainforest! Our STREAM theme (science, technology, Rela onships, engineering, Art, and math) will focus on saving and protec ng Hawaiʻi’s endangered species for our future. We will also learn about organic gardening, Hawaiian cultural protocol, build some simple bamboo shelters, hike our mountain trails, and explore our waterfall and stream. Linda Hamasaki and Carole Sa-kata will teach the children how to make Ikebana flower arrangements using plants from our Children’s Garden! It promises to be a week of fun-filled learning that your child will always remember!

  Local & Fresh! Cooking Demo Instructor: Chef Jackie Lau – Roy’s Restaurants Chef Lau will demonstrate how to pickle veggies and fruits. In addi on, she will offer an easy and versa le recipe for French Gougeres. These savory puffs freeze well, use local cheese and eggs, and are perfect for your next party. Basics of Beekeeping: An Introductory Course Instructor: Max Towey (owner, Meli Honey Compay)  Do you love honey? Interested in learning how to keep your own hive? Join beekeeper Max Towey as he introduces the basics of beekeeping in this first class of a three-part series. Max will lead the par cipants in hands-on demonstra ons on how honey is produced, pollina on/ecological services, and disease iden-fica on. We will visit the hives here at Lyon and also have a honey

tas ng. Meli Honey Company honeys will be available for purchase in our gi shop. *Those with bee allergies are not recommended to a end.   (Please wear covered‐toe shoes, and heavy pants (jeans, etc). Intermediate and Advanced classes will be offered beginning in June for those who have a ended the  Introductory class).

Kids’ Flower Arranging Class   Instructors: Linda Hamasaki and Carole Sakata  Let your child’s imagina on blossom and bloom, inspired by the beau ful flowers and foliage to be found at Lyon Arboretum. We will hike the grounds and collect materials to be used in your childʻs own crea ve flower arrangement. Taught by Sogetsu Ha-wai`i teachers Linda Hamasaki and Carole Sakata, these two infor-mal and fun classes will introduce young learners to the basics of

the art of Ikebana, with an emphasis on ar s c expression. Just in me for Mother’s Day! For chil-dren aged 6-12. Parents must accompany 6 year olds.

 ʻEke Lauhala Weaving: Cell. Phone Case, Napkin Box, Basket w/Handle            Instructor: Kumu Wesley Sen Join tradi onal lauhala weaver, kapa maker, and lomilomi prac -

oner Wes Sen for this three-part course in which you will learn to weave a beau ful and func onal lauhala basket. Learn about the hala, Pandanus spp., in its many forms and func ons; how to har-vest and prepare the lau, or leaves, and how to plait them to form a Hawaiian ʻeke lauhala. These baskets can last many years, retaining their beauty and holding fond memories for years to come.
