CanyouintroduceourreaderstoLePainQuotidien?
The age old traditions of eating well and enjoying life have been at the heart of Le Pain Quotidien since the start. We serve simple, wholesome and sustainable food for breakfast, lunch and dinner. Our menu includes soups, salads, signature tartines, hot dishes, sharing charcuterie platters, homemade pastries and artisan baked bread. We also serve many vegan and vegetarian options.
Tellusmoreaboutyourinspiration…
Le Pain Quotidien is built on the belief of its founder, Alain Coumont, that community is what nurtures, inspires and feeds the soul. Le Pain Quotidien’s first communal table on Rue Dansaert in Brussels was built from wood salvaged from the floors of retired Belgian trains. Those simple planks became a tradition. Today, this same rough, reclaimed wood continues to bring a rustic comfort to all Le Pain Quotidien restaurants, and the communal tables have become a centrepiece, where friends reconnect and new friendships are forged over the shared appreciation of delicious food and good company.
Whatisthelatesttrendindininganddrinking?
There has been a resurgence in people wanting to take time to enjoy good quality food with friends and loved ones. In this ever-changing and hectic world, people are wanting to find places to escape and we are proud to offer that in our restaurants. We believe Le Pain Quotidien is a place where traditional simplicity is cherished. Le Pain Quotidien means the daily bread. And to us, that means everything. It’s much more than mere sustenance; it’s a way of life. As our loaves emerge from the ovens, warm and fragrant, friends gather around our communal tables to share in the time-honoured tradition of breaking bread. The hum of conversation fills the air, jam is passed around the table, and, ever so gracefully, time slows.
This Autumn,Le PainQuotidien willmake its debutin Leeds, atVictoria Gate, with one ofits largestrestaurants outside of London.

HowwouldyoudefineD&Dinthreewords?
Iconic, glamorous, fun.
HowmanyrestaurantsdoyouoperateacrossLondon,theUKandtherestoftheworld?Whatmakeseachonesounique?
We have 34 venues in total, with another three in the works – that we can tell you about, at least! The vast majority are in London, but we have a restaurant in Paris, one amazing events space in NYC and two restaurants in Tokyo. We are also working on launching our third venue in Leeds at Victoria Gate and our first restaurant in Manchester. Each restaurant is very different and very much its own business and concept, with the on-site team running it largely as its own enterprise, keeping an eye on the local markets and the customers’ feedback to keep them constantly current and ever-evolving. We’re also not afraid to go outside our comfort zone, for example our new Leeds restaurant in Victoria Gate is going to be D&D’s first Japanese restaurant.
Whatistheinspirationbehindthedifferentrestaurantconcepts?
We tend to let the spaces and the locations inspire the restaurant concepts, for example German Gymnasium in King’s Cross is inspired by the building’s history as an actual gymnasium built by the German Gymnastic Society in London. We kept the soaring scale of the building, worked in some design nods to its history and created a middle European menu as tribute to its German heritage! Other times even if design is inspired by the site’s history, the food concept is based on the chef, as with Sartoria on Savile Row with its Chef Patron Francesco Mazzei and his regional Italian menu.
International fine dining group D&D will be opening a rooftop restaurant at Victoria Gate, Leeds in a few months. We had a chat about their restaurants, the rise of foodie culture and industry trends.
Whatwouldyousayisthelatesttrendindining?
If there is one overarching trend I think that it is people increasingly treating eating out as an everyday social activity. We are becoming more like New Yorkers. We now go to restaurants to meet friends to catch up, not just on special occasions. Allied to this is a continuing trend both at the top and casual ends of the market towards informality. Quaglino’s, Bluebird, and Mezzo (now 100 Wardour Street) pioneered in the democratisation of “fine dining” in the 1990’s and remain hugely popular and successful today.
Howhaveyouseencustomers’expectationsevolveovertheselastyears,andwhatwouldyousayaretheirexpectationsforthefuture?
Customers are much more knowledgeable and engaged with food – they really want to know where the ingredients and ideas came from and who the chefs are. The rise of foodie culture has given our chefs a huge level of freedom to experiment and innovate to a receptive audience. We think this will continue to be the case and that customers will continue to inspire chefs to become better and better. Foodie culture is also what has attracted so many exciting foreign chefs and restaurants to the UK.
Whatwouldyouliketoseehappeninthefood/diningindustryinthenext2-5years?
We hope that our industry can continue to attract talent. What we are seeing now is high quality people increasingly choosing restaurants as an exciting career. Last year a young corporate lawyer who worked for us gave up a high flying position at his law firm to set up a small restaurant in Soho. It was a huge success. And one of our general managers even gave up his medical studies at Imperial College to work for us!

Costa’s Carbon Neutral Eco-Pod Wrekin Retail Park, Telford
Hammerson worked collaboratively with Costa Coffee to design Costa’s 1,600 sq ft Carbon Neutral Eco-Pod which opened in April 2015 in Wrekin Park, Telford. The new concept coffee shop is the first of its kind in the UK and has achieved the highest provisional Energy Performance Certificate rating of A+.
Jim Slater, Managing Director of Costa UK and Ireland, said: “Through a successful partnership with Hammerson, we have developed an outstanding new type of test bed building design which really does have the potential to make a massive difference if rolled out more widely.”
At Hammerson, sustainability underpins everything that we do. Our vision is to create retail destinations that deliver positive impacts economically, socially and environmentally. Positive Places is our strategy for making that happen. In 2015, a set of commitments were developed, each with their own key targets:
To Challenge and Innovate Challenging the status quo and trialling new approaches and solutions to support the transition to a more sustainable business model.
To Serve and InvestDelivering social value to the communities we serve, measured in jobs, skills, civic pride and investment.
To Protect and EnhanceProtecting and enhancing our natural environment by minimising resource consumption and delivering restorative projects.
To Partner and CollaborateTaking a stakeholder led approach to create collaborative projects and evolve from client to partner.
To Upskill and InspireInvesting in our people, as well as recognising and rewarding those that deliver change with sustainability related objectives.
