The Po’boy sandwich dates back to 1929 when

sandwich-stand owners Bennie and Clovis

Martin offered free overstuffed sandwiches to

striking streetcar conductors who they referred

to as “poor boys”. With the southern drawl this

ends up as ‘po boy’.

Sexy saltSzechuan pepper, five spice, white pepper and salt.

Tiger sauceAn American classic. A moderately spicy blend of Ingredients in a cayenne pepper base. With a touch of sweet and sour, it’s perfect for meats, seafood and poultry.

SrirachaSriracha, also known as Rooster Sauce (because of the rooster prominently featured on its label) is a deliciously addictive spicy sauce. Created by Chi-nese-Vietnamese founder David Tran who was born in 1945, the Chinese Year of the Rooster.

Mole“Mole”, an ancient word for mix, is a traditional Mexican sauce made from nuts, seeds, spices, chillies and dark Mexican chocolate. Legend has it that upon hearing the archbishop was coming for dinner, the nuns of Santa Rosa went into a panic because their cupboards were bare. Hurriedly they made a sauce of what little they had, killed an old turkey, cooked it and put the sauce on top...the archbishop loved it and ‘mixed’ sauce or Mole was born.

Tomatillo salsaA Mexican salsa made from green tomatoes (tomatillos).

Dashi flakesFine shavings of dried, smoked fish, a natural flavour enhancer.

Kewpie mayonnaiseIn Japan ‘Mayora’ is a term used for someone with an unhealthy adoration of mayonnaise, such is the cult following of Kewpie. Since hitting the market in 1952, Kewpie has become Japan’s number 1 mayonnaise, second only to Soy Sauce as Japan’s best selling condiment. Its popularity has lead to Mayonnaise Kitchen, a Tokyo restaurant that uses kewpie in every dish it serves, including some cocktails and desserts.

Salsa roja‘Roja’ meaning red, this is a delicious salsa made from roasted red capsicums.

Texas hot linksThe national sausage of Texas, think bratwurst meets banger, this horseshoe shaped snag is full of flavour with a mild kick.

Angel dustA barbecue spice mix of salt, pepper, brown sugar, mustard, garlic and onion powder that is rubbed onto the meat before smoking.
