Welcome to the College Dean Tomas R. Guilarte Ph.D. We are excited to welcome Dean Tomas R. Guilarte to the FIU Robert Stempel College of Public Health & Social Work. Dean Guilarte joined the college January 2016 and has taken a hands on approach to enhance our college which consists of the Departments of Biostatistics, Dietetics & Nutrition, Environmental & Occupational Health, Epidemiology, Health Policy & Management, Health Promotion & Disease Prevention, and the School of Social Work. To date Dean Guilarte is focusing on initiatives to engage faculty and expand research opportunities. We are delighted that Dean Guilarte has taken a special interest in our Department of Dietetics & Nutrition and has met with several of our faculty members to discuss opportunities for growth. !

In research, Dean Guilarte is a leading scientist, educator and academic leader, Guilarte’s research has focused on mechanism-based neurotoxicology and neuroscience using behavioral, cellular and molecular approaches, ranging from studies using primary culture of neural cells to the application of brain imaging technologies. He is recognized worldwide for revealing the effects of low-level lead exposure on the central nervous system during development, and subsequently developing therapies to reverse these neurodegenerative effects.

Dean Guilarte comes to FIU after success as the inaugural Leon Hess Professor and Chairman of the Department of Environmental Health Sciences at Columbia University’s Mailman School of Public Health. Before his time at Columbia, Guilarte spent 30 years as a professor and researcher at the Johns Hopkins University Bloomberg School of Public Health.

Dean Guilarte holds a B.S. in Zoology and an M.S. in Medical Physics from the University of Florida, as well as a Ph.D. in Environmental Health Sciences from Johns Hopkins University Bloomberg School of Public Health.

Faculty Highlights DR. DEBORAH ABEL Dr. Deborah Abel, Clinical Assistant Professor of dietetics and nutrition at FIU, received the prestigious 2016 Rickard Leadership in Pediatric Nutrition Award from the Indiana University School of Health and Rehabilitation Sciences. This annual award is presented to a former alumna or graduate student who has made outstanding contributions to the field of pediatric nutrition. 8)2!TB$@!7$>$@*?$7!&!a:$7/&,)/9!F4,)/,/*6!1)&74&,$!.$),/5/9&,$!:)*')&+b that is fully online and available anywhere in the world. She is a 2012 graduate of the PhD in Health and Rehabilitation Sciences program at Indiana University and in 2003, completed the Pediatric Nutrition Fellowship at Riley Hospital for Children, Indianapolis. Upon completion of the fellowship, Dr. Abel was the pediatric clinical dietitian in the Newborn Intensive Care Unit (NICU) for 10 years. In this position, she developed a nutritional care system at the bedside that was patented. DR. MARIANNA K. BAUM Dr. Marianna Baum, has been selected to receive an FIU top scholar award by the provost Kenneth G. Furton. Her research concentrates on the relationship between nutritional status, disease progression and mortality in HIV infection. She has been the PI of more than forty NIH grants totaling more than $50 million. Most recently, she secured a $5.4 million grant to follow a cohort of 1,500 HIV infected and non-infected drug users and nonusers to investigate the effects of HIV, hepatitis C and drug abuse on ,-$!?&,-*'$6$%/%!*5!@/>$)!7/%$&%$2!=-$!5/67/6'%!5)*+!8)2!V&4+b%!)$search have been applied to community-based interventions to improve health and to reduce HIV-related health disparities and inequalities in the US and in developing countries. She is a professor at FIU in the Dietetics and Nutrition department and is an admired scientist in the area of nutrition, metabolism and HIV/AIDS and was the first scientist to investigate the relationship between HIV infection and micronutrient status. In addition to her research, she has been supervising personnel and mentoring multiple post-doctoral and graduate fellows. She also develops and initiates new research programs, networking and collaborating with investigators at other universities and with federal officials in order to identify research priorities and achieve funding.

Retirement Celebration for Dr. Zisca Dixon

FIU said goodbye to professor Dixon after 22 years. Dr. Zisca Dixon, Associate Professor and the director of the Department of Dietetics and Nutrition at Florida International University retired on November 17th, 2015 after 22 years dedicating her life to the service of students and education. She is known as professor, a scholar, a mentor and a great leader for all of the dietetics students. Most importantly, she had been developing such fantastic friendship with her students. Collectively, her published articles have gotten over 200,000 shares on social media and have had over 500,000 views. She will be working with her major professor, Dr. Adriana Campa, with the HIV/AIDS population. Newsworthy: New Student Club Represents Vegans on Campus

The number of people following vegetarian’s diet is increasing and according to the statistics released, 33 percent of Americans eat less meat than they did seven years ago. While the university offers a few vegetarian-dining options, finding highly nutritious vegetarian and vegan meals can be challenging. This spring semester, freshman dietetics and nutrition major, Stephanie Bird took it upon herself to change this by founding a plant based society at FIU. Bird’s mission is to help people understand that it is easy to keep a plant-based diet on a college budget, using examples like finding premium fruits and vegetables at the local farmers market. The club has already more than 100 members.

A Peruvian Experience Trip to Peru Dr. Huffman was invited by the University of San Ignacio De Loyola of Lima Peru to kick off the week of events leading to the World’s Largest Quinoa Salad for Guinness world record. She was accompanied by one of Dietetics and Nutrition BS students Maria Bustamante. In her two day trip Dr. Huffman participated in a press conference, visited Nutrition Department and consulted with the University officials about collaborations in the future. Dr. Huffman was hosted by the Universities President Dr. Salas – Bravo and Founding President Raul Diez Canseco.

The Largest Bowl of Quinoa On Wednesday the twenty-eighth of October at 12 in the afternoon Florida International University broke Guinness World Records record!! The event was held in Florida International University Modesto Maidique Campus, also had the support of Peruvian consul in Miami, Cesar Bustamante and some other local authorities. A team of six food industry engineers, three chefs from Universidad San Ignacio de Loyola (USIL), and several cooking students from Peru, Panama, El Salvador, among other countries were participated. The Peruvian Chef, Rosa Polo led the team. The challenge was to cook 500 Kilos of Quinoa, but the team managed to prepare 716.35 kilos of Quinoa salad. We can't have any ingredient prepared beforehand, so the process of creation and cooking is a continuous process.” At the end, the guests enjoyed the Quinoa salad and the rest was distributed among two charities in Miami-Dade County.

Student Spotlight: Maria Bustamante was the initial contact between D&N and USIL. She initiated the ideas to raise interest in quinoa, which has a very favorable nutritional profile due to its high protein and fiber content. Dietetics and Nutrition Department of the Robert Stempel College, Universidad San Ignacio de Loyola in Peru and its Miami outpost, San Ignacio College; the local Peruvian Consulate; and the Frost Art Museum at FIU all played a part in achieving the single platter of quinoa salad that weighed in at more than 1,300 lbs. Student Achievements Alicia Sneij Alicia won the Clara Augustine Public Health Scholarship Award from Florida Academy of Nutrition and Dietetics (FAND) with the amount of $1000. This scholarship was established in 2012 for the students who have been enrolled in an MPH, Master's or Doctoral program with an emphasis in public health. Alicia is a 2nd year PhD candidate in the Department of Dietetics and Nutrition at Florida International University ;(CM<2!G-$!$&)6$7!-$)!B&9-$@*)b%!7$')$$!/6!B/*@*'H!5)*+!M6/>$)%/,H!*5!#/&+/ &67!-$)!+&%,$)b%!7$')$$!/6!F4,)/,/*6!&67!8/$,$,/9%!5)*+!(CM2!G-$!/%!94))$6,ly a PhD fellow at the Center for Research on US Latino HIV/AIDS and Drug Abuse (CRUSADA). Alicia will continue to conduct research in HIV/AIDS for the remainder of her doctoral program.

Virginia Alcalde Virginia was awarded a full scholarship by the Binge Eating Disorder Association BEDA to attend their annual conference in the fall of 2015. Virginia through her combined knowledge of healing arts and integrative medicine has volunteered at Camillus House teaching yoga to homeless women and at Cleveland Clinic. Virginia has been an advocate and faithful practitioner of Yoga as a means of self-study and spiritual connection. In 2013, Virginia finished her first 300-hour training with Gaia Buddhai at Synergy Yoga Studio, and later that year she completed 200-hour training with founders of Skanda Yoga, Ken Von Roenn and Lina Vallejo, who continue to be her mentors. She also studied other fields of spirituality and healing arts like Vipassana meditation, aromatherapy, Thai Massage and energetic work. Since 2013 she has been teaching Yoga and meditation in Miami-Dade and Broward County. Virginia is currently pursuing a degree in Dietetics and Nutrition at Florida International University.

Camila Pin Each year a group of enthusiastic and responsible FIU students are selected to become Orientation Peer Advisors. These special students are trained to assist with all new student orientation programs throughout the year as well as other programs for new students and their families. In this capacity, they serve as resources for new students and their parents, they assist FIU staff with planning and implementation of the programs, and they are viewed as student leaders among the University community. This year Camila was truly instrumental in the success of the DN new student orientation presentation. As the only DN Orientation Peer Advisor, she provided guidance and insight to the newly admitted DN students on what to expect during their first year at FIU. Her willingness to go above and beyond her voluntary duties demonstrated true Panther Pride. We commend Camila on a job well done!

Where Are They Now? Marisa Fineberg Marisa graduated from FIU with her Master’s in Nutrition and Dietetics after receiving her Bachelor’s degree in Marketing from the University of Central Florida (UCF). She completed her Master’s project with Dr. Valerie George, which was recently published in Topics in Clinical Nutrition. She is currently employed as a renal dietitian at DaVita Healthcare Partners and has previously worked as a wellness dietitian at Nicklaus Children’s Hospital and an inpatient clinical dietitian at Plantation General Hospital. Currently the President of the Broward Academy of Nutrition and Dietetics, Marisa was voted Emerging Dietetic Leader in Broward County and Recognized Young Dietitian in the state of Florida. She recently opened a private practice and plans to continue her education in pursuit of an MBA.

Irene Hatsu Irene Hatsu is currently an Assistant Professor of the College of Education and Human Ecology at the Ohio State University, teaching in the Department of Human sciences Administration. She is also ,-$!M6/>$)%/,Hb%!YQ,$6%/*6!G,&,$!G?$9/&@/%,!5*)!(**7!G$94)/,H2!T%!&!9*++46/,H!64,)/,/*6/%,0!C)$6$!D*)N%!,* improve the nutrition and health of vulnerable, low-income and chronically ill populations through evidence based interventions. Her research focuses on understanding the relationship between food and nutrition security as they relate to chronic diseases, and other health-related issues. Irene is currently working with the homeless youth, in an effort to understand their nutritional health needs, while developing nutrition therapies and interventions to improve their health and wellbeing, especially as related to mental health.

Sheila C. Barrett After graduation from FIU, Dr. Barrett accepted a full-time tenure-track position at Northern Illinois University (NIU) in Fall 2011 as an assistant professor of nutrition. She teaches, conducts research and community service. She is up for tenure this year. She published 7 papers from her dissertation which focused on adolescent obesity and related risk factors for type 2 diabetes and cardiovascular diseases. Her research plans include evaluating the National School Lunch Program; modifying lunch menus to match the Dietary Guidelines for American; and to help reduce obesity in adolescents. One manuscript validating photography as a method for determining food intakes of school children is currently under review with the Journal of School Health. Other plans include surveying homebound diabetics in DeKalb County with a view to implement strategies for helping them with control of their diabetes. She has successfully served as major professor for two students who have completed their thesis and graduated. Currently, she is serving as major professor for four other nutrition students.

Johanna Lopez Johanna Lopez, PhD, RD graduated with her doctoral degree from FIU in spring of 2015, and obtained a position at the Sylvester Comprehensive Cancer Center at the University of Miami almost immediately. Ruth Marcus

Ruth Marcus graduated from FIU with a Masters in Dietetics and Nutrition in 1999; became a CDE two years later. She currently works at Hollywood Memorial Regional South as a clinical dietitian and diabetes educator for the past 15 years. Also, she consults for various organizations such as ‘The Lighthouse for the Blind’, Drug and Alcohol Rehab Centers and Assisted Living Facilities. Notable The Five FIU Dietetic Interns at the Miami VA Healthcare System

The five FIU Dietetic Interns at the Miami VA Healthcare System: Ana Alfonso, Amy Faulkner, Veronica Garcia, Jessica Moya, and Marisa Stack were given the assignment of being in charge of the 2015 Feds Feed Families Food Drive by the Medical Center Director, Paul M. Russo, MHSA, FACHE, RD. All four previous years that the campaign took place at the Miami VA, there were goals of 2,000 pounds of non-perishable goods. For 2015, Mr. Russo, with high expectations from the dietetic interns, decided to up the goal to 8,000 pounds. The food pantry chosen by the dietetic interns was American Veteran Newspaper Inc., which primarily supports homeless and food insecure Veterans in South Florida. The interns took on the food drive with determination, passion, and fresh eyes on the possibilities of what the campaign could entail. The final amount of poundage collected and donated was 24,500 ?*467%0!`R^e!*5!,-$!'*&@2!=-$)$!D&%!+*)$!c3&@@!*5 (&+$)%d!;/67/>/74&@%!D-*!7*6&,$7!KJR!@B%!*)!&B*>$<!,-/%!H$&) than any previous year, and the interns received countless complements on how unique the campaign was from previous years. There was a sense of pride and morale from the staff at the Miami VA throughout the entire food drive. Fundraising for World Health Dan Mucerino an undergraduate dietetic and nutrition student hosted a fundraiser where 100% of the money benefited Global WATER Brigades Nicaragua due to his passion and nutrition commitment. This event was held at the Four Seasons Hotel in Miami, FL on Friday, November 13, 2015. Global Brigades is the largest student-led global health and sustainable development organization. This project not only raised money for Nicaragua but also brought awareness about the world water crisis. !
