THE WINE FOUNDRY

As we prepare for vintage number six, we remain focused on setting the standard for next generation winemaking by sourcing from legendary vineyards, utilizing the latest tools and pushing for even higher standards. This commitment to quality is our way of assuring your wines rival anything on the planet.

In search of unique flavors, we’re proud to introduce new vineyards, varietals and growing regions. In addition to the Pinot Gris on page 20, we’ve inked contracts for Pinot Noir from the Russian River and Sangiovese from Paso Robles, an exciting growing area noted for mouth watering Red Blends and Rhônes. In another Foundry first, we’ve crossed the summit of Mt. Veeder into Sonoma’s Moon Mountain District for our inaugural Cabernet Sauvignon from Sonoma County. Expect additional surprises throughout the next few months.

While reviewing, note the television icons, which link to videos providing updates and more information on special winemaking projects. The binocular icon next to “Wines to Try” links to storefronts where you can purchase wine produced from that vineyard. This provides quick access to different interpretations of wines made from these acclaimed fields.

Welcome to the 2017 Vintage.

Cheers, THE WINE FOUNDRY TEAM

THE PROPRIETARY WHITE PROJECT

Stick in the mud traditionalists may balk, but Proprietary Blends are of the now; unique takes that push boundaries while highlighting the strengths of individual components. For our Proprietary White, the winemakers co-ferment Chenin Blanc, Gewürztraminer & Riesling completely dry in stainless steel. Lean, light and refreshingly crisp. After the success of the 2015, we’re excited to offer clients another opportunity to remove the shackles of convention and toast to the freedom of flavor.

THE PROPRIETARY RED PROJECT

Rules are meant to be broken. Each year, the winemakers pilfer from a special selection of barrels to craft the foundation for our Proprietary Red Blend Project. We cast aside tradition in an attempt to craft the most pleasurable and hedonistic base wine on the planet. You work with the winemakers to shape the aromas, flavors and textures through blending.

THE ROSÉ PROJECT

In year’s past, we remained secretive about our annual Rosé Project because our unique approach made it impossible to determine how barrels would be produced. Toward that end, it remained reserved for those in the know. However, in a Foundry first, the winemakers are sourcing grapes specifically for a traditional Tavelian method of pressing whole clusters of grapes. By purchasing grapes specifically for the Rosé Project, we can dial in the ideal ripeness level at which to pick for bright aromatics and razor sharp acidity.

THE WINEMAKER PROJECTS

EACH YEAR, THE WINEMAKERS FLEX FERMENTATION MUSCLES AND FOLLOW ENOLOGICAL PASSION THROUGH A UNIQUE SERIES WE CALL THE PROJECTS.

THE SUPER TUSCAN PROJECT

Inspired by the complexity and depth of Super Tuscans, during the 2016 vintage, the winemakers introduced Bordeaux varietals into Sangiovese with stunning results. Following our inaugural success, we're excited to continue the program. Clients build upon the foundation by having access to Cabernet Sauvignon and the other Bordeaux varietals when blending.

THE ORANGE PROJECT

What is Orange wine, you ask? Click the television icon to your left and listen to Patrick and Stu tell you all about it.

AVA: Clarksburg, base of Chenin Blanc and either Gewurztraminer or Riesling – you do a final blend and taste along the way with your winemaker.

THE SPARKLING PROJECT / BLANC de BLANCS & BLANC DE NOIRS

Following the success of 2013, when these sparkling wines received scores of 93 points and 96 points respectively, we were excited to continue the Sparkling Project. In 2015, we crafted two sparkling wines from Sangiacomo Vineyard using Méthode Champenoise.

Both the Blanc de Blancs and Blanc de Noirs were fermented bone dry and we inhibited malolactic conversion to maintain bright acidity. Classic Brut style. Light, crisp and refreshing.

THE STAGECOACH PROJECT

This study in terroir is the ultimate in luxury wine for the serious collector. Built around Cabernet Sauvignon, Cabernet Franc and Petit Verdot from legendary Stagecoach Vineyard, we pull out all the stops, including sending you the actual barrel after your wine is bottled. From grape to glass, you’ll collaborate with your winemaker, and the experience includes a viticultural tour of Stagecoach and lunch at the famous Rutherford Grill. *Only four barrels of the Stagecoach Project are offered each vintage.

The packaging included with your barrel is gorgeous: • 20 cases of 750 ml Aleka glass, waxed with a tapered label to match the bottle • 4 cases of 1.5 liter Magnums, waxed • 3 x 3 liters, waxed and etched inside individual boxes

5CABERNET FR ANC

One of the largest, most beautiful and highly acclaimed vineyards from which we source, Stagecoach climbs between 900 and 1700 feet up the southern face of Pritchard Hill to Atlas Peak. The site is planted to a wide range of varietals and rootstocks and features several distinct microclimates. Our Cabernet Franc is from the most sought after section – Block I. This stretch of vines is lower-yielding than most of the vineyard thus giving explosive aromatics and rich fruit. Stagecoach Vineyard is rich in story, rock and perennial high scoring wines.

Structured red fruit and elegance, soft berry layers into refined minerality and light herbaceous notes.

Broken Rock is strategically placed just off Silverado Trail at the foot of Atlas Peak. Western exposure on the slope provides plenty of ripening afternoon sun, thus delivering the best of both worlds - brawny hillside structure and rich valley floor flavor. Elite vineyard designer & operator, Bill Hill, owns Broken Rock. The fields he has developed are consistently found in the WS Top 100.

This field consistently produces extremely concentrated Cabernet Sauvignon with purple-black color and ripe, dark fruit aromatics.

We’re geeks; always keeping eyes wide and ears to the ground with the goal of scoring fruit from a trophied site. The trick is knowing the bloodline. While you may not know the name of the field, you know the wines the fruit has gone into. When the Spring Mountain Cabernet usually reserved for BV’s legendary Georges de Latour quietly became available, we pounced. The vines, which eek out just two tons per acre, cling to the hillside at this steeply terraced property. The nutrient poor soils and high elevation result in wines of extremely concentrated fruit and powerful structure.

Archetypical mountain grown characters, with dense black and blue fruit on the nose and palate, backed by bold structure. Majesty in a bottle.

One of the most historic and sought after properties in the world – G3, as we call it, was originally owned and planted by Thomas Rutherford in 1895. Georges de Latour, founder of Beaulieu, purchased the site in 1928 and it became the home to BV’s Rutherford Cabernets made by elite winemaker, Andre Tchelistcheff, throughout the ‘60’s and ‘70’s. The site was then purchased by Beckstoffer Vineyards in 1988. Andy, Dave and team have replanted using modern clones, trellising and spacing to yield optimum quality. Wines from this field consistently score in the high 90s.

J Squared Vineyard is the home ranch of Jan Krupp and his wife… also named Jan. Confusing as that may be for the home life, what is not confusing is Jan’s dedication to growing the best Bordeaux varietals, specifically Cabernet Sauvignon in the Napa Valley. The field is planted to just under 8 acres of Cabernet Sauvignon, clone 47. Clone 47 is the “clean” (virus resistant) version of the French clone 337. Just like its French twin, it is known to be a superior clone and produces well balanced wines with a high level of age-ability. The wines from this site will be later ripening as with all Coombsville properties.

Picture Book Vineyard is nestled east of Rutherford at the foot of the Vaca Range. The 7 acre property sits atop well-draining volcanic and rocky-gravel soils. Where some properties on the eastern side of the Valley are noted for sledgehammer interpretations of the grape, Picture Book tells a different story. The unique microclimate, noted for ripening warm sun, is tempered by howling early evening winds which cause the vines to shutdown, thus enabling the grapes to assert a classic Cabernet acid/tannin profile. Those seeking balance, restraint and elegance will be drawn to Picture Book.

RED TAIL RIDGE VINEYARDLeave cookie cutter interpretations of mass produced Cabernet Sauvignon to the soulless. We seek unique, precision-farmed properties, which result in terroir driven wines. We found a gem on the sun splashed eastern face of the Mayacamas Range on Moon Mountain. This is rugged territory. If an experienced and/or slightly deranged backwoods hiker were to brave the rattlesnakes, mountain lions and poison oak by scaling beyond the summit, they would descend into Mt. Veeder on the Napa side of the mountain. Vines at Red Tail Ridge are planted in crumbled volcanic soils just above the fog line. The unique combination of lengthy sun exposure is tempered by the fog nipping at the heels of the vines; resulting in an unmatched balance of fruit, acidity and tannins. After 5 years, we finally found a Sonoma County Cabernet Sauvignon worthy of inclusion in the Vineyard Guide.

Located in the heart of Napa Valley, the Oakville District has given way to some of the most accomplished and acknowledged Cabernet Sauvignon vineyards in the world. The climate in Oakville is unique among other Napa Valley AVAs due to its mid-valley positioning; it is southern enough to attract morning fog from the San Pablo Bay, yet far north enough to bask in the warm afternoon sunlight. This O’Shaughnessy Vineyard site on Oakville Cross Road, with Plumpjack to its right and Groth Reserve blocks to its left, was planted in 2007 and is cropped to about 3 tons per acre, which translates to low-yielding/high concentration berries.

RODGERS CREEK VINEYARDRodgers Creek Vineyard is a 297 acre ranch (83.5 acres planted) sitting as a crown jewel on the very eastern edge of the Petaluma Gap. Planted in 2001, the vines have an east-west orientation, allowing the canopy to protect the fruit from steady winds on the hill. The site is about 600 feet above sea level and is so uniquely located that the steep, terraced blocks get plenty of afternoon sun and wind. Constant wind and fog from the east meet temperate weather from the Bay, providing us with later ripening Pinot Noir and Chardonnay. The yields from this mountain site are just around 2.5 tons per acre. Did we mention the view? It’s incredible, a clear day reveals 180 degrees views from Napa to San Francisco, Marin and Petaluma.

STAGECOACH VINEYARDIn recent years, a fresh breath has begun to re-examine tired assumptions about grape varietals. Once reserved for blending tiny amounts into Cabernet Sauvignon or Merlot, the time for varietally designated bottlings of Petit Verdot has arrived. We’re honored to source our ‘PV’ from Stagecoach, one of the mostly highly-acclaimed properties on the planet. Our block delivers a mouth-filling beast of dense black fruit and haunting ink backed by rip-roaring tannins. Petit is anything but small. It is quite literally how you would draw it up if seeking to plant Pinot Noir. Addison Trumbo Vineyard is located on Westside Road, bordered by Matrix and Twomey. CRESTON RIDGE VINEYARDFor years, clients requested fruit from Paso Robles. We've always loved the region, but refused to pull the trigger until we found a vineyard which delivered the flavor and structure we were seeking. We found our answer at Creston Ridge. This gently sloped vineyard is oriented with a southwest exposure for maximum exposure. Here, sandy soils provide excellent drainage and limit the vigor of the vines, ensuring tiny berries packed with flavor. Lush red fruit on the nose and palate are supported by a complex briar patch notes and distinctive black pepper pop.

Those seeking a varietally labeled Sangiovese can shape the nose and palate with Petite Sirah, Syrah and Zinfandel. For a super Tuscan inspired blend, we’ll look to Napa to incorporate Bordeaux varietals.

For several vintages, we’ve walked dozens of Sonoma sites in search of top-flight Syrah. We located the grail in Dry Creek. Lush and fruit-driven in its youth, a few years in bottle highlight complex earthy notes and subtle Indian spice. Farmed organically since 2003, Dry Creek Bench Vineyard incorporates principals of biodynamic viticulture. Rumor has it there may be some Estrella River clone interplanted among the Durell clone. Whispers intone that cuttings of the Estrella River (Chapoutier) clone were smuggled from Hermitage to California in a suitcase. We were giddy with the results of our inaugural vintage. White Hawk Vineyard sits on the southern facing slope of Cat Canyon some 20 miles from the ocean. The marine influence causes brisk morning fog to envelop vines before giving way to ripening sun. Planted at an elevation of almost 900 feet in ancient nutrient depleted sand dunes, vines are forced to work extra-hard to survive. (This sounds cruel, but when it comes to flavor, the practice can't be beat). White Hawk is custom-farmed using sustainable and primarily organic viticulture methods. The yields are minuscule and the berries pack a punch.

One of the most important qualities about this site for Viognier is the consistent cycle of gentle warming and cooling each day, often the result of foggy mornings and evenings. This helps preserve the balance between attractive natural acidity and the opulent flavors typical of Viognier. This cycle of warming and cooling also leads to a lengthier period of ripening during which flavors and aromas can develop gradually and with greater depth and complexity. The Viognier at Catie’s Corner was budded onto existing rootstock in 1995.

Typical texture and roundness on the palate as you’d expect from a Viognier. Bright, perfumed nose, pronounced citrus and floral characteristics balanced by vibrant acidity.

29ZINFANDEL

Jigsaw is terraced into the slopes of Bradford Mountain in Dry Creek Valley; ground zero for world-class Zinfandel. Myth and intrigue surround the vines at Fred Peterson’s property. Our block features the “Primitivo” clone, offering lively acidity and notes of dark cherry, pomegranate and graphite.

The Primitivo clone is very interesting in that some people believe it’s Zinfandel, while others argue it to be a different varietal entirely. Although Carol Meredith, at UC Davis, seemed to set the record straight through genetic profiling, for many, the mystery continues.

Just as creating wine becomes a personal journey, your unique life-stories and events often become the foundation for branding and label design. When naming your wine, some questions to ask are:

• What led you to make wine? • Is your wine dedicated to someone special and what is the relationship? • Is there a special place that you would like to honor? • What is your unique story and what makes that story uniquely you?

We feature several bottle shapes, sizes and weights from which to choose, along with the ability to create customized treatments such as branded corks, embossed labels and silkscreened or etched bottles. If it can be done, we will work with you to make it happen.

Don’t tell the Winemakers, but many feel design and packaging are the most fun stages in the process.

And good news – the design fee for a standard label and packaging is included with the purchase of your first barrel.
