Plant derived poly- and oligosaccharides, exudates and mucilage fractions for

texturing multi-grain and hybrid ingredient combinations in functional foods with

improved cooking quality and organoleptic advantage and the process thereof.

Claims: Identification and application of certain carbohydrates/polysaccharides/mucilages based plant fractions and

exudates which can be utilized for various functional food preparations and food matrices with advantage

over conventionally used gums/resins/secretions etc.

Plant derived materials as tools to combine fine and coarse grain flours from cereals, millets and other plant

species for nutritional advantage.

The invented polysaccharide fractions providing better texture, high nutritional value, ability to contain and

deliver bioactives and provide a stability matrix to functional food formulations The preparations ranging

from pasta, spaghetti, noodles, cookies, crackers, breads, soups and so on with gut compatibility and gut microflora colonization.

Use of legume and other protein rich seed pulp extracts as growth media ingredient

for bacterial cultures, fermentation and synbiotic formulations and the process thereof.

Claims: A process for preparation of the seed pulp extract from legumes that include Okara and application of the extract

as an enriched nutrient source for promoting growth of bacteria.

An optimized medium for the growth of the culture.

The use of Okara and Okara extract for prebiotic and probiotic formulation leading to a synbiotic product with

better titre and gut colonization potential due to adaptation advantage of Okara in medium to synbiotic

formulation.
