Everything we do at Project Angel Heart begins here.We reach out to find the highest quality ingredients,

bringing the wholesome, nutritious, enriching benefits of freshness to our clients.

Dear Friends, Sometimes in order to reach the next step, we must have the courage to jump into the unknown. Five years ago, whenProject Angel Heart operated out of a much smaller kitchen with minimal freezer space, our Board of Directors was facedwith a choice: we could stay the path, remaining a small organization that provided an essential service to hundreds ofclients, or we could grow to reach more people. We had waiting lists that were crowded with those who had nowhere toturn and no time to wait̶people who needed the help we provide. And there were many more people who had neverheard of Project Angel Heart̶people fighting for their lives against life‑threatening illness without the nutrition theyneeded.

The choice was easy but required a giant leap of faith. We leapt. We purchased a building three times larger than ourprevious home and began planning, inviting gifts of goods and services, and raising funds. This bold move, and the hugeamount of volunteer and donor support that followed, resulted in a new home for Project Angel Heart with a beautifulcommercial kitchen, storage space, and offices.

Having now operated out of our new building for more than a year, Project Angel Heartʼs staff and Board of Directors areplanning for future growth. We now have the capacity to eventually quadruple the number of meals we provide, helpingus get one step closer to the future we envision, one in which any person challenged with illness can focus on healingthrough the power of nutrition.

So, in 2012, we launched a new strategic plan, GROW30, focused on meeting the demand for home‑delivered meals inDenver and Colorado Springs and increasing community awareness and engagement. Ultimately, with your help and thehelp of many others, we plan to deliver 30 percent more meals annually by 2015.

Ourprevious and future goals have, and always will, depend upon Project Angel Heart expanding its reach̶encouragingmore donors and volunteers̶so that we can serve more clients. Our staff and volunteers put in the amazingeffort to dice, slice, mince, and julienne theincredible volume of food we prepare, thefood that will eventually reach the people itwill nourish and help to heal.

Highlights of 2012u In January, after completing a $7.1 million capital campaign, we moved into our new facility

at 4950 Washington Street. We now have the room we need to continue growing!

u We were thrilled to be named the Large Nonprofit Organization of the Year for 2012 by the Denver Metro Chamber of Commerce. Each year, this award recognizes a nonprofit organization that makes outstanding contributions to the Denver metro community.

u More than 300 restaurants participated in Dining Out for Life® on April 26, 2012, helping us to raise more than $300,000 to provide meals for our clients fighting HIV/AIDS.

u In 2012, we had 366 Bread & Butter Club members, a group of extraordinary donors who commit to supporting our mission through monthly donations of $30 or more.

u An amazing 8,844 volunteers contributed 57,191 hours of their time to our mission in 2012 by preparing, packaging, and delivering meals, as well as helping out in the office and at fundraising events.

u Project Angel Heart values operating in the most sustainable way possible in regards to our carbon footprint, in hopes of improving quality of life not just for our clients but for our organization and the community as a whole. With the move into our new building, we had the space to plant our own garden which provides some of the food we use in our clientsʼ meals.

More than 500 community leaders and art lovers joined usfor the 12th annual Art for Lifesilent art auction event on August 24, held at AbendGallery in Denver. Inspired bylive models, local artists also created instant works of art thatwere then auctioned off to guests.Many thanks to ANB Bank,Michael R. Ragsdale, MD andKevin A. Our clients aren’t the only ones who find themselves healing. Our common compassion not only reaches those we serve, but brings all of us together for the common cause of wellness.

u During the devastating wildfires in Colorado Springs in late June, our volunteersand staff worked hard to make sure Colorado Springs clients still received their meals. Meal deliveries were impacted by road closures and home evacuations, but most meals were delivered without problems, and clients who had been evacuated from their homes were able to pick up their meals.

u The Associated General Contractors of Colorado awarded Project of the Year honors to Jordy Construction, Sink Combs Dethlefs, and Project Angel Heart. The award recognized the two years of planning, the extraordinary design, and modernization of the kitchen, office, and distribution spaces in our new facility.

u The Client Services team shifted from an annual to a six‑month health update recertification process in August. This change ensures we meet best practices, better evaluate and meet the nutritional needs of individual clients, and collect their most current personal contact information.

u On November 8, more than 750 guests attended A Taste for Life at the Hyatt Regency Denver, enjoying samples of delicious treats and tasty drinks to support Project Angel Heartʼs home delivered meal program. Special thanks to presenting sponsor DaVita, executive chef sponsor HealthONE, and the many other generous sponsors of A Taste for Life in 2012.

u Pie in the Sky, presented by Anadarko, was back and better than ever. With the help of almost 100 dedicated pie sellers and dozens of pie‑selling teams, we sold nearly 2,000 pies in November, just in time for Thanksgiving. Special thanks to Anadarko for also ensuring all Project Angel Heart clients received pumpkin pie for Thanksgiving and to Bluepoint Bakery for donating 100 percent of the freshly baked pies for this fundraiser.

Dozens of volunteers helped Project Angel Heart distribute pies for our annual Pie in the Sky fundraiser.

It takes a full community. Project Angel Heart welcomes all hands. There is much to do.

Serves 900:8 cases eggplant½ gallon tahini (sesame seed paste available at most supermarkets)1 qt garlic cloves, peeled2 C lemon juiceWater as needed½ gallon extra virgin olive oilSalt and pepper to tasteSumac powder (available at spice markets̶has floral, lemony flavorand bright red color) for garnish.

l Pierce eggplant and place on lined sheet pans. Cook in the combi oven on combi setting (steam and roast at the same time) until deflated, about 25 minutes. Place in blast chiller to cool.

l When cool, cut eggplant in half and scoop out the flesh from the skin into a 22 gallon lexan tub. Compost the skin.

l Add the tahini, garlic, and lemon juice to the eggplant pulp and bazooka (mix with an immersion blender) until pureed and well mixed. If needed, add some water to aid in mixing.

l Have one person add the olive oil into the mixture with a slow and steady stream while another person bazookas it in order to emulsify the oil into the baba ghanoush.

l Taste and season with salt and pepper. Place into portion cups and sprinkle with a little sumac for color and flavor.

Baba ghanoush is basically hummus, but the garbanzo beans are replaced with eggplant. We often make baba ghanoush to go with some of our Middle‑Eastern or Mediterranean favorites that we prepare for clients, like kafta (Lebanese‑styleground beef), tagine (Moroccan‑style stew) or Turkish‑spiced fish fillets. Like hummus,baba ghanoush is great with pita, but can be dipped with just about anything elsethat you deem dip‑worthy. Feel free to add more garlic if you like̶I like my babaghanoush with a real garlicky bite! For a smoother garlic flavor, try roasting the garlic before adding it. We often get eggplant for this recipe from our amazing community gardening partners, making this treat exotic and local at the same time. –Chef Jon

Serves 4‑61 large eggplant3 T tahini2 garlic cloves1 T lemon juiceWater as needed3 T extra virgin olive oilSalt and pepper to tasteSumac powder for garnish (optional)

l Preheat the oven to 350 degrees.l Pierce the eggplant with a fork and place on a cookie sheet.

Place in the oven and cook until deflated, about 25 minutes. Allow to cool.
