This ingredient is derived from 10000 pounds of Sweet peppers and yields only one pound of capsinoids. The capsanoids are found in the lipid phase of the peppers, and is a discovery Ajinomoto has made. However, new published studies demonstrated significant a metabolic effect of 10 mg in young healthy males. The fact is that this thermogenic sweet pepper compound is an analogues of capsaicin, but is non- pungent, gives the ingredient extra potentials. This enables the ingredient to be used by more consumers chilli lovers or not. The active ingredients, capsinoids, are approximately 1,000 times less pungent in contrast to capsaicin. This pungent component found in hot chilli peppers creates the feeling of burning and heat. Compared with the pungency threshold (the lowest noticeable concentration), according to an Ajinomoto Co.'s study. The ingredient Capsiate Naturareceives the NUTRAFILES award for novelty as no other in the industry has so thoroughly studied and process developed on this component. The Novelty score is 7, and the total score is 33 among the top 20 ingredients this time. Certainly the long term goals in the regulatory area are still to be met. A score on 4 in Nutrafiles may soon become 6 or even 7.

IFT, Institute of Food Technologists, annual conference and Trade show took place in Chicago this time. The show was filling less than a hall this time, but there were still many visitors.

Natural colorants – and health claim Many suppliers of colours from domestic and Asian countries were present, and in generally had red colours from paprika, yellow from marigold, red/orange from tomato, carrot and pumpkin, blue violet from berries, and greens from spinach, chlorophyll and kale. The functional and formulation services were the competitive edge for most companies.

Fibres as fortifiers / replacers We observed fibres in diversity as never before, soluble fibres and also the definitions of origin and quality, Organic fibres based on oats, pea, barley and soy to be able to go the whole way in fibre rich bars, cereals and snacks.

Sweeteners Natural sweeteners were everywhere, in the cafeteria GLG sponsored Stevia blend for the coffee. But also Go Lu Hong was represented many places.

Low Sodium Various low sodium products were presented on the floor, most were potassium conversions, but also a number were natural evaporates of sea salts, which really had different flavour experiences to offer.

Omegas Omega lipids were demonstrated in various food applications, from bakery to beverages. Main focus was on hearth health communication. All in all the show was good, but few surprises. Exhibitors Total: 567

The International Society of Antioxidant in Nutrition and Health (ISANH) decided to organize the 2

World Congress on Immunity Ingredients to be held on Malta on October 28, 2010. The aims of Malta Immunity Ingredients 2010 are to bring together scientific and industrials from the food and cosmeceutical sector to discuss the latest advances on immunity and health and how to boost the immune health system. Inside this topic it will be highlighted the relationship between immunity and oxidative stress and the potential applications of bioactives to prevent or treat chronic diseases and several pathologies related to the immune system. During Malta Immunity Ingredients 2010 we will emphasize on the innovations in probiotics, prebiotics and antioxidants applications (new fibres, bacterial strains…). A special communication will be dedicated to immune system of babies, seniors, obese persons and diabetics by these immunity modulators. During the congress, we will allocate a special time to discuss the latest regulations of the EFSA concerning the health immunity claims.
