Tea has been an important part of Fortnum & Mason since 1720, when it was one of the first products we ever sold. Three centuries later, we still take the business of brewing rather seriously – and nowhere is that truer than here, in The Diamond Jubilee Tea Salon.

Every visitor to our beautiful Tea Salon should expect to enjoy the very finest food, the most refined atmosphere and, naturally, the ultimate tea experience. That’s why our expert Tearistas are available to take you on a tableside tour through all things tea.

Our resident experts will help you sample a range of wonderful teas, tell the stories behind where our teas are grown and how they’re made, explain the fine art and ritual of tea at Fortnum’s, and teach you how to taste each cup like a seasoned sipper. You just might discover a new favourite blend along the way, too.

Further adventures in tea can also be taken in our beautiful Tasting Room, where groups of up to 10 people can enjoy a full tasting experience, during which our knowledgeable staff will take you on a detailed journey through a variety of blends.

A FORTNUM’S GUIDE TO LEAF GRADES

Tea leaves come in many shapes and sizes, and the technical descriptions of these leaves can sometimes be a little daunting to a curious tea drinker. That’s why we have assembled the following short list, which explains in simple terms what each leaf grade means in terms of quality.

FOP: FLOWERY ORANGE PEKOE Tea made from the end bud and the fine, tender first leaves of each shoot

GFOP: GOLDEN FLOWERY ORANGE PEKOE A variety of FOP with golden tips, from the very end of the bud

TGFOP: TIPPY GOLDEN FLOWERY ORANGE PEKOE A variety of GFOP with a very high proportion of golden tips

FTGFOP: FINEST TIPPY GOLDEN FLOWERY ORANGE PEKOEAn exceptionally high-quality FOP

STGFOP: SPECIAL TIPPY GOLDEN FLOWERY ORANGE PEKOE One of the finest tea grades made from the very first production of an exceptional crop of leaves

HOW WE MAKE OUR TEA

Different teas require different brewing temperatures. To ensure each pot is perfect, we brew our Black Teas at temperatures between 90° and 100°, while our Green and White Teas are brewed between 75° and 90°.

Black TeasFortnum’s was one of the first companies to bring Black Tea to Britain, starting in the mid-1830s. Visitors to Piccadilly have been enjoying the very finest in tea ever since.

1 HATTIALLI GFBOP ASSAM

Dark, full-bodied and with a distinctive spicy aroma, this Assam takes its name from the Assamese words “Hathi Alli”, meaning Elephant Road, and the name of a neighbouring elephant camp.

2 BANNOCKBURN, FIRST FLUSH FTGFOP1

Exclusive to Fortnum’s, this highly fragrant tea has notes of lemon and orange citrus, and a hint of apricot. The celebrated first ‘flush’ of the season, it is a superbly enjoyable Darjeeling.

3 TREGOTHNAN

It’s fitting that the first truly English tea is now available from Fortnum & Mason. The single estate is the very First Flush to be picked and has a clean, dry flavour reminiscent of a traditional Darjeeling

4 JUNGPANA SECOND FLUSH FTGFOP1

Classic ‘vintage’ Second Flush tea, from one of Darjeeling’s most famous tea gardens. Amber in colour, with a good balance of smoothness and dryness, rounded off by an excellent soft muscatel character.

5 MARGARET’S HOPE, SECOND FLUSH FTGFOP

A golden tea with a definite muscatel character, this second flush is from ‘Margaret’s Hope’ garden – so christened in 1927 when the estate owner’s daughter fell in love with the area.

6 KANGAITA, ORANGE PEKOE

Golden in colour and with a vibrant, refreshing flavour, this rare large-leaf tea is grown by a collective of 6,000 local smallholder farmers, who supply the green leaf for processing into black tea.

7 NEW VITHANAKANDE, EXTRA SPECIAL FBOPF1

A bright infusion with rich honey and caramel aromas, this top-grade tea is produced by the Pilapitya family, who have been master tea-makers since 1947.

Oolongs are large-leaved, partially-oxidised teasthat range vastly in character: from light, green and grassy varieties, to deep and extremely complex teas.

8 CASTLETON MOONLIGHT

A sweet, fragrant tea with hints of yellow fruit to taste, this Oolong-style tea is made from early second flush leaves grown in the highest fields on the famous Castleton Estate in Darjeeling.

9 IRON GODDESS

A beautiful orchid aroma and a smooth, creamy texture combine in this tea, which is made from the distinctive bunch-shaped Anxi Oolong leaf.

10 HONEY ORCHID OOLONG

Known for its orange liquor, floral aroma and honey-sweet aftertaste, this high-roasted tea from China’s Mt. Wudong is said by locals to boost heath and wellbeing.

11 DOAKRAJAI OSMANTHUS OOLONG

Made by Daokrajai Tea Estate in the Thai Highlands, yellow petals of the Osmanthu ‘Sweet Olive’ plant are added to Oolong, creating a bright tea with notes of apricot and peach.

Unlike black teas, green teas are ‘unoxidised’, meaning the leaves have been ‘preserved’ using heat alone – usually by steaming or dry-frying. The resulting leaves are typically green and grassy, in both appearance and flavour.

12 FINEST GYOKURO

These dark, polished leaves are typical of the Gyokuro style. A deep flavour accompanied by a sweet undertone.

13 SNOW DRAGON

A unique tea with a mild and mellow flavour that falls between a green tea and a silver needle. The twisted, downy leaves are seared in a wok and then dried.

14 ANJI BAICHA

A fresh and sweet tea with orchid-like aromas, the Anji Baicha is grown in the high mountain ranges and picked, in tiny batches, only when the leaves turn a distinctive opaque colour.

15 GENMAICHA

Also known as ‘The People’s Tea’ in Japan, this mild tea has distinctive nutty notes, thanks to the addition of roasted and popped rice to the green tea.

Made from the highest buds and leaves of the tea bush – or sometimes just the bud alone before it unfurls, the famous ‘Silver Tip’ – white teas are typically withered and dried in the sun. Handled and processed as little as possible, they are believed to contain the highest antioxidant content of any tea.

16 WHITE PEONY KING

Full-flavoured with hints of dark fruit cake, this tea is grown in the shadow of the famous Tailao Mountain – an area revered for producing the world’s best white teas.

17 SILVER NEEDLE PEKOE

A light and sweet tea which rewards multiple infusions, this top grade white tea is made from only the young, unopened buds of a particular bush variety called Da Bai Hao.

Now incredibly rare, yellow teas are made to a similar initial process as green tea, with small batches pan-fried, then wrapped in cotton or paper to allow a slight oxidation. The resulting flavours are smoother and a little more complex than green or white teas.

18 YELLOW BUDS

A sweet and mellow flavour with notes of apricot and pear, this special tea is made in Mannong – one of the oldest tea cultivation areas of the world.

Fortnum’s Famous BlendsOver the centuries, Fortnum’s have created new blends – sometimes even for very special individuals, with specific tastes in mind – and pioneered the discovery of new teas to surprise and delight our customers.

19 ROYAL BLEND

A beautiful tea with flavour notes of honey and malt, Royal Blend is made from low-grown Flowery Pekoe from Ceylon and uplifting Assam. Our signature blend since 1902, when it was created for Edward VII.

20 QUEEN ANNE

Robust, strong and smooth-drinking, the Queen Anne tea made its debut in 1907, our bicentenary year, and is made from a carefully-selected blend of TGFOP Assam and FBOP Ceylon teas.

21 JUBILEE

Mellow sweetness and golden brightness combine in this blend which is truly fit for a queen. Blending teas from India, Ceylon and China, this noble tea celebrates Queen Elizabeth II’s Diamond Jubilee.

22 WEDDING BREAKFAST

A rich, refreshing blend, created to celebrate the wedding of Prince William and Miss Catherine Middleton. It features large leaf TGFOP Assam, orange pekoe, and in recognition of the location of the proposal, Eastern Kenyan tea.

23 BREAKFAST BLEND

A robust, full-bodied and malty leaf tea made from unblended Assam. The broken leaves make for a strong brew – just what is required first thing in the morning.

24 IRISH BREAKFAST

Fortnum & Mason’s strongest tea contains a blend of expertly-selected Assam and Kenyan teas – the first provides maltiness, the second adds brightness.

25 AFTERNOON BLEND

The lightest tea among the famous blends features a fusion of teas from the higher and lower regions of Ceylon, which combine to deliver a light, refreshing flavour.

26 EARL GREY CLASSIC

Bright, fruity and ever-popular, our Earl Grey is made from black tea, and flavoured with aromatic and stimulating oil of bergamot.

Made from the same plant as black tea, Camellia Sinensis, green tea differs in taste and appearance because the tea leaves are heated after picking. This preserves their colour and prevents oxidation, giving us this subtle and delicate tea.

35 GREEN SENCHA

A typically delicate and sweet aroma is perfectlycomplemented by a flavour of fresh, grassy meadows.

36 GUNPOWDER

The tightly-rolled tea leaves of our Gunpowder Tea are said to resemble gunpowder pellets, giving this unique tea its name. Those pellets uncurl when brewed, producing this smoky and peaceful tea.

37 GREEN TEA WITH ELDERFLOWER

Fragrant, sweet, subtly zesty elderflower is a perfect partner to the gentle flavours in our green tea, as this very drinkable blend demonstrates.

38 GREEN JASMINE

This carefully selected green tea is allowed to absorb the natural scent of jasmine to produce an orangey-gold liquid. A delicate-tasting tea, with an alluring fragrance.

39 MOROCCAN MINT

Adding pure, roughly-torn peppermint and spearmint leaves to Gunpowder Tea follows a traditional recipe that is still all-the-rage in the bazaars of Fez and Casablanca. A little adventure in tea.

Single Origin Tea, as the name implies, is tea that is entirely picked in one country. An authentic way to enjoy tea, each cup delivers a real taste of the physical location in which it is grown. A must-sample experience for any tea purist.

40 DARJEELING FTGFOP1

This justly famous black tea from the bracing foothills of the Himalayas has a vivid, coppery infusion. The broken leaf grade gives a stronger brew that suits those who prefer to take their Darjeeling with milk.

41 ROSE POUCHONG

A Chinese speciality, this beautifully light and delicate tea is made with rose petals, which are interleaved with the tea as it dries and then left in the blend for decoration, ensuring that the visual appeal matches the flavour.

42 LAPSANG SOUCHONG

To give this tea its rich and smoky flavour, plucked leaves are withered over pine fires, pan-dried and rolled, then placed in bamboo baskets and smoked over smouldering pinewood fires.

43 ASSAM TGFOP1

A robust-tasting tea made from the delicate leaf tips of the Assam tea bush, this versatile and consistently excellent tea is a superb all-rounder.
