    What is Controlled Atmosphere? Controlled Atmosphere:

    The control of the chemical composition of the

    atmosphere surrounding a commodity by thecontinualaddition or removal of gases.

    Modified Atmosphere:

    The one time surrounding of a commodity with

    a mixture of calibrated gases prior to shipment.
