Welcome to Nordic Journal – Fall / Winter 2013 Nothing defines the Scandinavian way of life more than enjoying the contrasts in the changing seasons where the reason for wearing either lighter or heavier outerwear is obvious.

People dress up in warmer and more practical clothes, preparing themselves for harsher weather. And it is in this lifestyle where we find Nimbus reason to be.

Like so many seasons before, we aim to provide great outerwear that bridge functionality and fashion products that allow the full enjoyment of the active and modern way of life that we Scandinavians embrace. This season is no different, and with two upgraded styles in our large range of jackets we are ready to take on a chilly fall and cold winter.

Family ValuesBorn into a tradition of creating high quality, environmentally concious products, Anders Sandlund is the Creative Director and fourth generation tanner at Böle. The family owned company was founded in 1899 on the banks of the river Piteå, and is one of only four known tanneries in the world that still tan leather using spruce bark and water – no chemicals allowed.

From peaked shoes to backpacksThe company originally offered leather gloves, peaked shoes and harnesses for the flourishing local farming community, but as the Farmers Association launched a rubber boot that almost eradicated the traditional peaked footwear, the company had to reinvent itself. Many of their competitors were forced to close, or turn to industrial tanning using chemicals, but Böle stuck with the traditional method of tanning leather. Through the 1960’s and 1970’s consumerism increased, and the demand for products increased with it. Böle introduced the Böle bag along with several ladies’ backpack models, and have since continued to grow,

introducing quality products that have earned them the title of Purveyor to his Majesty the King of Sweden.

Traditional techniquesBöle now offers a wide array of leather goods including bags, card holders, mousepads and even original tanner aprons like the ones they use in their shop. Although not all leather is tanned at the workshop these days, the leather they use and products they offer are always made using the traditional techniques that favour spruce bark and water instead of harsh chemicals, and always with the same attention to detail and quality.

You can have items made to order so that you get your own unique product made from Böle. When is comes to producing their products, they are in no hurry, allowing the tanning process to take all the time it needs to ensure that the quality of their goods and their values are never compromised.

NEW NORDIC CUSINE

Northern lights have long been one of Scandinavia’s largest tourist attractions. With its intense colour play and flickering curtain of light coupled with dramatic and intense shapes, it gives an

impression of elegance and seduction that both surprises and moves.

Food Special

Northern lights are a perpetual experience in nature, but have only been a pleasure reserved for the few. The same can be said of the New Nordic Cuisine – for although it has existed for years, it has only been enjoyed by a few. It was not until the first decade of the 21st century that the world became aware of this culinary delight, and the rich possibilities that await exploration. The new Nordic Cuisine is what happened when a series of innovative chefs and pleasure-seeking enthusiasts explored and reinterpreted the traditional Nordic diet. These chefs and enthusiasts reinvented and further developed old preservation methods such as salting, drying, smoking and curing. This resulted in the tailoring and signing of the Manifesto for the New Nordic Cuisine in 2004.

One of the chefs behind the manifesto is René Redzepi (pictured), whose restaurant NOMA in 2010, 2011, and now again in 2012 was ranked as no. 1 at the ranking-list The San Pellegrino Award: 50 Best Restaurants in the World. In 2010 NOMA was crowned the Nordic’s best restaurant and won the Nordic Prize.

In January 2011, Geranium’s Rasmus Kofoed won gold at the World Cup at Bocuse d’Or in Lyon, while Sweden’s Tommy Myllymäki won Silver and Gunner Hvarnes from Norway bronze. Finland came in fifth place while Iceland was number seven. This places Nordic Cuisine in the league of elite, modern European gastronomy.

Scandinavians love to eat, and the New Nordic Cuisine

movement has grown popular all over the world, but what

are some of the Scandinavian traditions during fall?

NORWAY – FÅRIKÅLIn Norway, the last Thursday in September is dedicated to the traditional dish – Fårikål – which literally means “sheep in cabbage”. It consists of pieces of mutton with bone, cabbage, whole black pepper, and often a little wheat flour, cooked for several hours in a casserole, traditionally served with potatoes boiled in their jackets. In the 1970s the dish was elected national dish of Norway by the popular radio programme Nitimen.

DENMARK – ST. MARTINThe Feast of St. Martin is celebrated in Denmark on the eve of November 10th. Saint Martin was a monk that didn’t want to be a bishop, and in an attempt to avoid this, he hid in a goose pen, where he was betrayed by the cackling of the geese. He took the goose as his personal symbol, and celebrates his nameday in November when the geese are ready for killing. The goose has later been replaced by duck, as its size suits modern families better.

Makes about 25 kanelbullar

Dough25 g of fresh yeast

75 g of butter, 2,5 dl milk,0,5 dl sugar, A pinch of salt

1 tbs of cardamom700 g of wheat flour

Filling50 g of butter, 0,5 dl sugar

1 tbs of cinnamon

Brushing1 egg

GarnishNib sugar

MethodMelt sugar in a pot of milk. Dissolve the yeast little by little, and add salt, sugar and cardamom to the mixture and stir. Add the flour and knead until soft and smooth. Let it rest in the bowl for 30 min under a damp cloth.

For the filling, mix butter, sugar and cinnamon together.

Rest dough for 30 minutes. Roll it out into a rectangle, about 20x50 cm, spread the

filling to the entire surface and roll the dough on the long side. Cut about 1,5 cm thick slices of dough, put them in paper cupcake holders and let it rise for 30 minutes.

Whip the egg. Lightly brush the cinnamon buns. Sprinkle with nib sugar.

Bake in oven at 225 degrees Celsius for about 8-10 minutes.

SWEDEN – KANALBULLARCinnamon buns, or kanelbullar, have a special place in Swedish food culture, and October 4th is known as Cinnamon Bun Day. The tradition of Cinnamon Bun Day was created in 1999 when the staff at Sweden’s Hembakningsrådet (Home Baking Counsil) were looking for a way to celebrate their fortieth anniversary, and found that the cinnamon bun was the best symbol for Swedish home baking. The traditional Swedish cinnamon bun is topped with a sprinkling cinnamon and nib sugar.

Few get to see the entire world in their lifetime – others do it in less than 4 years.

Our part time warehouse employee Torbjørn has a dream: To travel the world, visit every UN member states, partially recognized states as well as the Vatican, to a total of 201 countries without flying. The dream is inspired by Graham Hughes who did exactly that in 2012, completing his journey without the use of flying, private transport, and no travelling to far flung territories and counting them as visiting the motherland. The difference between Graham Hughes and Torbjørn’s journeys is that Torbjørn will stay at least 24 hours in each country.

When the journey is completed, Torbjørn will be the most traveled man in Denmark, passing the previous record holder Bjarne Lund-Jensen who had visited 190 countries before his death.

For such a long journey he will be faced with different challenges, especially dressing for the variations in weather. That’s why Nimbus will be supplying Torbjørn with various Nimbus jackets that will cater to every situation, and making sure that he will be dressed for the trip.

Through our Nordic Journal we will have updates from Torbjørn as he makes his way around the world.
