    In the United Sta tes, more than 3,000 substa nc es c an be added to food s for

    rea d ing through ingred ient labels c an be like trying to d ec od e a puzzle.

    Of c ourse, ea ting la rge ly fresh, whole foods is the best w ay to sta y aw ay from

    This p reserva tive, used to p revent fa ts and oils from spoiling , might c ause

    c anc er. It's used in veg etab le oil, mea t p rod uc ts, pota to sticks, c hic ken soup

    base a nd c hew ing gum, and is ofte n used with BHA and BHT (see below).

    BHA and BHT

    Butyla ted hydroxyanisole (BHA) and butyla ted hydroxyto luene (BHT) are used

    sim ilarly to p rop yl ga llate -- to keep fa ts and oils from going ranc id . Used

    c omm only in c ereals, chew ing g um, vegeta ble oil and po tato chips (and

    also in som e food pac kag ing to p reserve freshness), these add itives have

    been found by som e stud ies to c ause c anc er in ra ts. If a b rand you

    c om monly buy uses the se a dd itives, look for a d ifferent va riety, as not a ll

    manufacturers use these preservatives.

    This a rtific ia l sweetener is found in Equal a nd NutraSwe et , along with p rod uc ts

    tha t c onta in them (diet sod as and othe r low-cal and d iet food s). This

    swee tener has been found to c ause b ra in tum ors in rats as far bac k as the

    1970s, however a m ore rec ent stud y in 2005 found tha t even small do ses

    inc rea se the incidenc e o f lymp homas and leukemia in ra ts, along with brain

    tumors.

    People who are sensitive to a spartame may also suffer from hea daches,

    d izziness and ha lluc ina tions a fte r consuming it.

    Acesulfame-K

    Ac esulfam e-K is an a rtific ia l sweetener tha t's about 200 times sweeter tha n

    sugar. It's used in baked goo ds, chewing gum , gela tin desserts and soft d rinks.

    Two ra t stud ies have found that this substa nc e m ay cause c ancer, and othe r

    stud ies to reliably p rove this add itive's sa fety ha ve no t b een c ond uc ted .Acesulfam e-K also b rea ks dow n into a c eto ac eta mide, whic h has been found

    to a ffec t the thyroid in ra ts, rabb its and dog s.

    Olestra

    Olestra is a fa t substitute used in c rac kers and potato chips, ma rketed under

    the b rand nam e Olea n. This synthetic fa t is not absorbed by the b od y

    (instead it goes right through it), so it can cause diarrhea, loose stools,

    abdominal cramps and flatulence, along with other effects. Further, olestra

    red uc es the bod y's ab ility to absorb bene fic ia l fat-soluble nutrients, inc ludinglycope ne, lutein and b eta -c arotene.

    Sod ium Nitrite (Sod ium Nitrate )

    Like d iet sod a? The aspartame tha t's used to sweeten it inc rea ses lymphom as,

    leukem ia and b rain tumors in rats -- even in small doses.

    Sod ium nitrite (or sod ium nitrate) is used as a p reserva tive, c oloring and

    flavo ring in b ac on, ham , hot d og s, luncheon mea ts, co rned bee f, smoked fish

    Hydrogena ted Vegeta ble Oil

    The p roc ess used to ma ke hydrog ena ted veg eta ble o il (or partially

    hydrogenated veg eta ble o il) create s trans fats, whic h p rom ote hea rt d isea se

    Red 3

    This food c oloring is used in c herries (in fruit c oc kta ils), baked goo ds and

    c and y. It c auses thyroid tum ors in ra ts, and may cause them in humans as

    well.

    Yellow 6

    As the third m ost often used food coloring, yellow 6 is found in many produc ts,

    inc lud ing b ac ked go od s, c andy, gelatin and sausages. It ha s been found to

    c ause a drena l gland and kidney tum ors, and c onta ins small am ounts of

    ma ny c arcinoge ns.
