SELECTION:• Look for pears that are firm, but not too hard, with smooth skins.• Avoid dark bruises, punctures, or skins that have dark, soft spots.• Brown speckled patches on skin indicate ripening and oftentimes indicate

• The familiar white pear blossom is a symbol of hope and lasting friendship and support in military campaigns.• Originally cultivated in Asia and Europe, the first pear tree was planted in the United States in 1620 by the Massachusetts

Bay colony.• Pear wood is favored because of its resistance to warping and is used make musical instruments, furniture, and

architectural rulers.

STORAGE:

NUTRITION/HEALTH/WELLNESS:

• A medium-sized pear (about 166 grams) is a fat-free food that contains only about 100 calories per serving. Use a ripe pear for an afternoon snack. The sweetness will help with sugar cravings and the fiber will help carry you to dinner.

• Instead of peeling pears, remember that pear skins contain about half of the pear’s total dietary fiber, and at least three to four times as many phytonutrients as the flesh.

• Pears contain high amounts of phytonutrients that are rich in antioxidant and anti-inflammatory nutrients, which can assist in slowing the aging process and protect against heart disease.

• Because pears are very perishable when they ripen, they are picked before they ripen, and may require a few days to soften, sweeten, and mature.

• Place pears in a paper bag at room temperature to speed up the ripening and softening process.

• Once ripened, refrigerate pears to extend freshness.• Once sliced, pears turn brown quickly. You can delay the browning by adding

several drops of orange, lime or lemon juice.

Meat CaseHoney Mustard Drumsticks with Pears

Ingredients: 4 servings

• 8 chicken legs (1.75-2 lbs), skins removed

• 1 tbsp. olive oil• 3 tbsp. Dijon mustard

• ¼ cup honey• 2 garlic cloves, minced• Salt and pepper to taste• ½ cup fresh cut parsley

• ½ tsp. dried rosemary• 3 pears, cored and sliced• Cooking spray

Directions:

1. Preheat oven to 350 degrees F.2. Lightly spray the bottom of a 13x9x2 baking pan with cooking spray.3. Mix the sauce ingredients by whisking together in a medium-sized bowl,

the olive oil, honey, mustard, garlic, and salt and pepper.4. Place the chicken legs in the pan, leaving space between them. Place the

sliced pears in between the legs and on the side of the dish. Separate the layers of the onion quarters and sprinkle them throughout the dish.

5. Drizzle the sauce ingredients over the contents of the pan, with a focus on the legs. Add 2 tbsp. of water to the side of the pan.

6. Sprinkle the rosemary over the legs and place the pan in the preheated oven. Cook for 30 minutes and gently turn the legs. Continue cooking for an additional 20 minutes, or until the meat temperature reaches 165 degrees F and the meat is no longer pink.

7. Remove the pan from the oven and sprinkle with fresh parsley.Source:

Produce StandGrilled Brie Sandwich with Pears

Directions:

1. Gently wash and dry the pears. Cut each pear into thin slices, discarding the core.

2. Place the slice in a single layer on a paper lined microwave plate and microwave the slices for 45 seconds.

3. Remove the Brie from its wrapper. Cut it vertically into 12 thin slices.

4. Heat a large frying pan to medium-heat. While the pan is heating, lightly spread the butter blend on two slices of bread. Place the bread in the pan, butter side down and quickly top each piece with two slices of the cheese, ¼ of the sliced pears, two basil leaves, an additional slice of cheese.

5. Butter two additional slices of bread and top the cheese, butter side out, and quickly and gently flip the sandwich. Cook until both sides are nicely browned and cheese begins to melt.

6. Repeat steps 4-5 to make remaining two sandwiches.

• 1 cup instant brown rice• 1 lb. lean ground beef, turkey,

or pork• 1 large white onion, finely chopped• Dash of salt• 1 tbsp. and 1 tsp. finely minced

garlic, or 2 tsp. garlic powder• 1 tbsp. Italian seasoning• 1¼ tsp. paprika• ¾ of medium head of green

cabbage, chopped• 1 (15 oz.) can tomato sauce

• 1 (14-15 oz.) can petite diced tomatoes

• 1½cup shredded cheddar cheese• Pepper to taste

1. Begin cooking the instant brown rice according to package directions.

2. Meanwhile, in a large skillet, heat olive oil over medium-high heat and add the diced onions with a dash of salt. Continue cooking. Stir occasionally until the onions are tender (about 3 minutes).

3. Add the ground meat to the skillet to brown, stirring occasionally. Cook until there is barely any pink color present in the meat.

4. Add the spices to the cooked meat and mix well. Add the diced tomatoes and sauce, along with ½ cup of water. Once the sauce begins to bubble, add the chopped cabbage and cook for 3-5 minutes, covered, until the cabbage begins to wilt and shrinks in bulk.

Turn the heat down to medium and add the rice. Stir gently and cover. Cook until the cabbage is very tender (12-15 more minutes), stirring every 3-5 minutes. Remove the cover and sprinkle the top with cheddar cheese. Do not stir. Keep the cover off and continue cooking on low until the cheese melts and the mixture begins to thicken.

5. Remove from the heat and let it rest for 5 minutes before serving.

Tips:• Mozzarella or Parmesan cheese is a tasty substitute

for the cheddar. To save on calories and fat, consider omitting the cheese.
