MONTHLY • Missionaries of Charity –

Birthday party at the crèche for children from poor families.

• Penha – Music and art session for physically and mentally disabled children.

WEEKLY • Centro de Santa Lucia

(Coloane) – Dancing sessions with the handicapped ladies on Tuesday 3-4pm. Days/times can be changed if more convenient.

• Penha – Home for handicapped children need volunteers to do simple physio exercises or to help to feed children at 11am.

• Cradle of Hope (Taipa) – Daily 9-11am or 4-6pm. Take the babies out for a walk to the park. This can be a weekly or bi-weekly commitment.

FORTNIGHTLY • Santa Maria – Art session at

the home for elderly ladies Monday 3-430pm. Can be changed with prior arrangement.

• Several Homes need part-time physiotherapists. Times to suit the volunteers.

news We’ve got mail! Letter to Editor re the TDM TV broadcast,

It does appear that the ILCM has an image that does not match what it is about. To the outsider, it is quite easy to assume that the typical expat wife/partner is exactly as described, a lady who lunches without much thought for anything else.

Since I arrived in Macau in 1997 I have witnessed a most extraordinary social change here. This has been accelerated by Macau’s expansion into the world casino scene, and people no longer have to look to their atlases to find out where Macau is.

More foreign companies expanding into Macau has meant more opportunities for work among non-Chinese and Portuguese speakers, and this has led to opportunities for employment amongst expat wives and partners that simply did not exist before. The statistic that the editor quotes of 50% of ILCM members being employed is wonderful – it was probably 5%-10% ten years ago, and those being mostly local and Portuguese members, with a few notable exceptions.

But let’s not forget what the club has always been about – help for the local community. Those ladies who didn’t or couldn’t work all those years ago devoted their spare time to helping at Cradle of Hope when it was first set up 17 years ago… charity work is what the ILCM was all about in those early years, and a tremendous amount has been achieved through the hard work and dedication of all those unsung heroes who have since left Macau for pastures new. The ILCM continues to support 20 local charities, and were it not for the dedication of the ILCM members out in the field, working hands-on at these centres, or the fundraising committee, who work tirelessly throughout out the year, then some of these residential homes and care centres

would be in dire straits indeed. The International Ladies Club of Macau to the local community is synonymous with all that is good and caring about expat wives and partners.

Dear Editor,

I wanted to voice my support for your sentiments expressed in the April edition. I didn’t catch the TDM broadcast but reading the snippets infuriated me. Too many in this town are quick to take the money but not acknowledge where and HOW it came to be!

My final comment regards this is I believe the article should be forwarded to TDM with a request for a response. Keep your faith and the great work that you and the ILCM does is appreciated.

Dear ILCM Members,

I am absolutely incensed to read the recent portrayal of the ILCM by TDM in such a negative way. With the 2010 ball almost upon you and the need to attract local sponsors why not invite a reporter to spend the day with any member of the Exec Committee, Ball Committee, and/or Community Services Committee? Then ask them to broadcast another report of exactly what they saw. It would, without doubt, be a glowing report of a group of very professional women working hard to improve the lives of the disadvantaged in Macau. Their minds and views would be changed forever!

The frosting on the cake…

L ast week my husband and I found our way to a new restaurant recommended to us by our Indian friends. Indian Spice has only been

open a couple of weeks and the word has yet to get around but we found it a friendly place with a good variety of Indian and Lebanese food on offer. It has seating for about 70 with even a couple of tables on the pavement outside if you prefer eating ‘al fresco’.

The young manager, Gagan Sethi, was very welcoming and made a point of personally meeting his customers as they arrived. Gagan has been in Macau for six months getting the restaurant off the ground and last year he opened a similar restaurant in Manhattan (New York City).

Indian Spice provides an authentic taste of North Indian recipes with starters such as Murg Malai Tikka, Seekh Kebab or Crispy Okra. We skipped those and went straight on to a Murg Bhuna (chicken cubes cooked with onions, tomatoes and spices) and Gosht Rogan Josh (lamb in traditional

gravy from Kashmir). If you prefer fish then perhaps try the fish curry or coconut prawn curry. To accompany the curry we had Chana Masala (chickpeas cooked with onions and tomatoes) and Dal Tadka (slow simmered yellow lentils tempered with ginger, cumin and onions) but there were several vegetable options such as Saag Paneer. Plenty of breads to choose from, we had a couple of plain Tandoori Roti preferring them to the more substantial Naan. Needless to say there were several different rice options on the menu.

We never have room for a pudding after a curry but there were dishes such as Kheer (rice pudding with almonds and cardamom) or Glob Jamun (deep fried dough balls in sugar syrup). If Lebanese food is more your style then try the Babaghannouj or Lamb Shawarma.

and I spent a large portion of each class laughing. Lisa, who owns the store and runs the class, is multi-lingual (perfect English) and is a friendly and confident teacher. As I am left handed I had some trouble with the roses at the last class, but she sat with me until we worked out the correct way to do it, which was brilliant.

M y friend Tamar and I both enjoy baking, so when she asked me to go along to a cake decorating class at Party & Cakes X'press in Macau, I was

excited. I could already ice a good looking cake, but I wanted to learn how to do all the fancy stuff.

The first course “Decor 1” consists of four 2-hour classes. The first class was pretty basic, with getting to grips with making the icing and using the piping bags, so we were ready for bigger things to come. By the end of class two, we had iced a cake making a rainbow (learning how to transfer designs from a picture to a cake... I couldn't believe how easy it was). Class three, we learnt how to make borders and flowers and clowns (amongst other things), and by the last class we were making leaves, stems, and more flowers including edible roses.

The classroom is small with a max of four students attending, so it’s a nice personal atmosphere to learn in. If you call making a cake and preparing icing to take to class each week “homework”, then there is homework... but it’s actually really good practice, because you can ask the teacher any queries in class.

The class would suit anyone with an interest in cake decorating and having a bit of fun, no matter what your level. It really is so easy to make effective decorations once Lisa shows you how, and Tamar

Kat’s Kitchen… in Macau

Spinach Casserole Ingredients • 4 beef tomatoes, sliced thickly • 25 grams butter + extra for greasing • 500 grams minced meat • 2 onions peeled and sliced • 1 tbs finely chopped rosemary (or dried) • 2 tbs tomato puree • 1 kg spinach, washed and trimmed • Salt • Cayenne pepper • Mashed potatoes for 4 • 100 grams fresh cream cheese • 50 grams breadcrumbs

Instructions 1. Preheat oven to 200° Celsius.

2. In a large frying pan, heat the butter and brown the mincemeat. Add the onions, rosemary and tomato puree and sauté for a further 3 minutes.

3. Stir in the spinach, little at a time, and fry quickly over high heat. Season to taste with salt and cayenne pepper.

4. Grease a casserole with a little butter. Spread half the mashed potatoes over the bottom and cover with the mincemeat mixture. Arrange the sliced tomatoes on top and cover with the remaining mashed potatoes.

5. Top with an even layer of cream cheese and finish with the breadcrumbs. Bake for about 25 minutes until the top is crisp and golden brown.

Ingredients • 1 kg tart apples, peeled, cored and sliced • 1 packet of rusks, crumbled • 3 eggs • 50 grams butter + extra for greasing • 100 grams sugar • 2 tsp cinnamon • 1 tsp ginger powder • Pinch of ground cloves • 125 grams raisins • Icing sugar

Instructions 1. Preheat oven to 175° Celsius.

2. In a saucepan cook the apples with a little water to a thick puree.

3. Separate the eggs and beat the whites to stiff peaks. Lightly grease a 24cm round cake tin.

4. Mix the rusks, butter, sugar, cinnamon, ginger, cloves, raisins and beaten egg yolks into the apple puree. Gently fold in the egg whites and pour the mix into the cake tin. Smooth the top.

5. Bake the cake for 50-60 minutes until golden brown and cooked. Allow to cool and dust the cake with lots of icing sugar.

6. Serve hot or cold with custard sauce, cream or ice cream.

Cobbler’s Cake

W hen I told the vegetable lady in Coloane Village that I was going on a trip to see my family in Europe, she still wanted to

sell me extra things I didn’t want. I think she is the best sales woman in Macau… there is always a “this is very good for baby” or “daddy likes” or “maybe you like it now”. You have to give it to her, she tries very hard with her limited English, and I always return to her shop because her fruit and vegetables are fresh and good. (She is on the left in the alley coming from the round a bout in Coloane Village.)

This time I thought it be nice to provide two Dutch recipes because Lachlan and I are in Holland at the moment (stuck on our way to Glasgow due to the icelandic volcano). I guess apart from cheese, or chocolate sprinkles on a sandwich, or raw herring, the Dutch are not really known for their food... but there are some very nice dishes around.

These two are golden oldies that my Oma (grandma) used to make. Hope you enjoy them.

Things… no one tells you Georgie Creeden

Macau is a very safe place to live… but there are a few things that you need to know.

I t is not unusual for homes to be burglarized. It happens all the time, but unless it happens to someone you know, you will never hear about it.

You will not read about it in the newspaper and your building management will not inform you.

Do NOT leave windows or sliding doors open or unlocked at night.

• Burglars enter and leave through windows… and they do it at night when you are home sleeping! Why? Because they know that your wallets, cash, jewelry, watches and mobile phones will be there… small valuable items that they can put in their pockets.

Do NOT assume that a closed, but unlocked window is safe.

• Robbers usually know about unsecured windows through handymen, plumbers, painters, or maids who have worked in your home or near your building.

Do NOT presume that you are safe because your flat is on a high floor.

• Burglars enter buildings where there are no security devices or where entry is not expected. They climb up, down and across drain pipes,

railings, balconies, and ledges… and easily squeeze into small spaces and windows.

Do NOT think that an open window with a locked mosquito screen is safe.

• Robbers simply cut the screen and enter through the unlocked window.

DO get creative.

• If your windows do not lock, find a way to secure them. Sliding glass doors might need a dowel in the track to stop the door from opening.

• Don’t wait till it’s too late. It is pretty disconcerting to know that men were in your home while you and your family were sleeping.

th ings Things… you need to know DRIVING IN MACAU NON-RESIDENTS & TOURISTS… must obtain a “paper license” in order to drive in Macau. Go to the police station on Avenida Sidonio Pais (near and opposite the Sun Yat Sen memorial house). Bring your foreign license and passport, and you will receive a “paper license” that is usually valid for 6 months.

TEMPORARY & PERMANENT RESIDENTS… must have a Macau driving license. You might manage to get a “paper license” for a while, but according to the new law, as soon as you become a resident, you must apply for a local driving license.

Go to the China Plaza Building on Avenida da Praia Grande 762-804, in Centro. Go up the escalator to the Driving License Department’s Information Desk. They will direct you to the correct counter.

If you have a current and valid license from a foreign country, you do not need to take any tests. However, they must first obtain your driving record from your home country. That process will depend on what country you come from, and can take anywhere from 1 to 6 months.

Once your home country confirms everything is ok, you will be contacted. Then you can return to the department for a photo and fingerprint and pay MOP1,200. Subsequent license renewals will be less expensive.

Note: Validity periods (5-10 years) are related to your age, so please be sure to ask questions, so you do not apply and pay, only to find out your license must be renewed in 6 months.

REFRESHING TIRED THINGS… like lettuce leaves

This works exceptionally well for the tired looking leaves in the salad bags from the supermarket.

To create a fresh and crisp salad leaves soak lettuce in cold water with a few ice cubes and add the juice of half a lemon.

Soak for around ten minutes and drain and you will have a sensation fresh tasting salad.
