Purpose

Although many consumers purchase fluid milk in the grocery store, there are numerous other products that are made from milk. What are some products that you can think of?

Procedure

Part One—Which Class Do I Belong To?

There are four (4) classes of milk: Class I, Class II, Class III, and Class IV.

Lesson 1.7: What Products are Created From Milk?

Milk is sold to one of these 4 classes based upon what product is to be manufactured. Therefore, similar dairy products would be produced from the same class.

1. Take a guess at which class each of the 8 following products would be grouped into.

2. Remember that similar products are grouped in the same class.

3. Raise your hand when you are finished so your instructor can confirm your guess.

The 5 components of milk are:

Water (87.6%) Lactose (4%) Protein(3.5%) Fat (3.6%) Vitamins and Minerals (0.4%)
