More than just cheese.Switzerland’s cuisine is as diverse as its cultures. Each region has its own specialities, to the delight of gourmets. Of course, Switzerland is famous for its chocolate and cheeses – but it also has many other gastronomic treats in store for visitors.

Fondue “moitié-moitié”

Veal in cream and mushrooms from Zurich, Bernese meat platter, St. Gallen sausage, Basel flour soup and kirsch cake from Zug are just some of the typical Swiss dishes from different regions. Many natural pro ducts have also shaped local cuisine – such as the sweet chestnuts of Ticino. Local people have gathered them for centuries from the groves of chestnut trees scattered through the valleys. Rich in carbohydrates, “marroni” were long the region’s staple

Ingredients for 4 people: Pasta dough: 200 g buckwheat flour

150 g plain flour

1 teaspoon salt

2 dl water

2 tablespoons oil

Further ingredients: 220 g potatoes

150 g Swiss chard

100 g green beans

100 g savoy cabbage

150 g Parmesan, grated

50 g semi­hard cheese,

diced

150 g butter

½ onion

2–3 cloves of garlic

sage leaves, pepper

To make pasta: Mix all the ingredients and

knead to form a smooth,

medium­firm dough. Roll

out the dough with a rolling

pin and cut into pizzoccheri

(strips approx. 1 cm wide

and 4 cm long).

To cook vegetables:Boil the vegetables until

firm to the bite, then add

the pizzoccheri to the

boiling water for two

minutes. Drain, place in

a casserole dish and mix

in the cheese.

Seasoning:Melt the butter in a pan

and fry the onion, garlic

and sage. Add to the

pizzoccheri, mix thoroughly

and serve hot immediately

with a pinch of pepper.

food, the “bread of the poor”. One tree per person, was the rule of thumb. Locals continue to celebrate the tradi­tion at chestnut festivals around the shores of Lago Maggiore. Many typical “grotto” restaurants also serve the Ticino speciality in the form of chest­nut bread, chestnut purée, chestnut pasta or vermicelli, a popular local dessert. Sounds appetising? A hotel in Miglieglia in the Malcantone region, Casa Santo Stefano, holds chestnut cookery courses every autumn.

Subtle delicacy from Valais The Valais mountain village of Mund near Brig is the only place in Switzer­land where precious saffron is still cultivated. This spice has been prized in the orient for more than 3,500 years. Saffron comes from a variety of crocus – Crocus sativus L. – whose flowers each have about three pistils. Around 180 flowers are needed for just one gram of the spice, making Mund saf­fron more valuable than gold. It can only be bought locally, but guests can also taste it at nearby restaurants. The Hotel Fafleralp in the Lötschental valley, for example, serves dishes such as “Gälbä Riis mit Chees­ und Epfelchiächlinu” – that’s local dialect for saffron rice with apple fritters and cheese.

From watches to music boxes Switzerland’s long history of manu­facturing music boxes evolved from the watchmaking tradition, so it is no coincidence that production devel­oped primarily in Geneva and the Vallée de Joux. A journey through the world of orchestrions and mechanical automata as well as music boxes could begin at the Grand Hôtel des Rasses, for example, and finish at the Musée Baud in the rolling hills of the Vaud Jura.
