Chicken & Black Bean Soft Tacos with Jalapeño Queso Sauce SERVES 1 

INGREDIENTS1 cup shredded skinless rotisserie chicken breast½ cup drained cooked black beans¼ cup fat-free salsa2 6-inch corn tortillas 1 pouch Weight Watchers Jalapeño Queso Gourmet Sauce Singles⅓ cup diced red or green bell pepper2 Tbsp chopped scallion1 Tbsp cilantro leaves

INSTRUCTIONSCombine chicken, black beans, and salsa in a small microwave-safe bowl. Cover and heat for 1 minute. Wrap tortillas in damp paper towel and microwave for 30 seconds to warm. Top each tortilla evenly with chicken mixture. Heat Weight Watchers Jalapeño Queso pouch according to package instructions and drizzle sauce over chicken. Top each taco with bell pepper, scallion, and cilantro and enjoy.

INGREDIENTS1 slice bacon½ cup halved baby potatoes1 egg, cooked (fried in nonstick spray)2 cups baby kale½ cup halved grape tomatoespinch each salt and pepper1 pouch Weight Watchers Hollandaise Gourmet Sauce Singles2 tsp chopped chives

INSTRUCTIONSCook bacon in a small sauté pan until crispy. Remove and crumble. Add potatoes to pan and cook for 8 minutes, stirring frequently, until tender and browned. Push to the side of the pan and add egg in the center, cook to your liking. Arrange baby kale, grape tomatoes, potatoes, and egg in a shallow bowl. Sprinkle with salt and pepper. Heat Weight Watchers Hollandaise pouch according to package instructions and drizzle over the top. Garnish with crumbled bacon and chives and serve.

Creamy Green Bean Casserole SERVES 2  per serving

INGREDIENTS8 oz trimmed green beans1 cup chopped cremini mushrooms2 sliced shallotspinch salt and peppercooking spray1 pouch Weight Watchers Creamy Mushroom Gourmet Sauce Singles3 Tbsp panko bread crumbs1 Tbsp grated Parmesan cheese

INSTRUCTIONSPlace green beans in a microwave-safe bowl, add ¼ cup water, and microwave, covered, for 3-4 minutes or until tender. Drain well and put green beans in a small flameproof baking dish. Coat a small nonstick sauté pan with cooking spray and heat over medium-high heat. Add mushrooms and shallots, stirring often, for 5-6 minutes or until soft. Season with salt and pepper and add Weight Watchers Creamy Mushroom pouch to heat through. Pour mushroom mixture over green beans and sprinkle with panko and Parmesan. Broil for 2-3 minutes to toast topping and serve.
