2 things you should know about Cepelinai 

Cepelinai (singular - cepelinas) or Didzkukuliai are a Lithuanian national dish.

They are a type of dumpling made from grated potatoes and usually containing ground meat, although sometimes dry cottage cheese (curd) is used instead.

Ingredients:

4 kg potatoes 1 kg minced pork 2 onions 200 g sauce made from bacon

and sour cream pepper salt

The way of making Cepelinai

1. Put raw potato gratings in a double cheese cloth, and squeeze dry. Save potato liquid, let potato starch settle at the bottom, decant potato liquid, and mix starch with dry potato gratings.

2. Rice boiled potatoes, and add to raw grated potatoes; salt and blend well. Take about 1/2 cup potato mixture and flatten, making a round form. Place a spoonful of filling mixture (recipes below) in center of the round, fold over, seal seam, and make into an oblong shape.

3. Put "zeppelins" into boiling water, and cook for about 30 min., stirring gently.

Potato Pancakes

Ingredients:6 potatoes, peeled

1 egg, beaten

1 small onion

2 tablespoons flour

Salt

Vegetable oil for frying

The way of making Potato Pancakes 

COMENIUS PROJECT

Grate potatoes and onion (use a metal cheese grater or food processor), add egg, flour and pinch of salt. Mix until consistency of thick batter. Fry in hot vegetable oil until golden brown on both sides. Serve with sour cream or your favourite topping.
