Kiwi Muffins recipe

Kiwi fruit is one of the healthiest foods in the world - nutritionists (people who study food and what is good for you) call it a “super food”.

It is jam packed with vitamins and fibre which keep up healthy and strong. Kiwi fruit is very popular in desserts but can also be used to bake with and can be used in crumbles and tarts.

IngredientsPreparation time: 15 minutesPreparation Time: 15 to 20 minutes

Makes 12 muffins

• 150g self-raising flour

• 120g caster sugar• dash salt• 2 medium eggs• 150ml milk

• 35g butter, melted• 3 kiwi fruit, peeled

and chopped• 1 tablespoon of

lemon juice• 100g sultanas

Method

Method1. Turn the oven on to 220C/ 200C Fan/ Gas

mark 7 to heat up.Make sure an adult does this bit.

2. Line a 12 hole muffin tin with muffin cases.

3. Place the flour, sugar and salt (the “dry ingredients”) in a bowl and stir well until fully combined.

Method4. Put the butter into a small saucepan over a low

heat to melt. Be careful not to burn it.Make sure an adult does this bit.

5. Pour the melted butter into a bowl and add the eggs and milk (the “wet ingredients”) to this. Use an electric mixer to beat this mixture (or you can do it by hand).

6. Cut the lemon in half and squeeze. Add one tablespoon of lemon juice to the wet ingredients and stir well to mix it through evenly.

Make sure an adult does this bit.

Method7. Peel and chop the kiwi fruit into

small pieces.

8. Slowly pour the wet ingredients into the dry ingredients until just moistened.

9. Fold in the kiwi fruit and sultanas.

Method10. Fill each muffin case three quarters full with the mixture.

11. Place in the oven and bake for 15 minutes. Test the muffins with a skewer - it if comes out clean the muffins are cooked and you can take them out of the oven. If not, put them back in the oven and check every 2 minutes, testing again with the skewer. Do not bake for more than 20 minutes.

12. Allow the muffins to sit in the muffin tray for 5 minutes before removing from the tray and placing on a wire rack to cool. Make sure the muffins are completely cool before you eat them.Make sure an adult does this bit
