TARHANA SOUP

-Tarhana soup is the first ready to cook soup in the world.-It is the most popular traditional soup in Turkey.-It is prepared in summer(at the end of August or early September) because of the season of vegetables and then consumed in winter.

-Tarhana soup is prepared by all the season’s red and green vegetables,flavour ingredients,flour,pulses and yoghurt.

-After preparing,It is waited for a long time for dehyration so it doesn’t include any microorganism,etc.-Tarhana is rich in protein,vitamins,minerals.

BASIC MATERIALS

-vegetables(tomato,onion,green and red pepper,dry mint,parsley,garlic,dill,thyme…)-spice(black pepper)-flour or wheat-pulses(chickpea,bean,lentil…)-homemade yoghurt

How to make Tarhana?

-Basically it is a mixture of crushed wheat with yogurt and flour along with peppers, onions, tomatoes and bunches of dry mint and parsley. -This is prepared and laid out on rooftops to dry out over a 4-5 day period.-After it is dried,it is crumbled by hand.-It should keep in the fridge.

How to prepare Tarhana Soup?

Ingredients:(this recipe makes 2 servings.)*2-3 tablespoon of dry tarhana*1/2 cup of water*2 tablespoon of dry,crushed tomato*2-3 cup of chicken stock*crushed red pepper(optional)*1 tablespoon of butter

-mix the tarhana and water for dissolving the tarhana.Then,mix it with the other ingredients in a pot.-cook and stir constantly over medium –low heat.-add some salt.

CAN BE VARIFIED

-Can be added some yoghurt during cooking.-Can be added some wild herbs.-Can be added spinach.-Can be added some tomato paste.

-It is a good alternative food to fast food and good solution for obesity because it is very healthy and delicious.
