Lamb Kofta RecipeHellooooo Monkeys

Today it’s all about LAMB

Lamb is such an awesome meat – there are so many different ways you can eat it, for example roast leg or shoulder of lamb, in a stew or casserole, lamb cutlets or as mince in a shepherd’s pie, moussaka or in burgers or lamb koftas.

If you don’t know what a kofta is…you can find it all below.

IngredientsPreparation time: 15 minutes

Preparation Time: 15 to 20 minutes

Serves 8 hungry monkeys

• 500g lamb mince• 1 teaspoon ground

cumin• 2 teaspoons ground

coriander• 2 cloves of garlic

(crushed)

• Fresh mint• Olive oil for brushing• Lemon• 1 tub of Natural

yogurt• Salt and pepper

Method1. Peel and crush the garlic cloves.

2. Chop the mint leaves.

3. Place the mince in a large bowl and add the garlic, cumin, coriander and one tablespoon of chopped mint leaves. Add the salt and pepper. Mix all the ingredients together until well blended.

4. Divide the mixture into 8 balls, then roll each ball on a chopping board with a cupped hand to turn them into an oval shape.

5. Thread onto 4 metal skewers and brush with oil. You can use wooden skewers but make sure to soak them in water first so they don’t burn when cooking.Make sure an adult does this bit.

6. Make the minty yogurt dip:i) cut a lemon in half and place it on top of a lemon juicer and press down. Pour out two teaspoons of juice into a bowl.Make sure an adult does this bit.

ii) add the yogurt and the chopped mint and mix well together.

7. Cooking: You can either cook under a pre-heated grill (on high) or on a griddle pan or barbecue for 3-4 minseach side. Don’t turn until they are well sealed or the meat will stick to the grill or pan. Season if you want, and set aside.Make sure an adult does this bit.

8. Serve the koftas with the yogurt and mint dip and some flat breads.

9. Tuck in and enjoy!
