INTRODUCTION

The main ingredient of this product is DatesDates are natural sources of potassium. Dates are a great source of dietary fiber. To enrich the product, Triphala powder is added

which is a classical ayurvedic preparation with several health benefits for constipation, hypertension, high cholesterol levels, Diabetes etc

AIMS AND OBJECTIVES

To develop Entrepreneurship skills. To identify and modify a product to be accepted by the

consumer of all age groups. To standardize the product. To understand product planning, modification, budgeting,

nutritional label making, packaging and marketing. To identify different packaging materials for the product. To analyze shelf life through sensory evaluation and microbial

testing. To enrich the product with such ingredient that have health

benefits.

SENSORY EVALUATION.

MICROBIAL TESTING.To check the shelf life.Pour plating method was used.Testing done consecutively for 3 weeks.

RESULTS & DISCUSSIONThe present study was done on Dates Éclair by

incorporating Triphala.The Sensory evaluation of the product was done

by a panel of 8 naïve members. The result shows that on the 1st day the product

was acceptable but on storage after a period of 21 days, there were some changes observed in the quality attributes of the product.

The microbial analysis on 21st day was found to have 7-8 colonies which is acceptable.

Thus by this study it can be concluded that Dates Éclair can be consumed within 15 days of the production.

RESULTS OF MICROBIAL TESTING DONE OVER 3 WEEKS.

Colonies as on 21st day.

Marketing of the product:The product was made on a medium scale

(neither large nor small) and advertised within the limits to an approximately 1200-1500 students and subsequently marketed among the student.

And it was observed that most of the population liked it.
