New to Loose Tea? Start here!
Tea comes from the tea plant, otherwise known as Camellia Sinensis. See page 25 for our world map of major tea
growing regions. Weather, soil, altitude and processing methods after picking the tea leaves all contribute to taste and
color characteristics.
Because the tea plant has a natural ability to adapt to local growing conditions, and can be hybridized very easily, there
have been over 3000 varietals developed worldwide. Cultivated tea plants are usually trimmed to waist height so that
the leaves can be easily harvested, but wild tree plants can grow into huge trees up to 100 feet in height.
There are some other teas, which we call ‘herbal’ but are technically called a ‘tisane’. These are infusions made from
plants other than the tea plant. Think of peppermint, ginger, dried fruits and other herbs. Rooibos and Honeybush are
popular, caffeine free herbal infusions rich in vitamins and minerals. Most tisanes are caffeine free.
Tea starts out the same, but the various ways of processing tea will determine what type it will become. The major
categories of tea are black, green, oolong, white and pu-erh. To make tea, it goes through these general steps:
Plucking
Withering (Removes the excess water from the leaves)
Rolling (Shapes the leaves and breaks the cell walls allowing all the oils and juices to mix, which gives tea it’s taste)
Oxidation (For teas that require oxidation, like black teas, they are put in a climate controlled room and allowed to
get progressively darker. Think of an apple left exposed to air. Green and White teas skip this step.)
Drying (Stops oxidation, locks in the flavor compounds and makes the tea shelf stable.)
In summary – Green and White tea are not allowed to oxidize. Oolong tea is partially oxidized, and black tea is fully
oxidized. Pu-erh is different (See our Pu-erh page) as it also undergoes an additional fermentation phase.

Our campaign promotes the benefits of premium loose leaf tea versus bagged tea. There are those who say defiantly, “I
don’t like tea.” Perhaps the reason is the memory of only having tried inferior bagged tea. What goes into most tea bags
is nothing more than the left over tea dust after sorting. Dust grade tea has a lower shelf life, absorbs odors more easily
and has a tendency to become bitter quickly if left in hot water too long.

picked and sorted by hand. Most operations can trace back their tea making heritage for many generations.
Where to start?
We suggest starting with samples. Each sample makes 2-3 cups or 1 small pot. You’ll need something to heat water with
and something to infuse the tea. Our tea ware pages have a wide variety of options. Try teas from each category. By
tasting many different types, you’ll train your palate to recognize the wide variety of flavor profiles. By doing so,

Green Tea
All teas start out the same way, and what makes them different is how they are processed after harvest. Green tea is
sometimes referred to as an un-oxidized or ‘non-fermented’ tea. Oxidation is the natural chemical process that occurs after
vegetable matter is picked. The leaves begin to oxidize immediately after harvesting and to stop the oxidation process, green
tea leaves are steamed or baked. Steaming is usually used for Japanese green tea, while baking or pan heating is often used
for Chinese green tea.
By stopping the oxidation process, the tea retains it’s green
color. Green tea needs a little extra care when preparing - the
main thing to keep in mind is NOT to use boiling water. Most
green tea prefers water temperatures between 160-180
degrees. They also tend to steep for no more than 3 minutes.
If your green tea ever tasted bitter, it was likely due to a
combination of over steeping and/or water that was too hot.
Green teas do indeed taste more ’raw’ versus black tea, with
some grassy and vegetal undertones. This varies greatly
depending on the type of green tea. Gyrokuro has a more
pronounced sweet and grassy flavor versus the lighter, more
astringent White Eagle Long Life. There are also many
wonderful flavored green teas, most of which are fantastic
iced and a good way to get your daily fluid intake.
Health Benefits
While there is no such thing as a miracle drink, green tea combined with a good diet and exercise can contribute to a healthier
life. The amount of studies done on the health benefits of tea, especially green tea in particular are vast. While not all are
conclusive, the majority of studies do show a POSITIVE correlation between green tea and better health.
The health benefits of green tea are due to its high levels of flavonoids, polyphenols and catechins. These are nutritional
compounds that are classified as anti-oxidants. They work by binding harmful oxygen-containing molecules in your body called
free radicals and peroxides that otherwise could damage your DNA, cell membranes, and other cell components.
This is why green tea has attracted wide interest in it’s ability to control inflammation, improve immune function and prevent
cancer. For example a study from the Linus Pauling Institute show that compounds in green tea have a powerful ability to
increase the number of ‘regulatory T cells’ that play a key role in immune function and suppression of autoimmune disease.
Other studies have shown that green tea can help fight glaucoma and
other eye diseases, inhibits bacteria formation and prevents tooth decay.
One key benefit of green tea is unlike drugs, tea doesn’t have the
problems of toxicity.
Green tea has also been linked with weight loss. A study highlighted in
the American Journal of Clinical Nutrition showed that the catechins in
green tea triggered specific areas of the brain for weight loss. Specifically,
it moved to the thermogenesis area of the brain. This particular area is
one that communicates with the metabolism, telling it to produce more
energy for the body. This particular effect from the study was then
compared to just pure caffeine. It was shown that green tea is more
effective than any type of caffeinated drink in helping the body to produce
more energy. g

FLAVORING TEA
Loose leaf teas have been scented and blended for
centuries. The oldest, and most ancient method, is known
as 'scenting' the tea leaves. Scenting consists
of compressing layers of tea leaves interspersed with
fragrant flowers or fruits and allowing the tea leaves to
absorb the fragrances and essential oils through direct
contact with the tea leaves. A second and more recent
method of flavoring tea leaves is to use concentrated all
natural essences (i.e. think of vanilla extract). These liquid
flavors are mixed into the tea leaves, often with a blending
machine. The flavored tea blend is then sealed in a tight
container for a period of time, normally at least one full
day, to allow full absorption of the flavoring.
In ancient China, tea artisans developed many different
methods for creating fruit and floral blends to tempt taste
buds and delight the senses. Our flavored teas are an
updated example of this continuing tradition. All natural
flavors, premium fruit and flower pieces blend
harmoniously with each tea. We use natural flavoring oils,
not crystals. High quality tea tastes good and natural
flavors do not mask the natural taste of tea. (The norm for
many making flavored tea is to use overpowering artificial
flavors, which can be used to hide lower quality tea).
Natural flavors do not leave an aftertaste giving the tea a
clean and true character.
It is especially important to keep flavored tea in separate air tight containers, as the flavor will literally disappear if left out in
the open or in an unsealed container.

Oolong Tea
Oolong tea comes from the same plant as green and black tea. While black tea is fully oxidized and green tea is un-oxidized,
oolong tea is somewhere in between. Because each variety of oolong is processed differently, the flavors vary widely.
Our oolong selection is made up exclusively of premium styles. These teas are all great additions to your reserve collection.
Crafting quality oolong tea is an art form. Like regional variance in fine wines - soil integrity, humidity levels, genus and artisanal
skill all leave their imprint on the leaf. Oolongs are grown in limited areas where the conditions are perfect and great care is
taken to ensure the health of the surrounding environment. Producing a great oolong requires years of formal training to
master. From nursing new seedlings, to planting, nourishing the bushes and properly selecting the best time to pluck the
leaves, the intricacies are passed down from one generation to the next. The great masters believe that it is only through the
transfer of carefully protected secrets that the finest specimens can be produced.
Oolong teas must not be picked too early or at too tender a stage and are usually processed immediately. Oolong tea is wilted
in the sun to remove most of the moisture, then typically shaken in bamboo baskets to bruise the leaf edges.
You’ll also notice that most oolongs are whole leaf and not broken into little bits. Oxidation follows and this can vary greatly,
typically from 30% (closer to a green tea) to 70% (closer to black). Once the desired oxidation levels are reached the tea is fired
under high heat to capture the unique and highly intricate flavor profiles. It is interesting to note that a shorter firing produces
teas with an almost peach-like character while a longer firing will produce a rich amber cup with more ‘woody’ notes.
Oolong tea is mainly produced in China and Taiwan, but other countries like Vietnam and Sri Lanka also produce a small
amount of oolong. Most oolong teas can be steeped multiple times, resulting in a changing flavor profile. In fact, some drinkers
prefer the taste of the 2nd or 3rd infusions.
Health Benefits
Oolong tea, like all tea, contains
powerful catechin antioxidants which

processed, it does hold a slight edge
over Oolong in terms of the overall
catechin content. Catechin content
decreases as tea is oxidized. But it is
over looked that the levels of
theaflavins and thearubigins increase.
These two substances are found in

black tea than green. They have anti-
allergy, anti-inflammatory and anti-
cancer properties. Some studies
suggest they are as effective as the
catechins in green and white tea. Both
teas have similar effects and will
provide equal health benefits overall.
Weight Loss
Now while weight loss seems to be a more popular issue with some teas these days, it is important to maintain a healthy diet
and exercise along with the consumption of tea. Tea by itself will not make you lose any noticeable weight. Be wary of those
who are promising that a tea will dramatically make you lose weight. And always consult your doctor first before starting any
"tea diet".
Beware of merchants or products claiming you will lose weight with certain oolong tea blends (sometimes called wu-long). Not
to say that you won’t benefit from drinking them, but please be wary of some that make claims, when they are just over -priced
oolong teas with a fancy name. They will not do anything miraculous versus other oolong teas, and keep in mind that all oolong

What is Matcha? Matcha is tea that has been ground with special granite wheels into a fine
powder. Because it is powdered, the tea is not steeped like a normal tea, rather infused and
consumed directly. Matcha traces its origins to Japan where the tea is used for drinking or in
cooking. It is the tea that is used for the traditional Japanese tea ceremony. Because you are
literally drinking the tea leaf, Matcha is a much richer cup than regular tea.
How is Matcha made? Traditional Matcha is made using pure Gyokuro leaves, a Japanese tea
variety that is shaded beneath special mats for 3 weeks before plucking. The shading forces the
plants to produce a higher than normal chlorophyll content, which gives the leaves a rich green
color. Once plucked, the leaves are steamed and dried. Tea at this stage of the process is known
as Aracha. Next, the Aracha is stripped of all stems and veins resulting in a pure leaf known as
Tencha. Tencha is then stone ground into its finely powdered form.
What types of Matcha are there? Japanese style matcha is the traditional variety of matcha.
However, there are varieties available from other regions like China and Kenya. Some types are
well suited for cooking and smoothies, while the top Japanese style grades are recommended to
be consumed directly.
What does Matcha taste like? Matcha is a fuller bodied experience than its non-powdered
cousin. Japanese style matchas maintain the rich, vegetative flavor of their parent teas. Japanese style teas are the only ones
shaded. Non-Japanese Matchas will have a somewhat lighter, less grassy, more astringent flavor.
How is it prepared? There are many ways to prepare Matcha (both hot, cold, as a latte or in a smoothie!) f Hot Cold

White Tea White tea is made from the buds and young leaves of the tea plant. These leaves are
withered and dried naturally under semi-controlled conditions. If mechanical drying is
required the leaves are baked (not fired) at temperatures less than 40°C. Because of
these special growing and harvesting procedures, white tea has higher concentrations
of anti-oxidants known as catechins compared to other types of tea. A study at Kingston
University in 2009 showed that white tea has high anti-inflammatory, anti-oxidant, anti-
collagenase and anti-elastase properties which could potentially reduce the risks of
developing rheumatoid arthritis, some cancers, heart disease and slow the enzymatic
break-down of elastic and collagen, traits which accompany aging.
White teas taste is best described as delicate, fresh, with lingering sweetness. For new
tea drinkers, it may take some practice to pick up the subtle nuances in White Tea.
We’ve all heard of pairing wine with certain foods, but have you ever thought about pairing

All tea starts out from the Camellia Sinensis plant. To make black
tea, the leaves are first laid out for the withering process to remove
moisture. The next step is rolling. Rolling breaks the cellular walls
and releases the enzymes that give tea its flavor characteristics.
Tea can be rolled by hand or with a machine. The more expensive
varieties are usually hand rolled.
The tea is allowed to fully oxidize which turns the leaves dark. Green tea skips this step.
The oxidized leaves are passed through hot air tunnels or baked in ovens. This dries the
leaves and stabilizes them, allowing them to be sorted and packaged.
Grading Black Tea
A term you may have heard, ‘Orange Pekoe’ has nothing to do with flavor but indicates a
particular leaf that was used for the tea. The code OP is sometimes used. BOP simply
means Broken Orange Pekoe, indicating smaller pieces of the leaf. Black tea grading is not
standard and uniform for each producing country. In general there are four major grades.
Whole Leaves, Broken Leaves, Fannings and dust. Whole leaf grades are considered the
most valuable, especially if they contain leaf tips. Broken grades are considered medium
grades while fannings and dust (i.e. the leftovers) are considered the bottom grades and
relegated to tea bags.
For example, the designation for the top grade is FTGFOP. Finest Tippy Golden Flowery
Orange Pekoe. This indicates that the youngest top portion of the plant was used and had
many ‘tips’ or leaf buds and flowers that are golden in color.
Black teas in particular can be produced in the orthodox fashion (rolled either by hand or by
machine) or CTC (Crush, Tear, Curl) which is machine-processed in a way that chops the
leaves into uniformly-sized bits that are rolled into small balls. The CTC is popular amongst
African tea and gives them their bold, bright profiles.
Producing Regions
The majority of the black tea produced comes from China, India, Sri Lanka and Africa
(Kenya especially). The names of teas often refer to the particular estate or province the
tea is grown in. Assam and Darjeeling are the better known Indian teas. Sri Lankan teas are
known by their classic name, Ceylon. Many black teas from China come from the Yunnan or
Fujian provinces, but their origins are not always revealed in the names themselves, Golden
Monkey is such an example.

Many of the health benefits of green tea are the same as the health benefits of black tea.
Although black tea has less epigallocatechin gallate (EGCG) than green tea, it is higher in
both theoflavins and thearubigens—compounds which have been found to be as effective
antioxidants as EGCG. A study in the Netherlands found a connection between regular
consumption of black tea and reduced risk of stroke. Researchers concluded that the
health benefits of black tea include the reduction of LDL—the “bad” cholesterol that can
lead to stroke and heart attacks. They also found that men who drank over four cups of
black tea per day were at lower risk of stroke than men who drank only 2-3 cups per day.
Another study in Saudi Arabia showed that regular consumption of black tea can reduce the
risk of coronary heart disease by fifty percent. And in the United States, a four month study
concluded that the health benefits of black tea include helping to reverse an abnormal functioning of the blood vessels that can
contribute to stroke or heart attack. This improvement could be observed within two hours of drinking just one cup of black tea.

Pu-Erh (Poo-Air) Pu-erh is unique in that it is the only tea that undergoes true
fermentation. (Black tea is fully oxidized, but not fermented). Pu-erh
originates in China’s Yunnan province. It is named after Pu-erh county
where the tea was originally produced. The earliest reference to Pu-erh
tea is in documents dating from the Tang Dynasty (618 AD–906 AD)
and it has been an important trading item for centuries.
Pu-erh tea is produced from the broad, mature leaves of older tea
trees. This is quite different from other types of tea such as green tea
or black tea, which are produced from the tea buds and new leaves.
Most tea is best fresh. Green tea, black tea, and oolong tea will lose
flavor and become stale as they get older. Pu-erh tea is quite different
–it is meant to be aged and the older it is the better it gets.
A variety of microbes flourish during Pu-erh fermentation such as
Aspergillus Niger, Saccaromyces and Pinicillium. The chemical
processes these microorganisms create give Pu-erh unique properties, especially for digestion and maintaining a good “gut”. Many
give this remarkable tea credit for restoring and maintaining good health. Generations of Chinese have drunk this tea after rich
meals to “cut the grease”.
Chinese tea drinkers have known of the health benefits of Pu-erh tea for centuries, and recent scientific
research have bolstered many of these traditional claims. Some studies have shown Pu-erh to be effective in
lowering blood cholesterol, reducing high blood pressure and preventing intestinal infection. Many report that
drinking it after meals relieves any overstuffed feelings and aids digestion. Pu-erh tea is also high in antioxidants
which are necessary to protect us from a whole range of diseases including cancer and heart disease.
The method of production is: the tea leaves are rolled and pan fried or baked to remove most of the moisture.
They are then steamed and compressed (without drying) into the cakes. In the course of time the tea takes on a
musty and earthy character. Pu-erh that gets somewhat moldy before it naturally dries is considered the best.
Pu-erh is unique in the fact that it is aged, as already mentioned, sometimes for many years. This aging process
causes its flavor and color to change over time. Many pu-erh’s are later broken up out of the cakes to make it
easier to handle. Pu-erh may be steeped multiple times and with each infusion comes a different flavor profile.

BUYING AND STORING TEA
A common question asked is ‘how much tea should I buy?’ In general, we
recommend buying no more than what you can go through in six months. Tea
can last longer in many cases, but keeping your inventory within reason will go a
long way to keeping everything fresh and from going stale.
Proper storage is a requirement if you are planning to keep your tea for more
than a few weeks. Even the freshest and best teas on the market will lose their
potency if not stored correctly. When exposed to air, delicate tea leaves rapidly
lose flavor. Tea should be stored in an airtight container away from light,
moisture, strong odors or big temperature swings. If you buy in bulk, keep a
larger container stored away and use a smaller one for everyday use. Some may
think a glass jar is okay, since it is air tight. However, light will strip the leaves of
their color and flavor over time. Because of humidity and the aforementioned
temperature swings, it is not recommended to store tea in a fridge or freezer.

Traditionally Earl Grey was a blend of Chinese and Indian teas scented with oil from the citrus bergamot fruit - a sort of orange.
Stories about the origins of Earl Grey are numerous. One such tale tells how a British diplomat on a mission to China saved the
life of a Mandarin. As a gift of gratitude, the diplomat was given the recipe for this flavored tea. Upon his return to Britain, the
diplomat presented the tea to the Prime Minister of England (1830-1834), Earl Grey, who made this tea fashionable.

Breakfast teas are hardy, robust blends that take milk well. The origins of the first breakfast tea, English breakfast, is a bit
obscure. One story has it that a tea purveyor named Drysdale came up with a blend he labeled as “Breakfast” in the mid -
1800s, to make it clear that the tea was meant to be paired with the morning meal, perhaps. At any rate, the concept of a
“breakfast” blend caught on, and spawned additional variants. Another story starts off in 1843 in New York City of all places.
Richard Davies enveloped a blend of tea in a fancy foil exterior, and named it English Breakfast tea. It became so popular
that other inquisitive retailers wrote to London asking where to get it, but no Englishman ever heard of it. Eventually the
mixture was sent to China where it was duplicated. Davies attempted to expand but got swindled and died broke.

Piping hot chai holds a warm place in the heart of India.
Although it might sound odd that a scorching hot
beverage be so widely enjoyed in one of the worlds
warmest countries, chai actually cools the body. It does
this by raising core body temperature above ambient air
temperature.
In many parts of India there is a saying that loosely
translates as: “spiced chai… the tea that eats like a meal”
- and in certain parts of India it is true. Traditional Indian
chai is a heady mix of spice and tea. Chai recipes are
handed down from generation to generation the way
westerners pass on grandmas' apple pie recipe. The tea
is traditionally brewed by boiling milk, adding good thick black tea,
various spices and then boiling it again. The resulting mixture is
thick, spicy and incredibly full-bodied.
Indian chai-sellers, known as chai wallahs, sell their concoctions at
roadside stalls, train stations, and anywhere you can think of. The
tea is served in small clay cups known as chullarhs that are
smashed on the ground once the tea is finished. f Here are just a few ways to enjoy chai… try them all by following our
recipes below.
Iced Chai - One 16oz serving
1 1/2 cups water
4 tsp Chai tea (any Chai)
1/4 cup milk
2 Tbsp sugar or honey (to taste)
1. Place 4 heaping teaspoons of
tea into infuser. Pour 1 1/2 cups
boiling water over tea leaves.
(You’re making a concentrate.)
2. Steep for 5-8 minutes then
remove the tea leaves.
3. Add milk & sugar (or honey).
Froth or shake in a martini shaker. Pour over ice & enjoy!
Hot Chai Latte - One 16oz serving
1 3/4 cups water
4 tsp Chai tea (any Chai)
1/4 cup milk
2 Tbsp sugar or honey (to taste)
1. Place 4 heaping teaspoons of
chai tea into infuser. Pour 1 3/4
cups boiling water over tea
leaves.
2. Steep for 5-8 minutes then

Green Tea Chai Ice Cream
(Makes 10 half cup servings)
2 cups heavy cream
2 cups whole milk
2 egg yolks
1. Combine cream & milk in medium sauce pan over medium heat. Heat until just before
mixture boils (190º) & reduce to low.
2. Add green tea leaves & steep for 3-5 min’s. Remove tea leaves immediately or else
mixture will turn bitter. (Use cheese cloth or disposable bags… see page 36).
3. Meanwhile beat yolks, sugar & vanilla in a small bowl until light yellow & smooth—1-2
minutes.
4. Add 4 tbsp hot/cream mixture & stir until combined. Gradually add egg yolk mixture to warm cream, stirring
continuously to prevent eggs from curdling.
5. Cook over low heat until slightly thickened & mixture coats the back of a spoon, about 3-4 minutes.
6. Cool completely. Then pour into freezer bowl of an ice cream maker and follow your machines instructions for chilling.

Technically, Rooibos is not a true tea. It comes from the plant
Aspalathus linearis. The name Rooibos comes from the Afrikaans
word for 'red bush'. The Rooibos plant is a small shrubby bush that
only grows in South Africa. The bush grows anywhere from 2 to 3
feet in height, with very thin, needle-like leaves. The leaves are
green, but turn the characteristic red after oxidation.
The Rooibos seeds are precious, because the plants produce few of
them. The seeds also pop out of the fruits as soon as they are ripe,
making harvest difficult. Many farmers still raid anthills looking for
Rooibos seeds. It is a rather delicate plant, and the cultivation has
not changed much over the years. The plants thrive best when left
alone in their natural soil. The farming of Rooibos has always been
very close to nature and remains so today.
The locals have known that Rooibos can be used to make a
delicious beverage for a very long time, but it was only 'discovered' in
1904 by a Russian immigrant named Benjamin Ginsberg. He was a
settler in the area and thought that the tea was so enjoyable that it
should be available to people everywhere. He was the first to market
Rooibos tea.
Rooibos tea is a distinctive red color and its taste is also unique with
a very sweet and slightly nutty flavor. Its delicious taste and
numerous healthful qualities has helped Rooibos become a popular
tea all over the world. It is still fairly 'new' but more and more people
are coming to love this unique red tea.
Rooibos has no caffeine and is low in tannin, so it can be enjoyed all
day long without any unpleasant side effects. This also makes it a great tea for pregnant women and nursing mothers.

Honeybush
Honeybush is a cousin of Rooibos, cultivated in South Africa's Eastern Cape

sweeter with a fully body. Like Rooibos, it is caffeine free. Add a little honey
to honeybush to really bring out the natural sweetness.
Honeybush has been used for treating coughs, because of its content of
pinotol (found in Pine trees) which is an expectorant. Pinitol has also been
shown to lower blood sugar in laboratory animal studies and is being
considered as a drug for diabetes. Honeybush also contains flavones which
can be used to reduce blood lipids and alleviate menopausal symptoms.

What are the “Doshas”?

types. Most people are Dosha dominant, and the goal is to

relationships, parenting skills or choose the right career path.
How can I determine my “Dosha”?

direct result of a Dosha imbalance! Your local yoga studio may also provide you with a source of more information and can guide

Ayurveda and Diet
Diet and digestion are one of the major cornerstones of Ayurveda. There is no
diet that is specific for every human body, therefore Ayurveda takes your
body/mind type into account to help customize what works best for you.

Yixing ware is meant to be used with your one favorite tea. Flavor of the tea is absorbed into
the clay during the brewing process. After prolonged use, the pot will develop a coating that
retains the flavor & color of the tea. It is for this reason that soap should not be used to clean yixing ware. Instead, it

Hot Brew Method of Making Iced Tea
1) Choose your tea and measure out loose tea leaves
according to the chart above. 2) Steep the tea leaves in filtered water heated at the
above temperature guide.
3) Pour the concentrated tea over ice cubes in a
temperature resistant glass pitcher (see our
recommended ice tea pitchers on page 42 & 43.)
4) Optional: sweeten with honey, agave or sugar syrup.
Garnish with mint, cucumber, citrus slices or berries. f
* to get water temp to 195F, boil then let cool 1 minute.
* to get water temp to 175F, boil then let cool 2-3 minutes
Cold Brew Method of Making Iced Tea
32 oz water & 4 heaping tbsp tea leaves
32 oz pitcher with lid (see page 42 for
preferred cold brew pitcher).
1) Place the tea leaves in pitcher.
2) Pour filtered water over the tea leaves.
Cover.
3) Let sit overnight on counter or in fridge.
4) Strain tea leaves (or use a pitcher with a
built in strainer as pictured to the right.)
5) Optional: sweeten with honey, agave or sugar syrup. Garnish with mint, cucumber, citrus slices or berries.
(This method works best for green & white teas.)
Steeping Guide for Iced Tea
1. Add loose tea
into infuser (see
below for quantity of tea.)
2. Add hot water.
Heat 4 cups of
water in kettle to specified temp. (See tea label for
instructions or chart below). Fill pitcher halfway
with hot water.
3. Brew tea concentrate.
Screw the tea infuser
into the lid, using the infuser extender. Lower it into the
water. Twist the lid partially closed, allowing steam to vent.
Brew according to tea instructions (or chart below).
4. Remove the tea infuser.
Twist & lift the lid
and tea infuser out of the pitcher. To avoid drips, rest the tea
infuser in the infuser stand. If desired, stir in sweetener until
dissolved.
5. Chill. Fill the pitcher to
the top with ice and
seal lid airtight. Shake for about 30 seconds or until ice has
melted. Your concentrated brew is now the perfect
pitcher of ice cold tea.
6. Twist the lid open,
aligning the arrows
with the pour spout. Pour over ice and ENJOY!

BREWING THE PERFECT POT OF TEA
Using the right tools and following a few simple steps, you will
see it is easy to brew the perfect pot of loose tea.
Always use quality filtered water to remove trace odors and
tastes.
Select a good strainer. While cheap mesh balls might appeal to
some just starting out, they greatly limit the ability of the tea
leaves to expand properly and prevent water from properly
circulating. A large infuser basket style is our recommended
choice (see page 39). Many of our teapots come with an infuser
basket (see pages 40—45). f
You’ll need a kettle or electric water boiler. Never microwave your
water, which will result in an improper temperature for your brew
as well as a flat taste (see page 44).
Since not all teas prefer boiling water, a thermometer will come in
handy to measure the temperature before brewing. After a while
you will be able to ‘feel’ out the temperature by listening to your
kettle or watching the steam rise.
NOTE: To get water temperature to 195°F, boil water then cool
for 1 minute. To get water temperature to 175°F, boil water then
cool for 2-3 minutes.
All of our teas are labeled with brewing instructions: the
recommended ratio of loose tea to water; temperature of heated
water; and steeping time. Use that as your starting guide and adjust tea amounts to your preferred taste.

There are several stories about how tea was discovered. One of the most famous concerns the
Chinese emperor Shen Nong who lived about 5,000 years ago. Shen Nong was an herbalist who
identified hundreds of medicinal and poisonous herbs by personally tasting them. According to tea
history, Shen Nong, while traveling with his entourage, stopped for a rest. While boiling some
drinking water, leaves from burning tea twigs blew upwards and landed in the water. Shen Nong
insisted on trying the liquid and found it to be tasty and refreshing. The year was 2737 BC.
