Tempeh Bacon Mac n’ Cheese with Pecan Parmesanserves 8 to 10
C auliflower is one of those “wonder veggies.” It’s so versatile that even those who claim
to destest cauliflower can usually find at least one way they enjoy it (my stepdaughter is a great example of this!). When cauliflower is roasted, it brings out strong nutty undertones and when it’s pureed, it is immediately disguised as a milky cream. Cauliflower (along with a little bit of ca-shews) is what brings the creamy richness to this recipe for a classic comfort food. Mac n’ cheese is definitely at the top of the list when it comes to soul-satisfying meals, and roasted cauliflower pu-reed with cheesy nutritional yeast and zingy miso takes this favorite up a notch. With the addition of smoky tempeh bacon, this recipe becomes a com-plete meal, full of cheesy goodness.
for the mac n’ cheese
½ head of cauliflower, cut into florets
olive oil spray
½ + ¼ teaspoon garlic powder, divided
¼ teaspoon smoked paprika
salt and pepper to taste
½ cup raw cashews, soaked in water for at least 1 hour, water dis-carded
1½ cups almond milk (or nondairy milk of your choice)
½ cup nutritional yeast
3 tablespoons lemon juice
1½ tablespoons tomato paste
½ tablespoon Dijon mustard
2 teaspoons white miso
½ teaspoon onion powder/granules
½ teaspoon turmeric, optional
1 pound elbow macaroni
1 recipe of tempeh bacon crumbles (page 000, see variation)
for the pecan parmesan
3 cups pecan pieces
1 cup nutritional yeast
1½ tablespoons fresh lemon juice
1 teaspoon minced garlic
1. Preheat the oven to 400°F. Line a baking sheet with parchment
paper or a silicone baking mat. Spread the cauliflower florets out
onto the baking sheet and lightly spray with olive oil. Sprinkle the ¼
teaspoon of garlic powder, the paprika, and salt and pepper to taste
over the florets. Toss to coat. Bake for 20 minutes, flipping once
halfway through. Once the cauliflower is tender and golden, remove
from the oven and let cool for a couple of minutes.
2. In a blender or food processor, process the cashews and al-
mond milk until smooth and creamy. Add the cooled cauliflower,
nutritional yeast, lemon juice, tomato paste, Dijon mustard, miso,
onion powder, and turmeric. Process until smooth. Set aside.
3. Reduce the oven heat to 350°F. Lightly spray a 9 x 13-inch cas-
serole dish with olive oil spray and set aside.
4. Bring about 8 cups of water to a boil in a large pot. Once it is
boiling, add a pinch of salt before adding the pasta to the water. Stir
immediately to prevent any of the pasta from sticking together. Let
the pasta cook following package instructions until al dente, then

To try different flavors of chèvre, add the following ingredients to
the mixture after it’s fully combined in the food processor, then
pulse a few times to incorporate.
» For Lavender Chèvre, add 1 to 2 teaspoons of dried lavender.
» For Mixed-Herb Chèvre, add 2 to 3 teaspoons of your favorite
dried herbs (I like to use a mixture of basil, oregano, and thyme).
» For Roasted Garlic, add 2 cloves of roasted garlic, squeezed
from their skins (see page 000).

The most famous and earliest-discovered member of the pterosaur family had a crest jutting back from its head and long tapering jaws shaped like a spear-tip that were ideal for catching fish, though it probably also ate small land animals. More than 20 fossil skeletons of varying maturity have been found, many of them in Germany, and the first were described in 1784. Its name means ‘wing finger’, which describes a characteristic of all pterosaurs. A hugely elongated fourth finger supported a skin membrane that stretched to its hind limbs – think something closer to a bat’s wing than a bird’s.

Portion out the yogurt into the ice tray or muffin tin. Mix in the food coloring to make a rainbow of “paints”. Sit the little Picassos in front of the fridge or easel and marvel at their creativity. If you’re concerned for the health of your fridge, use magnets to hang some paper on its door.
This paint will dry and it is possible to keep the art for some time, provided the yogurt isn’t applied so thickly that it rots.
Both your fridge and the floor should wipe down quickly, or let the dog in and get it to do the work for you. If your darlings paint themselves more than the surface you’ve provided, you can always have them help you clean the dishes, getting a headstart on bath time in the process.
YOGURT PAINT
There is a lot to love about yogurt paint. It is perfect for the child who wants to put everything in their mouth and the parent who doesn’t want the fear factor of giving young children real paint. It wipes clean easily although, like most paints, it is not too friendly with carpets. If you’re looking for a window of time to cook a meal, take your postcards off the fridge and let the kids paint the door.

455 grams bread Flour blend (page 000) (about 3½ cups) 1 teaspoon xanthan gum13 teaspoons quick-rising yeast 4 teaspoons baking powder½ teaspoon salt1 tablespoon organic cane sugar1/3 cup grapeseed oil 3 Flaxseed eggs (page 000)1 cup warm water
1. Spray a 9 by 4 by 4-inch loaf pan with
cooking oil.
2. Mix together the flour, xanthan gum,
yeast, baking powder, salt and sugar in a
medium bowl.
3. Blend the oil, flaxseed eggs, and water to-
gether in a large bowl, using a mixer on
medium speed, about 30 seconds.
4. Slowly add the dry ingredients and mix
on medium-low until combined. Increase
the speed to medium-high and beat for 2
minutes. The dough will stick to the sides
of the mixing bowl. See page 000 to learn
more about bread dough.
5. Scoop the dough into the prepared loaf
pan, spread it to the sides of the pan us-
ing a spatula, and then use wet fingers to
smooth the top.
6. Let the bread rise for 25 minutes in a
warm, moist spot. Preheat the oven to
375°F. Allow the bread to rise for another
5-10 minutes while the oven preheats.
There should be about one inch clearance
to the top of the pan when the dough is
fully risen.
7. Bake at 375°F for 37-39 minutes until the
internal temperature is 200-205°F. Re-
move the bread from the pan promptly
and transfer it to a cooling rack. Let it
cool completely before slicing.
FreezinG:
Any bread that you don’t plan to use within 2-3
days can be frozen in airtight bags for up to 6
months. I recommend slicing before freezing so
that you can remove slices as needed. Once fro-
zen, bread will be best toasted.
