Summer EscapesHow will you “escape” this summer? Will it be an actual vacation to a beach? Mountains? Or, Will it be a quick escape to a state park or even a local park for the day? Summer Potato Salad 5 cups peeled and cubed potatoes
3 eggs, boiled & peeled
1/3 cup lemon juice
1/4 cup vegetable oil
2 teaspoons white sugar
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/4 teaspoon ground black pepper
1/2 cup mayonnaise
1/4 cup chopped green onions
1/3 cup chopped celery
3 tablespoons chopped fresh parsley
Bring a large pot of water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
Chop boiled eggs & add to potatoes .
In a small bowl, combine lemon juice, oil, sugar, seasoned salt, Worcestershire sauce, mus-tard powder and black pepper; mix well. Blend in mayonnaise. Pour lemon dressing over pota-toes, and stir to coat.
Mix in green onions, celery, and parsley. Chill for 2 hours before serving.
Summer Corn Salad 6 ears corn, husked and cleaned
3 large tomatoes, diced
1 large onion, diced
1/4 cup chopped fresh basil
1/4 cup olive oil
2 tablespoons white vinegar
salt and pepper to taste 1 avocado pitted, & diced
Bring a large pot of lightly salted water to a boil. Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. Drain, cool, and cut kernels off the cob with a sharp knife.
In a large bowl, toss together all the ingredients, add Avocado right before serving Chill until ready to serve
Strawberry Green Tea Smoothie1 6 oz container of vanilla lowfat yogurt1 cup fresh or frozen strawberries1 cup of green tea brewed and cooled1 cup ice
First brew the green tea and cool. Th en add all ingredients together in a blender and blend. Divide into 2 glasses and enjoy!

Darjeeling Sangria6 cups prepared strong Darjeeling tea
3 cups fresh fruit, cut into bite-sized pieces
2 to 3 Tablespoons sugar, or sweetener, to taste
3 cups white grape juiceAllow the tea to cool to room temperature. Place the fruit and two
Tablespoons sugar in a large pitcher and stir to mix. . Mix the grape
juice and cooled tea together. Pour the tea/juice liquid into the
pitcher and mix well with fruit. You can add more sugar or sweeten-
er if needed. Pour into tall glasses over ice that has some fruit added.

Fruit Custard Pie Gluten Free Recipe2 cups fresh or frozen organic fruit (berries or cubed fruit)1 9 inch gluten free pie crust (deep dish)1 tbsp. gluten free fl our (rice, buckwheat, millet, quinoa or amaranth)1 cup fructose, agave, xylitol1 cup organic coconut milk (rice or almond can be substituted)3 large organic eggs1 tsp. gluten free vanilla extract
Preheat oven to 400 degrees. Place fruit in pie crust. In a medium bowl mix fl our with sugar; gradually add the milk, stirring until smooth. Whisk in eggs and vanilla until blended; pour mixture over fruit. If desired, sprinkle with a dash of cinnamon or clove. Bake 15 minutes on 400, reduce to 350 and bake for another 35 minutes or until knife comes out clean. Cool and serve. Enjoy!

Then you will LOVE our recipe book!Chocolate Button Cookies2 envelopes instant chocolate drink mix1 Tbsp. hot water1 cup butter, softened
Empty the chocolate drink envelopes into a bowl and stir in the hot water to
make a paste. Put the butter and sugar into a bowl and mix well, then beat in the
egg yolk and chocolate paste. Add the flour and a pinch of salt and stir well until
thoroughly combined. Roll the dough into two balls, wrap in plastic wrap and
chill in the refrigerator for 1 -2 hours.Preheat the oven to 375 . Line the cookie sheet with baking parchment.
Unwrap the chilled dough and roll out between 2 sheets of baking parchment to
1/4 inch thick. Stamp out the cookies using a 2-inch circle cookie cutter. Using
the cap from a soda bottle, make an indentation in the center of each button.
Using a toothpick, make 4 holes in the center of each button then place on the
cookie sheet spaced well apart. Sprinkle with sugar. Bake for 8-10 minutes, until
firm. To make buttons of many colors, frost with colored icing.
Lemon and Lime Cookies1 cup butter softened, 3/4 cup granulated sugar, 1 egg yolk, lightly beaten, 2 tsp. lime juice2 1/2 cups all-purpose flourfinely grated rind of 1 lemon
Cream the butter and sugar together , add the egg yolk and lime juice beating well. Combine the flour and pinch of salt into the mixture, mixing well. Stir in the lemon rind until thoroughly combined. Half the dough and form into balls. Wrap in plastic wrap and chill in the refrigerator for one hr. Preheat the oven to 375 . Line the baking sheets with baking parchment. Unwrap the dough and flatten the balls by rolling with a rolling pin until the dough is 1/8 inch thick. Cut out rounds using a 2 inch cookie cutter. Bake for 8 -10 min-utes until golden brown. Cool Completely. Mix together the egg white and lime juice. Gradually beat in the confectioners’ sugar until smooth. Spread the frosting on the top of each cookie and dust with a sprinkling of superfine sugar. Use a sprinkling of lemon and lime zest for added color on top.

A Circumstance of Growth
Th ere is an enormous logIn back of our house, In front of an old cottage, Beside a grove of ferns.
It was once a great cedar Cut down long aft er its prime, Left to decompose unnoticed, And to deteriorate carelessly.
Th e log is a jumble of lichens and Little blue and yellow whatevers, Purple strands and green soft ness Creeping all over its decay. It is home for more than many aCreature that loves the wretched And the crumbling. Creatures that We don’t want near our house.
Admirers come from far and nearTo see what is new on the old. Th e log, an opportunity like mostOpportunities, is odd in its presentation, Misinterpreted in its appearance, But forgiving with our appreciationAnd fl ourishing with our acceptance.

I walked today and went for miles,Cultivation that Should be routine. It is spring and the sun is out, Making the temperature just warm Enough so that one doesn’t need To wrap against the elements, butNot so hot that one is annoyed.
I was looking down at the road,Pondering the past as we too oft en do. When I happened to look up, As we don’t oft en do nearly enough, I marveled at the crowds of trees with Birds dashing and chirping from one to anotherOf the myriad of brown and green perch choices.
Th ere are wondrous things to notice on a walk.
What an incredible passing, I thought,Either now or when it is time. To walk In the transition of spring,From this world into the next. Let me just leave my body behind And then carry on with the walking that Should be routine.
